I've been thinking about these Buñuelos since April! These are so good! Buñuelos are basically fried flour tortillas, either covered in cinnamon sugar or dipped in a piloncillo, or sugar cane, syrup, like this! This is another Mexican staple around Christmastime and surprisingly easy to make!

INGREDIENTS:
TORTILLAS:
½ cup warm water
½ teaspoon baking powder
½ teaspoon salt
2 cups flour
1 tablespoon butter
2 tablespoons sugar
1 egg
½ teaspoon ground cinnamon
SYRUP:
½ cup sugar
1 stick cinnamon
2 piloncillo/sugar cane/jaggery cones
2 cups water

MAKES: 12 tamales
INGREDIENTS:
4 large ears of corn or 4 cups corn kernels, ends trimmed, leave husk on
4 cups (400g) masa harina (such as Bob’s Red Mill), preferably blue
¾ cup (170g) browned butter, still liquid
¾ cup granulated sugar
2 ½ teaspoons Diamond Crystal or 1 ½ teaspoons Morton (8g) kosher salt, plus more to taste
1 teaspoon cinnamon
½ teaspoon crushed chile de árbol, plus more to taste
1 cup piloncillo or dark brown sugar
1 teaspoon whole allspice
1 3” stick canela or cinnamon
4 wide strips of orange zest
1 cup crema or crème fraiche
¾ cup queso fresco, crumbled

Perfectly Splendid Hojuelas with Piloncillo. Mix, fried and eat!
This dessert is a magical cloud of crunchy deliciousness!!!
Ingredients:
2 cups of all purpose flour
1 spoon of shortening ( I’m using Cristco )
1 spoon of sugar
1 egg
1 cup of water
Vanilla
Salt
Tons of oil (Canola, Avocado or Vegetable oil)
Instructions:
Mix all the ingredients together, except the water which you are going to add gradually to the dough until you get a soft and firm consistency.
Divide your dough in eight pieces and with the help of your roll make discs with them.
Fried them in abundant oil for about two or three minutes each side of the hojuela until they are crunchy and fried.
Serve with the honey.
Instructions for the honey:
One Piloncillo or Unrefined Brown Sugar
Cinnamon Sticks
All Spice
Whole Cloves
Half a cup of water
In a cooking pot put all the ingredients and with a medium low heat dissolve them until they are totally combined and you have gotten a liquid consistency.
Remove the cinnamon sticks, the all spice and the whole cloves ( I just removed the cinnamon sticks because I prefer to have the rest of the ingredients and feel them when I’m eating the Hojuelas)
Pour the honey in every Hojuela.
Enjoy!

Piloncillo is simply sugar cane juice reduced to a thick, crystallized syrup that is formed into a cone-shaped mold and dried.

TIP! Enjoy with piloncillo syrup
On medium heat , Boil 2 cups water with 1 piloncillo, 2 cinnamon stick, 1 star anise, and 2 guayabas cut into 4, once the piloncillo has devolved, begin to smash down the guayabas, then add the peel of 1 orange, allow the water to turn into syrup,(about 10 minutes keep an eye on it!!! ) strain and enjoy!!!
FOR CINNAMON SUGAR
Mix 1 cup sugar and 1 tbsp ground cinnamon
???? DO NOT ADD ANY MORE FLOUR

Ingredients: make 12 large buñuelos or 16 small ones
3 1/2 cups all purpose flour
1 1/2 tsp baking powder
1 1/2 tsp sugar
3/4 tsp salt
1/2 cup shortening or butter
2 tbsp mexican vanilla blend or vanilla extract
1 egg at room temperature
1 cup and 1 tbsp room temperature mexican orange soda or you can use water or milk
1 cup sugar mix with 1 tbsp ground cinnamon
Oil for frying
