Taco Squares Casserole
This taco squares casserole dish is like a Southwestern version of lasagna. Layers of beef, tortillas, and cheese come together to form cheesy goodness. Plus, it's a pretty quick meal to put together, which makes it perfect for a weeknight meal!

INGREDIENTS
- 2 lb beef
- 1 yellow onion
- 1 1/2 tsp salt
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp oregano
- 3/4 tsp garlic powder
- 1 28-oz can diced tomatoes
- 1 tbsp flour
- 12 corn tortillas
- 2 cups shredded cheddar cheese
INSTRUCTIONS
- Preheat oven to 350°F. Grease a 9×13 baking dish and set aside.
- Add the ground beef to a 12-inch skillet over medium heat. Break into small pieces, then add the onion and salt. Cook until the meat is browned and the onion is soft, 8-10 minutes.
- Once the meat is cooked, with the skillet still over medium heat add the chili powder, cumin, garlic powder, and oregano. Stir and cook for 1 minute and add the tomatoes. Bring to a simmer and cook for 5 minutes on low. After 5 minutes, sprinkle in the flour and cook for 1 minute. Remove from the heat and set aside.
- If a gas stove is available, char the tortillas. Turn a burner on low and set a tortilla on for 30 seconds until slightly blackened. Then flip, repeat, and then remove from the flame. Charing is simply an optional step. If not available, move on to the assembly.
- In the prepared baking dish, add 1/2 cup of the meat mixture and spread it over the dish. Add 6 tortilla shells, slightly overlapping and covering the bottom of the baking dish. Add half of the meat mixture and spread evenly. Then sprinkle with half of the shredded cheese. Repeat one time with the remaining tortilla shells, meat mixture, and cheese. At this point, the casserole can be covered with plastic wrap and stored in the refrigerator for one day before baking.
- Bake in the preheated oven until warmed through, 30-40 minutes. Once baked, remove from the oven, cut into squares, and serve with favorite taco toppings!

Easy Taco Casserole
2 lbs Ground Beef
1 Medium Onion - chopped
1 1/2 C Salsa
1/4 C Taco Seasoning or 2 packages
3/4 C Mayonnaise
1/4 C Sour Cream
4 C Crushed Tortilla Chips - divided
4 C Shredded Cheddar Jack Cheese
Topppings: Chopped Tomatoes. Shredded Lettuce, Scallions & Sour Cream
In a large skillet brown the ground beef. Drain excess fat.
Add onions, salsa, taco seasoning, mayonnaise & sour cream. Stir until combined
In a 9 x 13 baking dish spread 2 cups crushed tortilla chips. Evenly spread half of
the meat mixture and top with 2 cups of shredded cheese. Place another layer of chips
and meat on top
Cover with foil.
Bake @ 350 F for 20 minutes.
Remove foil and spread remaining 2 cups of shredded cheese. Place back into oven for
10 - 15 minutes or until cheese has melted.
Top with chopped tomatoes, scallions. shredded lettuce and/or sour cream

Ingredients:
For the meat
2 lbs ground beef, I used 97% lean 3% fat
2 tomatoes chopped
1/2 onion chopped
4 oz hatch green chiles
2 minced garlic cloves
2 tsp oregano
2 tsp chili powder
2 tsp garlic salt
1 1/2 - 2 tsp salt
1 tsp onion powder
1 tsp ground cumin
1 tsp black pepper
jalapeño dip
8 oz cream cheese
Jalapeños i used 10 small ones
1/4 cup of its juice
1/4 sour cream
Your favorite chips I’m Tostitos salsa verde(by far the best for this casserole)
Toppings:
Mexican style cheese blend
Fresh lettuce
pico de gallo with avocado
jalapeños

Taco Lasagna -- Easy Mexican Casserole Full of beef, beans, tomatoes and flour tortillas.
Taco Lasagna
Ingredients:
• 2 lbs. ground beef
• 1 poblano pepper (seeded and diced)
• 1/2 cup chopped onion
• 1 cup water
• 2 envelopes of taco seasoning
• 1 can black beans rinsed and drained
• 1 28oz can diced tomatoes undrained Rotel or Mexican
• 9 flour tortillas (8 inches)
• 1 can refried beans
• 4 cups shredded Mexican cheese blend
Instructions:
1. Preheat the oven to 350 degrees
2. Spray a 9×13 baking pan with cooking spray.
3. In a large skillet, cook the beef, pepper and onion over medium heat until meat is no longer pink. Drain off any fat.
4. Add water and taco seasoning packets. Bring to a boil. Reduce heat and then simmer, uncovered, for 2 minutes.
5. Stir in black beans and tomatoes (with juice). Simmer, uncovered, for 10 minutes.
6. Place 2 tortillas in the bottom of a greased 13×9-in. baking dish. Break a third tortilla and piece it together in any holes to make as much of a complete layer of tortillas as possible.
7. Spread with half of the refried beans and half of the beef mixture.
8. Sprinkle with 1 cup cheese.
9. Repeat layers (3 tortillas, remaining beans, remaining beef, 1 cup of cheese).
10. Top with remaining tortillas and 2 cups cheese.
11. Cover with sprayed foil and bake at 350° for 25-30 minutes or until heated through and cheese is melted.
12. Serve with sour cream and fresh pico de gallo.
