SPAGHETTI WITH SPICY SAUSAGE AND BROCCOLI RABE | COOKING TUTORIAL
Hiiiiii peeps ✌???? I've been sooo swamped with loads of work in preparation for finals and the last week of classes so I'm sorry for getting this video up a tad late :/ As soon as I'm done I'll be able to upload on a more regular basis! In today's video I show you guys how to make spaghetti with spicy sausage and broccoli rabe ???????????????? It's super tasty, hella filling and is perfect for a late-night dinner! INGREDIENTS YOU'LL NEED...
- 1 box or bag of spaghetti
- 1 head of fresh broccoli rabe
- 6 cloves of garlic
- 2 shallots
- 1 block of parmesan cheese
- crushed red chili pepper flakes
- salt
- pepper
- rubbed sage
- 2 sausages (We got 1 spicy italian pork and 1 fennel but it's ultimately up to you! Getting a spicy sausage will intensify the spice overall within the dish!)
STEP BY STEP DIRECTIONS...
1) Get out a small saucepan or pot and fill it up with water to about halfway. Put saucepan or pot on the stove and turn on the heat to high until the water boils.
2) Crush the 6 garlic cloves, as well as cut off all the ends on either side. Finely chop up the 2 shallots and set both aside.
3) Take all of the broccoli rabe and wash it under the sink. Make sure to get all sides so there is no leftover dirt or anything else on it before using.
4) Time to separate the broccoli rabe into 3 different categories: the stems, the leaves and the florets.
5) Salt your boiling water.
6) Take the pile of broccoli rabe stems and place them in the boiling water for 15 minutes!
7) After 15 minutes have passed take the broccoli rabe stems out of the boiling water and throw them away.
8) Take the pile of the broccoli rabe leaves and throw them in the boiling water for about 3 minutes.
9) Take the pile of broccoli rabe florets and add them to the boiling water. Boil the leaves and florets for an additional 5 minutes. After, take them out and set them aside in a bowl.
10) Take out the 2 sausages and remove the casing (if they have any).
11) Take out a frying pan, turn on the heat to medium and add a good amount of olive oil to cover the entire pan. Let that heat up a little.
12) Add the spaghetti to the boiling broccoli rabe water (should have a green tint to it). Leave the spaghetti in for about 7 to 8 minutes then remove and drain. When draining, make sure to keep a little cup of that starchy pasta water because it's going to be used a tiny bit towards the end of the recipe.
13) Simultaneously, throw the sausages into the pan along with the crushed garlic and chopped up shallots. Start breaking up the sausages with a spatula or big spoon until it reaches small little pieces.
14) Add a pinch of salt, pepper and rubbed sage to the sausages, garlic and shallots.
15) Throw any amount big or small (the bigger, the spicier!) of the crushed up red pepper flakes into the frying pan with the sausages, garlic and shallots.
16) Once pasta is drained, add to the frying pan and start to mix everything together. Take a little bit of that pasta water and add it into the mix...this will help with binding all of the elements together. Leave everything cooking for an additional 5 minutes to make sure all elements are incorporated throughout.
17) OPTIONAL - Garnish dish with a hefty amount of freshly grated parmesan cheese to top it off!

Orecchiette with Broccoli Rabe and Sausage
Spicy Broccoli and Sausage Orecchiette Pasta (POV Cooking)
This is another recipe I've adapted from Kenji López-Alt. I find that this is one of the easier and faster pasta recipes to make that feeds so well. 10/10 recommend. I will link Kenji's channel and referenced video below.
INGREDIENTS:
- 1 bag of orecchiette or rigatoni pasta
- 1/2 kg of caseless/skinless spicy Italian sausage
- 1 head of broccoli
- 3 cloves of garlic
- grated parmesan
- 1 cup white wine
- 1 tspn red chili pepper flakes
- olive oil
- black pepper
- salt
DIRECTIONS:
On one burner of your stove, heat water for pasta.
On another burner of your stove, heat 1 tablespoon of olive oil in a large shallow pan on medium high heat. Once your oil is shimmering, add your sausage and begin to continuously break it up into smaller pieces while it browns and cooks.
While your sausage is frying, cut your broccoli into roughly 2 X 1 inch pieces and set aside. Slice your garlic into discs.
Hopefully your sausage has released most of its moisture by now and is browning and frying. Add your garlic and stir.
By this time, if your pasta water is boiling, add your pasta and boil for 7-8 minutes (or whatever your package suggests).
Add your broccoli and a bit more olive oil to the pan of sausage and garlic. Stir in a bit of red chili pepper flakes and salt, and continue to move ingredients around until broccoli is bright green in color.
If you've built a fond or any kind of burnt level of seasoning on the pan, add your wine and scrape to reduce seasoning. Let this cook until the liquid no longer smells like alcohol. (about 2-3 minutes).
Your pasta should be done by now. Drain it lightly and add to the pan. Turn your heat on low and mix your ingredients as best you can before adding as much parmesan cheese as you'd like and stirring again.
Turn your heat off and crack some black pepper over the pasta. Top with fresh olive oil and serve.
