Greetings! Tonight calls for a Slow Cooker meal. Temperatures are dropping and Autumn has finally decided to bless us with her presence. Cooler temps always make me happy. Being an Autumn baby, I am in my element during this time of year. The menu tonight is Swiss Steak.
Easy to do and even easier to eat. This dish has graced many tables for many years. A mixture of cheap meat, available veggies and time. This dish is definitely a throw back to the 50's or even earlier.
Cube steak, one of the cheapest cuts of meat in the butcher's case is transformed into a delectable main course, fit for company. Your family is going to love this rich, tomatoey, oniony gravy and melt in your mouth steak. Pair this with mashed potatoes and your favorite veggies and you are in for a treat.

INGREDIENTS:
2 lbs bottom round steak
1 cup all-purpose flour
Salt and pepper
2 tbsp bacon grease, or vegetable oil
1 cup onion, chopped
1 cup carrots, chopped
1 cup celery, chopped
2 cloves garlic, minced
2 tbsp tomato paste
1 28 oz can whole tomatoes, drained
1 tsp dried thyme
1 tsp dried oregano
1 tbsp Worcestershire sauce
2 bay leaves
2 tbsp fresh parsley, for garnisH

Swiss Steak, Simple Comfort Food
Swiss Steak
Ingredients
1 1/2 to 2 pounds of cube steak
3/4 cup flour
1 tsp garlic powder
1 tsp smoked paprika
1 tsp salt
1 tsp black pepper
1/4 cup olive oil
2 celery stalks, chopped
1 onion, chopped
3 garlic cloves, minced
1 tbsp butter
1/4 cup red wine
1 tbsp tomato paste
1 tsp dried oregano
1 (14.5 oz.) can of diced tomatoes
1 tbsp Worchestershire sauce
1 1/2 cups beef broth
Instructions
In a shallow dish combine flour, garlic powder, paprika, salt, and pepper. Coat steaks in flour mixture. In a large dutch oven heat oil and fry steaks until golden brown on each side, this will take 2 to 3 minutes per side. Cook in batches and place on plate after browned. In same dutch oven add butter and celery, onion, and garlic. Cook for a couple of minutes until vegetables are tender. Then add wine, tomato paste, oregano, died tomatoes, Worchestershire, and beef broth. Season with additional salt and pepper to taste. Place steaks in liquid. Cover and bake in a 325 degree oven for 2 to 3 hours, until steaks are tender.

Here is how I make Swiss Steak and use a Crock Pot Slow Cooker for a filling comfort food great with mashed potatoes.
Ingredients:
1 and 1/2 to 2 pounds of round steak
flour for dredging
salt/pepper
1 pound mushrooms
2 garlic cloves
1/2 cup celery
1 cup onions
1/4 cup red wine or vermouth
1 or 2 Tablespoons tomato paste
1 can of tomatoes (14 to 16 ounces)
1 Tablespoon Worcestershire sauce
1 teaspoon dry mustard
1 teaspoon paprika (I use Spanish smoked paprika)
1 teaspoon dry oregano
1 and 1/2 cups beef broth
