Baked Caramel Corn Recipe | Caramel Popcorn Recipe | Super Bowl Snacks | Cooking Up Love
This Baked Caramel Corn Recipe is the perfect sweet snack for movie nights, parties and one of our favorite game day super bowl snacks. It's so easy to make this buttery salted caramel corn recipe, and our recipe makes about 24 cups of the best caramel popcorn you've ever tasted.
And if you've been missing your favorite Disneyland treats, in less than an hour you can enjoy a little bit of Disney Magic with this sweet, salty and buttery caramel popcorn at home. To make a homemade Cracker Jack mix, add some Spanish peanuts during the last 30 minutes of baking.
Baked Caramel Corn Recipe Ingredients
24 cups (6 quarts) popped popcorn
cooking spray
1 cup (16 tablespoons) butter
2 cups brown sugar
½ cup Lyles Golden syrup or corn syrup
1 tsp salt
1 tsp vanilla extract
1 tsp baking soda
Baked Caramel Corn Recipe Directions
Begin by preheating the oven to 250 degrees. Spray a large roasting pan (or two large baking sheets) with non-stick cooking spray. Then pop your popcorn. I’m using my favorite Ruby Red popcorn, it has super tender kernels and less of the hulls that sometimes get stuck in your teeth.
In a heavy bottomed pot, cover the bottom with your choice of oil, I’m using avocado oil. You can start with a few kernels, sometimes I just heat the oil a bit and add the kernals. Add enough kernels to cover the bottom of the pan in a single layer. Cover and cook over medium high heat, shaking just a few times so the kernels can heat up. Once they start popping, begin shaking the pan. Then cook until the popping stops. If the popcorn starts to overflow the pot, just begin tipping it into the waiting pan. I’m making 2 batches of popcorn, which will make about 24 cups of popped corn. Pick out any unpopped kernels, if you’re using nuts add them now, then place the roasting pan into the warm oven.
In a medium large saucepan, melt the 1 cup of butter. Stir in 2 cups of brown sugar, 1 teaspoon of kosher salt and ½ cup of syrup, I”m using Lyles Golden syrup because it’s what I had on hand, you can also use corn syrup. Stir to combine and dissolve the brown sugar. Stirring constantly, bring the mixture to a boil over medium heat.
Then boil over medium heat for 5 minutes without stirring. If you have a candy thermometer, check the temperature, we’re looking for soft ball stage at 240 degrees. You can also drop a little bit of the syrup in cold water, let it cool for a second and pick up the ball. If it’s can be easily pressed flat, it’s ready.
Remove the pan from heat, and add the 1 tsp of baking soda and 1 tsp of vanilla, and stir. And this is why you’ll want to choose a medium large pan, the caramel begins to foam up from the baking soda, and this makes the caramel lighter, smoother and easier to coat the popcorn.
How To Make Caramel Popcorn At Home
Remove the popped popcorn from the oven, and carefully pour the hot caramel over the warm popcorn. Stir the popcorn together to combine. The caramel will be super hot, so be careful not to touch it! And don’t worry if it’s not perfectly spreaded at first, the caramel will continue to be spread around during the next step.
Bake in the pre-heated 250 degree oven for 45 min to 1 hour, stirring every 15 minutes. The caramel will become less sticky as it bakes. Test the caramel popcorn after 45 minutes, if it still is chewy, pop it back into the oven for a few more minutes to finish hardening the caramel. Once it's done baking, remove the pan from the oven and let it cool. Break up any large chunks of caramel popcorn and serve. Keep any leftovers in an air tight container at room temperature for 3 - 5 days. You can also freeze baked caramel corn in an airtight ziptop bag and freeze for up to a year.

Sriracha-Reaper Popcorn Chicken Appetizers for the Super Bowl
The Super Bowl is coming up, so today we are making Sriracha-Carolina Reaper popcorn chicken. The result is some spicy popcorn chicken! This recipe is based on a recipe from the Mad Dog 357 company and we have just swapped out their Mad Dog 357 Naga Morich Pepper Puree (in the original recipe) with Mad Dog 357 Reaper Sriracha hot sauce, and then moved the cook to the grill.
The Mad Dog 357 hot sauce we’ve chosen has the wonderful flavor of Sriracha, but adds some kick from the world’s hottest pepper – the Carolina Reaper.
Ingredients
• 2 skinless Chicken breasts
• 2 teaspoon Mad Dog 357 Reaper Sriracha
• 1 cup barbecue sauce. I used Fat Bastard Bear Bite BBQ sauce.
• 8 oz Potato chips
• Chopped parsley or cilantro for garnish
Instructions
1. Preheat the grill to 350-375°F. You will need to grease the grill grates or use a non-stick grill mat. If the chicken sticks, then the potato chips will fall off the chicken.
2. Take a sharp knife and cut the chicken into approximately 1” pieces and place in a bowl. Add the hot sauce and barbecue sauce, then mix well.
3. Place the potato chips inside a Ziploc bag and then crush the chips into crumbs.
4. Now, put the chicken pieces inside the Ziploc bag with the crushed potato chips and shake the bag to get the chicken covered with the chips.
5. Place the chicken bites on the grill and cook for about 15 minutes until the chicken is done.
6. Garnish with chopped parsley and serve with more BBQ sauce or Ranch Dressing.
