1 Egg
3/4 c Milk
1/4 ts Salt
1/2 c All-purpose flour
1 t Baking powder
1 tb Sugar
2 tb Butter,melted
Lingonberry jam Dairy sour cream
Over medium heat,preheat platter pan(cast iron or cast aluminum Swedish pan with shallow,round indentations for making thin pancakes about 3" in diameter).In large bowl,beat egg;stir in milk,salt,flour,baking powder and sugar until batter is smooth. Stir in melted butter.Grease cups in hot pan with shortening or butter.Spoon 2 rounded tablespoons batter into each greased cup. Cook about 1 minute on each side or until golden brown.Serve immediately with jam or jelly and sour cream.Makes 20 pancakes.

Ingredients

Maple Syrup
Mix in all of your wet ingredients together. Add salt and sugar in to the batter. Sift in your flour and mix well. Make sure to sift your batter to get a watery consistency.
Medium-low heat add butter to your pan and paddle in some batter. After you see the top of the pancake start to dry flip over you pancake. Repeat until all of the batter is gone.

Swedish Pancakes
3 Eggs
1 ¼ Cup Milk
¾ Cup Flour
1 Tbsp. Sugar
½ tsp Salt
1-Make sure you have all your ingredients and clean your work area.
2-Turn your griddle on to about 375 degrees and let it heat up.
3-Crack your eggs into a medium size bowl (or crack into a small cup one at a time to make sure you don’t get any shells in the pancakes.
4-Whip the eggs really well until it’s lighter and lemon colored.
5-Add the milk and mix.
6-You’ll need to put a sieve over your eggs and milk and add your flour, sugar, and salt into it. Shake the dry ingredients into the wet ingredients. If you don’t have a sieve then it’s okay.
7-Mix it all together.
8-Add spray or butter to the griddle and use a scoop to dump and spread batter on the griddle. I like the use the bottom of the measuring cup to spread it around more thin.
9-Once it starts to dry up on the top then you can flip it. Do it quickly so it doesn’t break apart. It will take some practice.
10-Continue until the pancake batter is all gone.
11-We like to eat these with caramel syrup, cut up bananas, and whipped cream.
12-Clean up the mess.

Learn how to make Swedish pancakes! This authentic Swedish pancakes recipe comes from my wife's great-great grandmother, Anna Boerjeson, from Smaland, Sweden. The batter makes roughly 40 pancakes.
Known in English as Swedish pancakes, this delicate, crepe-like cakes are sweeter and smaller than American pancakes, served with lingonberry preserves instead of maple syrup. Moist on the inside, crisp on the outside, they are topped with a tart-sweet dollop of lingonberry preserves. Lingonberries, a member of the cranberry family, grow in the mountainous regions of Scandinavia.
Swedish Pancakes Recipe ingredients
3 eggs
2 cups heavy cream
1 cup all purpose flour
1 tablespoon sugar
1/2 teaspoon salt
4 tablespoons melted unsalted butter
14 1/2 ounces sweetened wild lingonberries (or substitute raspberry preserves)
Directions
1. Beat eggs with whisk in large mixing bowl. Beat in cream, flour, sugar and salt.
2. Whisk until smooth. Then blend in 4 tablespoons of butter.
3. Heat in a large skillet or a Swedish pancake pan or an electric fry pan. Over medium high heat, brush lightly with melted butter. Drop the batter on the pan by tablespoonfuls.
4. Swedish pancakes should be a little smaller than a coffee can lid.
5. Cook until golden brown on the bottom, about 2 minutes. Then turn over and cook 1-2 minutes longer.
6. Keep the cooked pancakes in a warm heated oven at about 225 F in a partially covered dish while preparing remaining pancakes.
7. Serve a small amount of lingonberries on top of individual pancakes.Yield: Serves 8 people with 2-3 pancakes each
