If you watch baking shows, you've almost definitely heard of pate a choux (choux pastry), and I'm sure you think it's difficult to handle. But surprise! It's easy AF, and we're going to make some cheesey favorites of mine: gougères.

We call these easy cheese puffs POGAČICE, but you’ll be calling them your new favourite party snack!
These fabulous, puffy, mile-high, one-bite cheese snacks will be the talk of your next party or get-together. We suggest you watch our easy to follow 1-minute video on how to make them. Then, follow these simple tips to ensure your complete success!
INGREDIENTS
Drum roll please: these cheese puffs are made using only four ingredients. Make sure your butter (unsalted, please) is at room temperature before you begin. This will ensure that the butter blends perfectly with the flour and pressed cottage cheese.
CHEESE PLEASE
Pressed cottage cheese is the perfect cheese for this recipe because it contains hardly any liquid. This causes the POGAČICE to expand and climb upwards as they bake. We’re always amazed by how light yet buttery they are. They truly are cheese puffs!
ROLL CALL
Rolling the dough and folding it back onto itself in thirds is KEY to getting these little wonders to rise so high. Do the roll and fold step at least FOUR TIMES, if not more!
SURPRISE
You’ll notice we never mentioned the yield for this recipe. What you see are the results from one of the two wrapped portions of dough. The other is still in the fridge, so you’ll be able to pull it out at a moment’s notice and answer your party-goers cries for more, more, more!

Serve these Serbian cheese puffs at your next party. POGAČICE are it!
INGREDIENTS:
3 cups of unbleached all-purpose flour
1½ cups of butter (3 sticks)
2 teaspoons of salt
500g package of dry pressed cottage cheese
INSTRUCTIONS:
1) Preheat oven to 400˚F
Prepare the dough:
2) Whisk flour and salt together in a medium-sized bowl. Add butter and rub it with the flour between your fingers to create a blended, shaggy dough. Add cottage cheese and use your hands to mix in the same fashion.
3) Form dough and turn out onto a floured surface. Roll out to a ½-inch thick rectangle. Fold 1/3 of the dough from the left side into the centre. Repeat with the right side. Turn dough 90 degrees and repeat. Repeat this process three more times.
4) Divide dough into two equal portions and refrigerate for at least 1 hour.
Form and bake:
5) Place chilled dough out onto a floured surface and roll out to a large rectangle approximately ½-inch in thickness. Using a 1.5-inch round cookie cutter or a shot glass, cut dough into rounds and place on a parchment-lined baking sheet.
6) Place into oven and bake for 20-25 minutes, turning the baking sheet at the halfway mark.
7) Remove from oven when high and golden.

1. Lox Croissant
You'll Need:
- 1 puff pastry sheet
- ½ cup cream cheese
- 3 tbsp whole grain mustard
- 1 zucchini, diced
- 4 oz smoked salmon
- 1 egg for the egg wash
- black sesame seeds
- salt & pepper to taste
Here's How:
Preheat the oven to 375°F. Place a mixing bowl on top of the puff pastry sheet and make a circular cut around the bowl. Divide the circular piece of dough into 8 equal sections. Spread 1 tbsp of cream cheese and 1 tsp of whole grain mustard in the center of each section. Place a few slices of smoked salmon on top and sprinkle with diced zucchini. Season with salt & pepper, roll each section of dough into the shape of a croissant, and transfer to a baking tray lined with parchment paper. Whisk 1 egg and brush the egg wash evenly over each croissant. Sprinkle black sesame seeds on top, transfer the baking tray to the oven, and bake at 375°F for 20 minutes.

2. Pepperoni & Cheese Roses
You'll Need:
- 1 puff pastry sheet
- tomato puree
- Italian seasoning
- 30 slices of pepperoni
- 12 slices of cheese
- 1 egg for the egg wash
Here's How:
Preheat the oven to 375°F. Cut the puff pastry sheet horizontally into 6 rectangular strips. Spread a thin layer of tomato puree over each strip of dough, leaving about ¾ inch uncovered on the right-hand side, and sprinkle Italian seasoning on top. Starting from the left-hand side of each rectangular strip, place 1 slice of pepperoni, 2 slices of cheese, and 4 more slices of pepperoni on the upper half of the strips of dough, leaving some dough uncovered at the bottom. Fold the uncovered part of the dough upwards. Starting from the left-hand side, roll up the each strip of dough to form the shape of a rose and transfer to a muffin pan. Whisk 1 egg and brush the egg wash over each rose. Transfer the muffin pan to the oven and bake at 375°F for 20 minutes.

3. Italian Sausage Twists
You'll Need:
- 1 puff pastry sheet
- 2 Italian sausages
- ⅔ cup shredded mozzarella
- baby spinach
- pepper
- 1 egg yolk + 1 egg for the egg wash
Here's How:
Preheat the oven to 375°F and whisk 1 egg yolk. Brush the egg wash down the left-hand side of the puff pastry sheet. Slice open the Italian sausages and squeeze the meat out directly onto the puff pastry sheet. Use a fork to spread the sausage evenly over the left half of the puff pastry sheet. Sprinkle with shredded mozzarella, top with fresh baby spinach, and season with pepper. Fold the right-hand side of the puff pastry over and press the edges together. Cut into 5 even strips. Twist each strip to make a spiral and place on a baking tray lined with parchment paper. Whisk 1 egg and brush the egg wash evenly over the surface of each twist. Transfer the baking tray to the oven and bake at 375°F for 20 minutes.

4. Chocolate & Banana Danish
You'll Need:
- 1 puff pastry sheet
- 1 milk chocolate bar
- 1 banana, sliced
- 2 tbsp sliced almonds
- 1 egg for the egg wash
- 1 tbsp sugar
Here's How:
Preheat the oven to 375°F. Place the chocolate bar in the center of the puff pastry sheet and make evenly-spaced diagonal cuts down both sides of the puff pastry dough. Slice the banana, place the slices on top of the chocolate bar, and sprinkle sliced almonds on top. Fold the strips of dough on the sides towards the center to cover the filling. Transfer the danish to a baking tray lined with parchment paper and pinch the top and bottom to seal it. Whisk 1 egg, brush the egg wash over the surface of the danish, and sprinkle sugar on top. Transfer the baking tray to the oven and bake at 375°F for 20 minutes.
