How To make Swedish Pancakes with Lingonberries
-JOE COMISKEY - JPMD44A
BATTER:
1 1/2 c Flour; all-purpose
3 c Milk
2 Eggs
1 tb Sugar
1 ts Salt
Butter or oil for frying
GARNISH:
1 Lingonberry preserves; jar
Confectioners' sugar Butter Beat the eggs and add the milk and flour gradually along with the sugar and salt. Heat a platt pan or small frying pan over low heat and brush with oil or butter. Stir the batter well and cook thin and light pancakes. Serve with butter, lingonberry preserves and a bit of confectioners' sugar. You really should find a Swedish Platt pan for this. It makes small pancakes, about 3 inches in diameter, which are very much enjoyed by the Scandinavian 2 community. You can certainly make them in a larger form, but the little
ones are so cute. Source: Jeff Smith The Frugal Gourmet From the 04/14/1991 issue of The Springfield Union-News -----

Thankfully you don't have to be Swedish to make or enjoy this scrumptious brunch option. We first ate these pancakes with my husband's best friend who actually is Swedish. They are a lot easier to make than I had originally thought, even easier than regular pancakes! But there's even more fun....with the toppings. Real lingonberries are the most legit, but if you don't have any....jam or other berries work well too. Nutella is a hit with just about anyone and since they roll up nicely, they actually travel well and are a good finger food. If you're feeling some health guilt, throw in some fruit to go with it. Our other creations included....peanut butter and banana, cinnamon and sugar, and maple syrup. Later we decided chocolate chips thrown in while still on the skillet would also be delicious. Just make sure to include lots of butter....and sprinkle that icing sugar on top for a professional finish! Avnjuta!
Ingredients (makes 5):
2 eggs
1/2 cup milk
1/2 cup flour
A dash of salt

Swedish Pancakes with Fresh Fruit
1 12 oz box Swedish pancake mix (Al Johnson’s)
2 eggs
3 cups milk
Empty contents of package into a large mixing bowl.
Mix in 2 eggs and 3 cups milk with dry ingredients until batter has a smooth consistency.
For best results, refrigerate overnight.
Bring a non-stick skillet to medium high heat and melt a small amount of butter in it or spray skillet with a non-stick cooking spray to cover pan.
Add approximately one quarter cup of batter to pan, allowing batter to spread by using a spatula or turning the pan to form a pancake.
Let batter cook for about a minute, then flip and allow it ti cook on the other side for about 30 seconds. You will see light brown spots and that will let you know when the pancake is done.
Fold in half and serve with lingonberries and syrup.

My Great Grandmother's Swedish Pancakes
Swedish Pancakes
By Executive Chef Sarah Nelson
Vanilla mascarpone, lingonberry & strawberry jam
Beauty & Essex New York
My great grandmother came from Sweden when she was just thirteen. She was a huge part of my life growing up. And so were her Swedish pancakes! We were quite a large family and I remember her cooking these pancakes and back then it seemed like a stack were ten feet high. She would dust them in powdered sugar and top it with a lingonberry jam.
