How To make Swiss Chicken Enchiladas
1 8 oz pkg. cream
-cheese,softened 1 6 oz pkg. Corn Tortillas
1/4 c Milk
1 10 oz can mild enchilada
-sauce 2 c Cubed,cooked chicken
3/4 c (6 oz.) container frozen
-avocado dip 1/2 c Sliced green onions
1/4 c Slivered almonds
1/2 c Dairy sour cream
4 oz (1 cup) shredded Monterey
-Jack cheese Sliced radishes or almonds Heat oven to 375 degrees.In a large bowl,combine cream cheese and milk.Stir in chicken,onions,1/4 cup almonds and 1/2 cup Jack cheese. heat tortillas as directed on package.Spoon about 1/4 cup filling down center of each warm tortilla;roll up.Place seam side down in ungreased 13 x 9" baking dish.Pour enchilada sauce evenly over tortillas;sprinkle with remaining Jack cheese. Bake @ 375 degrees for 10 to 15 minutes or until bubbly.In small bowl,combine avocado dip and sour cream.Spoon over warm enchiladas. Garnish with radishes or almonds. Makes 10 enchiladas.

I’m so happy to be able to share this recipe with you, as I believe we all deserve to enjoy a peaceful fancy meal with those we love. ????Easy Mexican Appetizers -
Bake at 375 degrees (F) for 15 minutes or until cheese has melted
Chicken & Broth
2 chicken breast
4 cups water
1/4 onion
2 garlic cloves
1 bay leaf
1 tsp salt
1/2 tsp thyme
*save 2 cups of broth, onion, and garlic for enchilada sauce ☺️
Enchiladas Zuidas
12 count tortillas
8 to 10 tomatillos
1 Jalapeños (for spice add Serranos)
1/2 bunch cilantro
15oz Mexican cream (or heavy whipping cream, half & half)
3 cups Manchego cheese (or Munster, mozzarella, chihuahua)
1 Tbsp toasted sesame seeds
1 tsp salt
Dash of nutmeg
Use extra sauce for plating!
Tips & suggestions ❣️
Do not add sauce at the bottom of the baking dish, to prevent a soggy enchilada, add the warm sauce at the bottom instead
If you have a little sauce left, add 1/2 cup of chicken broth 2 Tbsp of cream, and keep warm as you bake the enchiladas

1 doz. corn tortillas

Enchiladas Suizas
At just about any restaurant in our hometown, Laredo, you’ll find these enchiladas on the menu. Enchiladas suizas are usually filled with chicken and topped with a tomatillo and crema based salsa, and generous topping of grated cheese. We hope you enjoy our dairy free take on this staple dish—a dish that always takes us back to restaurants back home, and reminds us of gathering for a meal with family.
Ingredients
16oz Enchilada Filling of Choice (We love shredded chicken or a vegan cheese for this recipe!)
1 pack Siete Grain Free Almond Flour Tortillas
¼ cup Siete Cashew Queso Blanco
1 cup Siete Green Enchilada Sauce
¼ cup Coconut Milk
¼ bunch Cilantro
1 Garlic Clove
½ tsp Salt
¼ cup Dairy Free Sour Cream
Directions
1. Preheat the oven to 350F.
2. In a blender or food processor, combine all ingredients. Blend until smooth.
3. Pour ⅓ of the sauce into a greased, 13-by-9-by-2-inch casserole dish and spread evenly over the bottom.
4. Heat tortillas over medium heat for 10 seconds per side
5. Fill the warm tortillas with chicken (or other filling) and roll into ½ inch diameter tubes.
6. Arrange the filled tortillas seam-side down, snuggled together over sauce.
7. Pour remaining sauce and cover the casserole dish tightly with aluminum foil and bake for 25-30 minutes.
8. Pull from the oven and leave covered for 10-15 minutes.
9. Uncover, and garnish with a drizzle of dairy free sour cream and fresh chopped cilantro. Serve immediately.
