How To make Spicy Vinegar Marinade
FOR BEEF,POULtrY,PORK,LAMB:
1 c Red wine vinegar
1 c Water
1 Onion; sliced
2 Garlic cloves; minced
8 Cloves
6 Parsley sprigs
2 Bay leaves
2 Celery ribs w/leaves;chopped
2 Juniper berries; crushed
1/2 t Dried thyme
1/2 t Dried rosemary
1/2 t Dried basil
1 T Brown sugar
Combine all ingedients in a bowl. Makes about 3-1/2 cups.

Spicy Chili Vinegar ~ Gifts from the Garden~ Noreen's Garden
Greetings! This week I am pleased to bring you the first in a series of holiday videos that I am calling Botanical Holiday Gifts from the Garden. It is my goal to bring you some great ideas on how you can give gifts from your garden even at Christmas or during the holiday season.
This week we are going to start with a super simple idea that will be welcomed by friends and family with a love for the hot stuff! I grow lots and lots of peppers in my garden as some of you may know. My friend Katzcradul calls me the Pepper Queen and she may be right!
I have taken my hot Thai chilies and stuffed them into a rather large bottle. I previously washed and cut off their stem ends. Then I poured over hot vinegar which was heated on the stove to just before the boiling point. You don't want to boil the vinegar because it gives off some potent fumes that could overwhelm you in your kitchen.
This chili vinegar will need to be stored in a cool, dark and dry place for at least a month before giving. Give it a shake very few days to get all the peppers distributed. This makes a lovely presentation and can be used as a spicy addition to salad dressings, marinades as well as homemade sweet Thai chili sauce.

How to make your own hot sauce, and tabasco sauce replica but healthier. It's really easy! No salt, no vinegar, since those are poison. Simple easy hot sauce recipe, delicious. Raw hot sauce recipes.
The amounts don't matter much, play around with it.
Bunch of lemons or limes. I used 12 limes last time.
Bunch of cayenne peppers (or your favourite hot pepper, 1 handful of Thai chili peppers etc.)
A clove or 2 of garlic (optional)
1 T dulse flakes (salt replacement)
