How To make Spinach and Lentil Soup
1 c Brown lentils
1 lb Fresh spinach
1 Onion, chopped
1/4 c Olive oil
1 t Tomato paste
1 Bay leaf
4 c Water
2 Garlic cloves, crushed
1 t Cumin
1 t Coriander
1 t Thyme
1/4 c Chopped parsley
3 T Lemon juice
Salt Pepper Wash lentils and cook in water until almost tender. Carefully wash, drain, stem and chop spinach. Heat oilve oil and saute onion, garlic and spinach until wilted. Add to lentil broth, rinsing saute pan with a little broth to save oil and garlic remaining in pan. Add to soup pot with tomato paste, lemon, parsley and the remaining ingredients. Simmer for 20 minutes. Check seasonings. Serve hot with additional lemon.

Oil- 2 Tbsp.
Ginger- 1 Tbsp. (shredded)
Onion- 1 cup (finely diced)
Tomatoes- 1 cup (diced)
Salt- 1/2 tsp
Coriander Powder- 1 Tbsp.
Red Chili Powder- 1 tsp
Cumin Powder- 3/4 tsp
Yellow split pea lentil- 1/2 cup (soaked for 30 minutes)
Spinach- 4 cups
Coconut Milk (extra light)- 1 1/2 cups
Cilantro - 1/2 cup
Water- 1 cup
Potato wedges and cilantro- for garnishing.

This is a very Simple but Healthy recipe. Also known as Palak daal or Sagpaita, is a curry made of Spinach and Black lentils or Urad dal. Have it in lunch or dinner with some steamed rice or roti (whole wheat flat bread) and enjoy this tangy dish.

Black lentils (Urad daal) - 1/2 Cup
Spinach (Palak) - 1lb or 1/2Kg

The Lebanese sour lentil and chard soup, so easy and tasty.
Chard can be replaced by spinach, as in this video.
Ingredients:
Cup of whole lentils
500 g of spinach or chard
Juice of 2 lemons (or less to taste)
1garlic clove
1/4 cup cilantro (or TBSP already cooked cilantro)
Salt to taste
