How To make Spicy Pineapple Sauce
2 T Sugar
1 T Cornstarch
8 oz Pineapple chunks in
Unsweetened juice, undrained 1/4 t Ground cinnamon
2 T Butter or margarine
1. Combine sugar and cornstarch in a deep, 1-quart, heat- resistant,
non-metallic casserole. 2. Gradually add juice from pineapple, stirring constantly. 3. Add pineapple, cinnamon and butter. 4. Heat, uncovered, in Microwave Oven 3 minutes. Stir and heat an additional 4 minutes or until sauce has thickened. Stir occasionally. Serve with meat or as a desert sauce. Makes 3/4 cup

INGREDIENTS
1 clove garlic
5 thai chilies, reserving 1 (more or less to taste)
pinch of salt
1/2 (8oz) can of pineapple tidbits + juice (crushed pineapple is fine too)
2 tablespoons sugar
2 tablespoons padaek (fermented fish sauce)
1 tsp chili garlic sauce
1 tsp sriracha
fish sauce to taste
DIRECTIONS
using mortar and pestle, crush garlic, salt and 4 chilies.
add pineapple, gently crush to break down the tidbits.
add sugar, stir to combine.
stir in padaek, chili garlic sauce and sriracha. add fish sauce to taste; stir to combine. taste and adjust as needed.
add reserved (minced) chili for extra heat!

We cooked up a batch of this sweet and spicy hot sauce made with fresh pineapple, fresh mango, spicy Fatalii chili peppers and more. If you love hot sauce with a lot of heat and sweet, this is the hot sauce for you.

Pineapple-Mango-Fatalii Hot Sauce Recipe
Ingredients
4 Fatalii chili peppers coarsely chopped
1 mango peeled and coarsely chopped (about 1 cup)
2 cups fresh pineapple chopped
1/4 cup chopped cilantro
1 cup apple cider vinegar
½ cup water
1 tablespoon sugar
Salt to taste
Instructions
Add all ingredients to a blender or food processor. Process until very smooth.
Add to a saucepan and bring to a boil.
Reduce heat and simmer the sauce about 15 minutes. Remove from heat and cool.
At this point you can strain your sauce a little or a lot, depending on your preferred level of chunkiness, or add it back to your food processor for a bit more processing time. You can also add water to thin it out if desired.
Transfer to hot sauce bottles and refrigerate at least 1 hour before using.

Habanero Pineapple Lime Hot Sauce
This Habanero Pineapple Lime Hot Sauce is one of my favorite recipes! This sauce has a HUGE flavor with just the right amount of sting! On the heat level, I'd rank this a notch or two above Frank's Red Hot. If you give it a try, I'd love to hear what you think in the comments!
Ingredients (Yields about four 5oz. bottles):
Juice from 4 limes (about 1/4 cup) + 2 spent lime rinds
7 Habañero Peppers (stems removed/Halved)
About 2 cups Pineapple chunks
12 baby carrots
1 1/2 teaspoons kosher salt
3 cups white distilled or apple cider vinegar
