Beat in wate r, a few drops at a time, only until dough starts to come away from sides of bowl. Shape dough into a large flat disk; wrap in plastic wrap and refrigerate 2-3 hours. Preheat oven to 350^. Roll dough on lightly floured surface to 1/8" thickness. Cut with cookie cutters dipped in flour. Bake 10-12 minutes or until cookies begin to brown around the edges. Care fully remove from cookie sheets. Cool completely on wire racks. Decorate as desired if cookies have not been painted. A while back, someone was looking for a GOOD cut out cookie that held it's shape in moving from cutting board to cookie sheet. This is a great one, and a really good little idea for decorating, using "edible tempra" colors. -----

:: HELPFUL HINTS ::
Q: Why are my cookies not spreading, dry or crumbly?
A: You may have added too much flour.
DO... (spoon-and-level method)
Fluff the flour in the container before scooping it out. Lightly spoon the flour directly into the measuring cup until it mounds well above the top of the measuring cup. Using the back of the dinner knife (non-serrated side is facing the flour), sweep the knife over the top of the cup to remove the excess flour.
DON'T...
Scoop the flour from the container directly with the measuring cup. Shake or tap the cup with the spoon to pack down the flour. (These steps will more densely pack the flour into the measuring cup, resulting in too much flour)

4 Levels of Sugar Cookies: Amateur to Food Scientist | Epicurious
We challenged chefs of three different skill levels - amateur Emily, home cook Beth, and professional chef Penny Stankiewicz from The Institute Of Culinary Education - to make us a batch of sugar cookies. Once each level of chef had presented their bakes, we asked expert food scientist Rose to explain the choices each of them made along the way - both good and bad. Which cookie would you sneak out of the kitchen just before bed?
