How To make Suppers: [Thursday] Greek Beef Pita Pockets
1 Egg
1 sm Onion, finely chopped
2 tb Red wine vinegar
1 ts Dried oregano
1/2 ts Salt
1/2 ts Pepper
1/4 ts Cinnamon
1 lb Lean ground beef
1 tb Vegetable oil
4 sm Pita breads
4 Lettuce leaves
1/2 Cucumber, thinly sliced
-----------------------------YOGURT MINT-SAUCE----------------------------- 2/3 c Extra-thick plain yogurt
2 tb Fresh mint, chopped
1 Garlic clove, minced
1 1/2 ts Lemon juice
In bowl, beat egg; mix in onion, vinegar, oregano, salt, pepper and cinnamon. Mix in beef. Shape into eight 1/2-inch thick patties. In large nonstick skillet, heat vegetable oil over medium heat; cook patties, in batches if necessary and turning once, for about 8 minutes or until no longer pink inside. Yogurt Mint Sauce: Meanwhile, in small bowl, stir together yogurt, mint, garlic and lemon juice. Tip: If extra-thick yogurt is unavailable, prepare your own by using drained yogurt. Place 1-1/3 cups plain yogurt in cheesecloth-lined sieve set over bowl. Refrigerate for 3 to 4 hours or overnight or until yogurt is reduced to about 2/3 cup. Slice off top third of pita breads; open large piece to form pocket. Insert top piece, cut side up, into pocket to strengthen bottom. Place 2 patties in each pocket along with lettuce and cucumber. Spoon 1 tb of sauce into each pocket; serve remaining sauce separately. Dip crunchy carrots and broccoli into any extra sauce. Per serving: about 425 calories, 31 g protein, 16 g fat, 40 g carbohydrate excellent source iron. Serve with: Carrot sticks and broccoli florets, Pineapple rings. Lebanese Arayes are pita pockets that take 20 minutes to make and grill. They have a tender and delicious spiced meat filling that makes for a great treat. I'll show you how to make the filling and what kind of bread to use.

Ingredients:
5-6 Flat breads (pita or Lebanese bread
500g (1lb) Minced Beef (or you can use lamb)
30g (1oz)Parsley
1 Medium brown onions
1-2 Garlic Cloves
1 1/2 Tbsp Pomegranate Molasses
1-2 Tbsp oil + more
1 Tsp salt
1/2 Tsp Boharat
1/4 Tsp pepper
1/4 Tsp Cayenne
1/8 Tsp Cinnamon

Directions:
To make the meat filling:
1. Add your Onion and parsley to a food processor or blender, and process till very finely chopped
2. Combine meat and remaining ingredients (apart from the bread) in a mixing bowl and mix thoroughly until well combined
3. Cook a small piece of the meat in a pan and taste for seasoning. Adjust if necessary
To prepare the Arayes:
1. For the pita, microwave the bread for 30 seconds and then slice into pockets or quarters
a. If using Lebanese bread there is no need to microwave
2. Use a knife to pry both sides of the bread apart till a pocket has formed
3. Add a few tablespoons of the meat filling to each pocket and massage to the edges of the bread. Aim to have the Pita about 1cm (1/3in) thick, or 1/2cm (1/6in) thick for the Lebanese bread. Stuff the bread pieces till you have used up the meat mixture
4. Use a brush to oil both sides of the bread generously with olive oil
To cook the Arayes:
1. Preheat a grill pan on medium high heat and when ready add your Arayes to the pan
2. Grill for 4 minutes (3 for Lebanese bread) and then flip once they start to sizzle
3. Cook for a further 4 (or 3) minutes and then remove from the pan
Prepare a simple chopped parsley and onion salad and serve the Arayes.

Traditional Arayes - Ground Beef Pita Sandwiches
I’m sure you’ve seen the “kofta” version of Arayes which includes parsley and onion finely minced. While I’ve shared my version of this and it is still a fav, I wanted to show you the traditional version which is much more simpler and needs only 4 main ingredients - pita bread, good quality ground beef, tomato, and 7 spice. These are so good, crunchy, and juicy. Also it wouldn’t be wrong to add some cheese inside ???? They make for a quick lunch or dinner.
6 loaves pocket pita bread
1 lb extra lean ground beef
1 tbsp Arabic 7 spice (or ground allspice)
1 tomato, diced finely
Salt and pepper to taste
Oil for brushing
Preheat panini press or skillet on the stove on medium high heat.
In a mixing bowl knead ground beef with 7 spice, diced tomato, salt and pepper.
Stuff the pita bread with the ground beef mixture in an even layer, I usually go for a thin to medium thickness.
Lightly brush the outsides of the bread with oil and grill the pita for about 4 minutes in a panini press. On the stove top, cook on each side for about 2 minutes.
Serve with yogurt, fries, and salad for a full meal.

230g ground beef
1 egg
salt to taste
black pepper to taste
paprika
mix well
50g chopped onion
15g green onion
15ml olive oil
Mix well
Tortilla(23cm)
Fold and unfold the tortilla in half
Take some of the meat fillings
Put the filling on the tortilla
Spread the beef on half of the tortilla evenly
Sprinkle some mozzarella cheese
Fold the tortilla in half
Tortilla(17cm)
You can also make it with smaller tortillas
Fold than unfold in quarters
Cut the tortilla like this
Spread the beef filling on 3/4 of the tortilla like this

Repeat

Medium-low heat
Olive oil
Spread the oil every in the pan
Fry the tortilla for 5 minutes
Flip and fry for another 5 minutes
The color should be golden brown
Done!

Add some olive oil to the pan
Place the small tortillas in the pan
Fry for 5 minutes
Brush oil on top
Flip then fry for 8 minutes
Add 1tbsp water in the pan
Done!
