How To make Stir Fry Beef & Snow Peas

1 lb Boneless sirloin steak 2 ts Cornstarch 1 tb Soy
sauce 1/2 c Peanut or vegetable oil 2 oz Cellophane noodles, uncooked 6 oz Frozen snow pea pods, thawed And drained 2 tb Peanut or vegetable oil 2 sl Fresh ginger (1" slices) 1 tb Peanut or vegetable oil 2 Carrots, scraped and cut in 1/8 inch slices 15 oz Baby corn, drained 15 oz Straw mushrooms,drained 1 ts Cornstarch 2 tb Soy sauce 2 tb Rice wine Partially freeze steak; slice diagonally across grain into thin strips. Combine 2 teaspoons cornstarch and 1 tablespoon soy sauce in a medium bowl, stirring until smooth; stir in steak. Cover and marinate in refrigerator 1-4 hours, stirring occasionally. Pour 1/2 cup oil around top of preheated wok or large
skillet, coating sides; heat at medium-high (375) for 2 minutes. Add noodles, a small amount at a time,
andstir-fry 2-3 seconds or until noodles expand and turn white. Remove noodles, and drain on paper towels; arrange in a ring on a serving platter. Drain excess oil from wok. Add snow peas to wok; stir-fry 2 minutes. Remove from wok, andarrange around edges of noodles. Pour 2 tablespoons oil around top of preheated wok, coating sides; heat for 2 minutes. Add steak and ginger; stir-fry 4-5 minutes or until steak is no longer pink. Remove from wok, and set aside. Pour 1 tablespoon oil around top of preheated wok, coating sides; heat for 2 minutes. Add carrot, corn, and mushrooms; stir-fry 3 minutes. Combine 1 teaspoon cornstarch, 2 tablespoons soy sauce and wine; stir until smooth Add cornstarch mixture to carrot mixture; stir fry 1 minute or until thickened. Serves 4
300g beef steak
2 tablespoons soy sauce
1 tablespoons chinese rice wine or dry cherry
1 tablespoon sesame oil
Salt and pepper
2 tablespoons cornflour
3 tablespoons peanut oil
1 red capsicum, remove seeds and membrane & cut into strips
200g snow peas, ends removed
1/2 cup chicken stock
2 tablespoons oyster sauce
Cut the steak into thick strips. Place in a large bowl and add soy and chinese rice wine. Add sesame oil, salt and pepper and cornflour. Blend well and leave in the fridge for 20mins or so.
Heat a wok with peanut oil. When oil is hot add the meat pieces, stir fry for approx 3mins or until browned.
Remove from wok.
In the same wok with reserved oil, add onions and stir fry for a minute. If there isn’t enough oil, add a teaspoon to the wok. Add capsicum , snow peas , oyster sauce and stock. Stir fry for a further minute or two. Add meat to the stir fry and the juices that may be on the plate.
Combine well and its now ready to serve.

You know stir-frying is one of my favorite techniques because it's so easy and so flavorful. Done the right way, it can also be super fast! The secret to making a high-speed stir-fry is keeping it simple. This recipe requires only vegetable oil, skirt steak, and snow peas, plus a sauce made of garlic, ginger, hoisin sauce, and lime juice. Serve it with some cooked rice and fresh cilantro, and you'll never look back!

3/4 pound skirt steak, thinly sliced

2 tablespoons minced peeled fresh ginger
3 cloves garlic, minced
3/4 pound snow peas

1 lb (450 g) flank steak (or skirt steak), thinly sliced against the grain
1 tablespoon oyster sauce
2 teaspoons Shaoxing wine (or dry sherry)
1 teaspoon peanut oil (or vegetable oil)
1 teaspoon cornstarch
Sauce
1/4 cup chicken stock
1 1/2 tablespoons oyster sauce
1 tablespoon Shaoxing wine
1 teaspoon dark soy sauce (or regular soy sauce)
1/2 teaspoon sugar
1 teaspoon cornstarch
1 teaspoon sesame oil
Stir Fry
1 to 2 tablespoons peanut oil (or vegetable oil)
2 cups (6 oz / 170 g) snow peas, trimmed & strings removed
1/2 onion, sliced into thick strips

Ingredients
250 g beef steak or tenderloin thinly sliced
Marination
1/4 tsp. ground black pepper
1 tbsp. oyster sauce
1/2 tbsp. Chinese cooking wine
2 tsp. corn starch
1 tbsp. water
OTHERS
1/4 cup vegetable cooking oil , with around 2 tbsp. removed
2 garlic cloves chopped
150 g fresh snow peas
pinch of salt
SAUCE
1 tsp. dark soy sauce
1 tsp. light soy sauce
1/4. tsp. sugar
1 tsp. cornstarch
1/2 tbsp. water
