How To make Spinach & Lentil Soup (Santa Maria)
1 lb Spinach, washed & drained
1 c Lentils
A few bay leaves 3 tb Olive oil
1 bn Green onions, sliced
2 Garlic cloves, chopped
1/2 ts Cumin powder
1/2 ts Salt
1 pn Black pepper
Water/stock as required Chop the washed spinach. Boil lentils in 4 cups water with bay leaves until they are soft. Heat oil in a pot & gently fry the green onions for 2 minutes. Add garlic & seasonings. Add spinach. Mix well & put in cooked lentils. Add another pint of water or stock & cook for a further 15 minutes. Jack Santa Maria, "Greek Vegetarian Cookery"

COCONUT CHICKPEA STEW ✨
400 g chickpeas in can
1 cup frozen spinach
3/4 cup tomato sauce
400 ml coconut cream
2 tsp ground cumin
2 tsp smoked paprika
2 tbsp. maple syrup
1 vegetable bouillon cube
1 yellow bell pepper (capsicum), sliced
1 medium-sized onion, diced
4 cloves garlic, minced
1 tbsp. parsley flakes
1 tbsp. water
1 tsp salt
1 tsp ground black pepper
a pinch of chili flakes
Method
In a cast iron skillet, sauté the garlic, onion and yellow bell pepper. Add the chickpeas (drained and rinsed) and season with salt and pepper to taste. Mix it well. Add the ground cumin, smoked paprika, maple syrup and frozen spinach. After that, add the tomato sauce, 1 tbsp. of water and the vegetable bouillon. Pour the coconut cream into the pan. Add parsley flakes, a pinch of chili flakes and stir to combine. Let it simmer for 5-8 minutes before serving. Transfer in a bowl and enjoy with steamed rice.

We tried to recreate this beautiful Lentil Soup Recipe from Forks Over Knives by using ingredients that we have on hand. It was very easy to follow and so delicious! ???? Thank you FOK! ????
EASY LENTIL SOUP ✨
1 red onion
2 medium-sized potatoes
4 pcs baby carrots
1 cup spinach
400 g diced tomatoes
2 cups red split lentils
6 cups vegetable stock
1 tsp salt
1 tsp ground black pepper
Method
In a large pot, add the chopped vegetables (except for the spinach), red lentils and vegetable stock. Add salt and pepper to taste and mix them well. Cover with lid and cook on medium heat for 45 minutes (stirring the mixture every 15 minutes). Add the chopped spinach 5 minutes before the soup is cooked. Transfer in a bowl and top it with more spinach or chives if you prefer. Serve warm and enjoy!
