Since 1949, Al Johnson's Swedish Restaurant & Butik in Sister Bay, Wisconsin has been serving up traditional Swedish Pancakes. In an average year, Al's serves as many as 115,000 plates of the delectable breakfast item. Rolf Johnson, son of founder Al Johnson, shows wannabe home cooks some tricks of the trade. Breakfast-in-Bed Birthday Pancakes
The Musics celebrate birthdays with a Swedish pancake feast, to be enjoyed by the person of honor, ideally in bed, with a full array of fillings, toppings, and embellishments for customizing each crepe-like pancake the second it comes out of the pan. When my boys were little, they got the bedroom treatment. But the tradition lives on to this day, where we spread out at the dining table, bowls and spoons within easy reach. What's the difference between a crepe and a Swedish pancake? I don't really know, feel free to weigh in. Either way, this recipe doubles incredibly well and is better if made the night before and refrigerated, which is a totally useful thing for whipping up pancakes ON A REGULAR WEEKDAY can you even imagine???

Easy Swedish Pancakes Recipe! My Mother's Recipe ~ My Scandinavian Heritage ~
I recently took a trip home to visit family, and in this video, I am at my parent's home sharing my mother's Swedish pancakes recipe! Join me after I return home and I'll share with you my version of them, and a little bit about my Scandinavian heritage.
Swedish Pancakes ~
3 eggs
2 cups whole milk
1 1/2 cup flour
1/2 tsp salt
3 Tbsp sugar
3 Tbsp melted butter
Beat the eggs in a large bowl, then add the milk, flour, sugar, salt, and melted butter until well blended. In a preheated skillet at medium high, melt coconut oil, and pour about 1/3 cup batter into skillet. Fry for about 1 - 2 minutes or the underside is a light golden color and edges are cooked, then flip. Top with maple syrup and fruit, or whatever you like! ????

Al Johnson’s Swedish Restaurant and Butik make a wonderful Swedish Pancake mix and Lingonberry Jam!
Directions for making Swedish Pancakes
1 - Empty contents of package into mixing bowl.
2 - Mix 2 Eggs & 3 cups of milk with dry ingredients & mix until smooth.
3 - Heat a skillet to med-high & melt some butter or use nonstick spray.
4 - Add a 1/4 cup of batter and spread out to
form a thin pancake.
5 - Cool about 1 minute on one side, flip and cook 30seconds on the other.
6 - Fold in half and serve with Lingonberry Jam!
