Grilled Chicken and Pecan Mixed Salad Recipe ~ Noreen's Kitchen
Greetings! When we use the grill, it is always with charcoal. We don't like gas. That being said, when we do BBQ we don't like to waste the coals leftover after grilling whatever we are having for dinner that night, be it, hamburgers, steaks, London Broil etc. So I always cook up something else, after or along with whatever we are planning for supper. Usually I grab about a half dozen chicken breasts from the butcher counter and butterfly them so they are thin. They cook up quick and I pop them in the fridge for other meals quick.
This is one of those times when I had a bunch of chicken in the fridge just waiting to be turned into something yummy. This salad was the perfect answer. Grilled chicken and whatever you have in your produce drawer or fruit bowl! I used the chicken along with some carrots, celery, grapes, red bell pepper, pecans, red onions, Persian cucumbers and dried cranberries.
I made a creamy version of my favorite poppy seed dressing to go on top of this amazing creation and it was the perfect sweet and tangy finish. Serve the dressing on the salad or on the side. My daughter Molly prefers to dip each fork full into the dressing instead of drowning her salad like I do. To each their own!
So I hope this inspires you to make a great tasting salad for lunch or supper some time soon. I also hope the next time you fire up your charcoal grill you think ahead and toss on something else to have on hand so you don't waste that good heat on just marshmallows. Get all you can out of that bag of charcoal! It's not so cheap anymore!

Today we are making “Barbacoa” which is cooked slowly until fork tender. There are different versions of barbacoa, with variations consisting of the meat used, aromatics, cooking method, and even leaves the meat is wrapped in. This recipe can be made with goat but we are using beef.

Beef barbacoa recipe
Oven temperature: 350º F degrees
4 hrs cooking time or until fork tender.
3.5 lbs chuck roast boneless, beef
kosher salt, generously season meat
Black pepper, generously season meat
2 lbs chuck short ribs, beef
kosher salt, generously season meat
Black pepper, generously season meat
3 TBSP olive oil (brown the meat)
Seasonings
6 guajillo chilis, dry
1 ancho Chile dry, large Or 2 medium-small
1 pasilla chili, dry
4 chiles de arbol
1/2 medium onion, yellow
5 garlic, cloves
2 bayleaves
4 cloves, whole
1/2 tsp black pepper, whole
1 tsp oregano, dry
1/2 tsp cumin seeds, whole
2 TBSP white vinegar
1 1/2 cups chili broth
Salt to taste if needed @ the end
Banana Leaves
Small bunch thyme, fresh
Two hand fulls of avocado leaves, dry ( about 24 leaves)
1 cinnamon stick
6 cups of water

Mostly made with corn tortillas, the natives would bake round tortillas in a clay oven known as a comixcal, and then salt them for preserving.
- Nachos are usually heated tortilla chips or totopos. The ‘twisted sister’ counterpart of tortilla chips they’re covered with melted cheese or a cheese-based Nacho sauce, Pico de Gallo, even beans, chili and sometimes meats.

Los Sifones Restaurant is a neighborhood Mexican food restaurant in Mexico City that has a great family atmosphere. When I saw a few photos of the molcajete caliente, a flaming stone mortar of salsa and meat, I knew it was a place I need to eat.
We drove from central Mexico City, and arrived at the friendly family style restaurant. I ordered molcajete caliente de bistec and some carne asada tacos loaded with avocado. For the molcajete caliente, they put it on the hot plate, added the beef, onions, salsa until it boiled, cheese, avocado and cactus. They serve it to you flaming hot - literally lava salsa. It was every bit as good as it looked, and it remained hot for our entire meal.
This was one of the best sit down, family style restaurant meals I had in Mexico City. I loved it, especially their generous use of avocado.
Total price - 508 MXN ($27.23)
