How To make Stephanie's Chilly Day Chili
2 md Onions, chopped
1 md Green pepper, chopped
2 tb Vegetable oil
2 lb Ground beef
1 cn 16 oz tomatoes
1 cn 15 oz tomato sauce
1/2 c Ketchup
2 tb Chili powder
1/4 ts Pepper
2 cn 15.5 oz ea kidney beans
1. Saute the onions and peppers in oil. Add ground beef. Cook until lightly
browned, stirring occasionally. Drain fat and set aside. 2. Partially drain kidney beans. Stir in tomatoes, sauce, ketchup, chili
powder, salt and pepper to meat mixture. Simmer, uncovered, for 30 minutes. Stir in kidney beans, and simmer 15 minutes longer. Serve with hot cornbread and honey butter. 2 cans of white beans (Do not drain)
1 cup chicken broth
1/2 onion chopped
1/2 Cup Salsa Verde
2 tsp cumin
1 tsp salt
1 tsp pepper
2 cups Shredded Monterrey Jack Cheese Toppings

Put all the ingredients in the crock pot except for the Monterrey jack cheese.
Cover and cook on low for 6-8 hours.
Serve topped with the Shredded Monterrey Jack Cheese.

Listen as I share about the new path I will be taking with YouTube as I cook up a hearty batch of chili. Use up that one sweet potato or half of a butternut squash. Add any type of beans and you'll have yourself a delicious and nutritious bowl of soup to fill you up on a chilly day.
CHILI RECIPE (I didn't follow a specific recipe)
1-2 sweet potatoes, peeled if you prefer
1-2 cups butternut squash, peeled and diced
1 onion, chopped
1 bell pepper, chopped
2-3 cloves garlic, pressed
1-2 cans diced tomatoes
16 oz tomato sauce
1-2 cartons of chicken broth (depending how thick or broth-y you like it)
1 can black beans, rinsed and drained
1 bigger can pinto beans
Seasonings:
Chili powder, cumin, salt and pepper
