How To make Spicy Piloncillo Syrup
1 c Granulated sugar
8 oz Cone piloncillo; crushed
. with a heavy mallet 1 c Water
6 Cloves; whole
1 Stick cinnamon; 3 inch
Note: Piloncillo is an unrefined sugar that comes in a firm cone shape (it's named after the pilon, a conical weight used on scales). Piloncillo is available at Hispanic supermarkets. Place water, sugar and spices in heavy one-quart nonreactive saucepan and let sit for 1 hour or longer, until sugar is fully dissolved. Slowly bring to a boil, then reduce heat and simmer 4-5 minutes. Allow to cool, then discard spices and pour remaining mixture into a glass bottle. Keeps indefinitely in the refrigerator. This dark syrup dissolves easily in hot coffee drinks. Nutritional analysis per tablespoon: 137 calories, trace of fat, 35 grams carbohydrates, 0 cholesterol, 6 milligrams sodium. Autumn Spice Syrup
1-cup (240 mL) water
1-cup (240 mL) light brown sugar
3 cinnamon sticks
2 dashes nutmeg
2-tsp (10 mL) allspice
4-tsp (20 mL) whole cloves
Instructions: Add ingredients to sauce pan and bring to low boil over medium low heat. Simmer on low for 2-3 min. Remove from heat and cool to room temperature.

Perfectly Splendid Hojuelas with Piloncillo. Mix, fried and eat!
This dessert is a magical cloud of crunchy deliciousness!!!
Ingredients:
2 cups of all purpose flour
1 spoon of shortening ( I’m using Cristco )
1 spoon of sugar
1 egg
1 cup of water
Vanilla
Salt
Tons of oil (Canola, Avocado or Vegetable oil)
Instructions:
Mix all the ingredients together, except the water which you are going to add gradually to the dough until you get a soft and firm consistency.
Divide your dough in eight pieces and with the help of your roll make discs with them.
Fried them in abundant oil for about two or three minutes each side of the hojuela until they are crunchy and fried.
Serve with the honey.
Instructions for the honey:
One Piloncillo or Unrefined Brown Sugar
Cinnamon Sticks
All Spice
Whole Cloves
Half a cup of water
In a cooking pot put all the ingredients and with a medium low heat dissolve them until they are totally combined and you have gotten a liquid consistency.
Remove the cinnamon sticks, the all spice and the whole cloves ( I just removed the cinnamon sticks because I prefer to have the rest of the ingredients and feel them when I’m eating the Hojuelas)
Pour the honey in every Hojuela.
Enjoy!

Ingredients for the Buñuelos / Fritters
2 cups flour
1 tsp baking powder
3 tbs sugar
½ tsp cinnamon
¼ tsp salt
1 tsp vanilla
3 tbs soft butter (not melted)
1 egg
⅓ cup milk or (more if dough is too dry)
*you can also use water instead of milk
Ingredients for the syrup / Miel
1 ½ cups water (hot)
1 lb Piloncillo ( mexican brown sugar)
1 small cinnamon stick
4 whole cloves
5 allspice berries
1 star anise
1 oranges peel
Piloncillo is a raw form of pure cane sugar that is commonly used in Mexican cooking and is sometimes referred to as Mexican brown sugar. This type of sugar has not been processed, leaving it with a golden brown color and a deliciously rich flavor similar to molasses, although it does not have any molasses in it

I've been thinking about these Buñuelos since April! These are so good! Buñuelos are basically fried flour tortillas, either covered in cinnamon sugar or dipped in a piloncillo, or sugar cane, syrup, like this! This is another Mexican staple around Christmastime and surprisingly easy to make!

Mexican Buñuelos
Mexican Buñuelos are made of thin fried dough sprinkled with cinnamon and sugar. Serve with a cup of warm syrup for dipping for a fun treat the entire family will enjoy!
Ingredients:
2 cups all purpose flour
1 tablespoon sugar
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
¾ cup warm water
2 tablespoon avocado oil, or vegetable oil
½ cup all purpose flour, (for rolling out dough)
vegetable oil, for frying
½ cup sugar
1 tablespoon ground cinnamon
PILONCILLO SYRUP
3 cups warm water
1 piloncillo cone, dark brown
1 cinnamon stick
1 clove
1 teaspoon vanilla
Directions:

0:05 Add flour, sugar, baking powder, salt and cinnamon to bowl of stand mixer with dough hook
0:10 mix together
0:14 combine warm water and avocado oil and pour into dry ingredients
0:18 mix together until dough forms
0:22 remove dough to a clean work surface sprinkled with flour, and hand knead the dough for 1-2 mins until no longer sticky, add flour as needed
0:26 cover and let rest for 30 minutes
0:29 divide the dough into portions that are 40-45 grams each (approx 13)
0:34 pinch and roll dough into small balls
0:36 cover and rest for another 20 minutes
0:37 in a small saucepan combine the water, piloncillo, cinnamon stick, clove, and vanilla, bring to a simmer
0:53 in a small bowl combine the 1/2 cup sugar and 1 tbsp cinnamon, set aside
0:56 dip the dough balls into flour and flatten out with finger, and then roll out into a 6 inch circle.
1:03 working one at a time fry the dough in hot oil, spooning hot oil over the top while it fries to give the bubbly appearance.
1:13 after frying, sprinkle with cinnamon sugar
1:20 serve with syrup
