How To make Spicy Corn Ragout
2 tb Chicken broth
1 Garlic clove; minced
1/2 Red onion; diced
1 Red bell pepper; diced
2 tb Jalapeno peppers; chopped
2 c Frozen corn
1/2 c Chicken broth
10 oz Spinach; trimmed and chopped
1/4 ts Pepper
1/3 c Fresh basil; chopped
Heat oil in large, deep skillet or Dutch oven. Add garlic and onion. Cook gently until tender and fragrant, but do not brown. Add red peppers, and jalapenos. Cook for 5 to 10 minutes. Stir in corn and mix together well. Add stock and bring to a boil. Cook gently for 5 minutes. Stir in spinach and cook for 5 minutes longer, just until wilted. Add pepper, salt, if desired and basil. Taste and adjust seasonings, if necessary. NOTES : Original recipe calls for 1 teaspoon of olive oil for frying the garlic and onion. I substituted the chicken broth.

Spicy Sausage Stew Recipe
Ingredients For preparing Chicken Broth:
6 Cups water to prepare chicken broth
3 packets of chicken bullion powder
Other Ingredients:
3 tbsp cooking/veg. oil
5 spicy Italian sausage links
2 onions - chopped
4 celery stalks - diced
1 green bell pepper - diced
2 tomatoes - diced
3 corn on cob - cut into 6 pieces
3 white potatoes - cut into large pieces with skin on
3 tbsp unsalted butter
3 tbsp all purpose flour
5 to 6 garlic cloves - minced
1 tsp red chili powder
1 tbsp dry basil, oregano & thyme
1/2 cup freshly chopped parsley
salt & crushed black pepper to taste
Method:
Prepare chicken broth by add chicken bullion to water. Simmer for 15 mins
In a large Dutch oven or non stick pot add cooking/veg. oil
Once oil is hot reduce heat to medium, add spicy Italian sausage links
Sear and cook sausage until brown and cooked on all sides/10 minutes
Remove cooked sausage from Dutch oven, set aside
Next add onion, celery & bell pepper. Mix well and saute for 2 minutes
Remove veggies once done & set aside
Now add butter and flour to make roux. Saute for 2 mins until roux is done
Add chicken stock. Mix well then add tomatoes
Add red chili powder, salt & crushed black pepper
Mix well then add sauted veggies & sausage back to pot
Finally add corn on the cob, potato slices and half the fresh parsley
Cover and simmer on low for 1 hour
Open lid, adjust seasoning if necessary
Transfer to serving bowl and garnish with remaining fresh parsley
Wallah! Your delicious Spicy Sausage, Corn & Potato Stew is ready!

Ingredients:
1 cup oil (plus 3 tbsp)
2 sliced medium onions
blend: 3 scotch bonnets, 1 thumb size ginger, 4 garlic cloves with 1/2 cup water
100gr tomato puree or about 3-4 tbsp full
3 cans tomato plums (or use fresh tomatoes)
2 cans corned beef or 680gr
salt to taste
beef seasoning ( or seasoning of choice)
