Sausage & Bean Casserole Recipe
Today i'm going to show you how to make my Sausage & Bean Casserole. All cooked in one pot to save on the washing up and can be made ahead too!
This Big Batch Sausage and Bean One Pot is a great dish for a family gathering that can be made ahead of time.

Ingredients for the casserole:
2 tbsp olive oil
20-30 depending on how hungry your family are! good quality chipolata sausages (use gluten-free chipolatas if required)
1 large red onion peeled and roughly chopped
2 red peppers deseeded and roughly chopped
20 mini chorizo the bitesize ones, chopped in half
3 cloves garlic peeled and minced
2 tsp paprika
1 tsp dried thyme
120 ml (1/2 cup) red wine (optional)
2 chicken stock cubes crumbled (replace with 2 tsp vegetable bouillon for gluten free)
3 x 400g (14 oz) tins chopped tomatoes
1 x 400g (14oz) tin haricot beans, drained and rinsed
1 x 400g (14oz) tin cannellini beans, drained and rinsed

Epic Fall Recipe: Spicy Sausage with White Bean Soup
The Spicy Sausage with White Bean Soup is a perfect fall dinner soup. The ingredients the soup requires are spicy sausage, carrots, diced tomatoes, whtie beans, and kale which creates a melting pot of flavors. It's perfectly seasoned with Italian seasoning, red pepper flakes, and salt and pepper. There's nothing better than soup that makes you feel right at home.
Ingredients
1 lb Hot Italian Sausage, casing removed
2 Cans (about 15.5 Oz. per can) White Bean (Cannellini), drained
1 Can (About 14 Oz.) Diced Tomatoes
¼ lb Kale, stem removed, roughly chopped
1 Carrot, cut into 1-inch chunks
1 Yellow Onion, roughly chopped
3 cloves Garlic, minced
3 Cups Chicken Broth
½ Tbsp Italian Seasoning
½ tsp Red Pepper Flakes
¼ Tbsp Salt
⅛ tsp pepper
1 Bay leaf
1 Tbsp vegetable oil

Shopping List:
1 lb hot or mild Italian sausage
1 onion diced
3 cloves minced garlic
6 cups chicken stock
1 cup heavy cream
5 slices bacon
2-4 russet potatoes
3 handfuls chopped kale
2 tbs better than bouillon roasted garlic
1/4 cup parmesan cheese
salt, pepper, garlic, onion powder, Italian seasoning, red pepper flakes
Directions:
In a large pot over medium heat, cook bacon. Remove bacon when finished and reserve for later.
Next, cook sausage, breaking up with the back of a wooden spoon, until browned and no longer pink, 5 to 7 minutes. Transfer to a plate to drain.
Add onion and roasted garlic base to the drippings in the pot and cook until soft, then add garlic and cook until fragrant, 1 minute more.
Add chicken broth and potatoes and cook until potatoes are tender, about 20 minutes. (Fork tender)
Stir in kale and heavy cream and bring to a boil. Then, reduce to a simmer and let cook until leaves are tender and bright green. Season with salt, pepper, garlic, onion powder, Italian seasoning, and red pepper flakes to taste. Garnish with shredded parmesan.
