How To make Spicy Corn Pancakes
2 c Whole wheat flour
1 t Salt
1 t Baking powder
2 c Corn kernels, fresh or
Frozen 2 Chipotle chili peppers,
Diced 2 Cloves garlic, minced
4 Scallions, diced
1 c Lowfat soy milk
These delicious pancakes make a terrific dinner when served with a bottled salsa for topping. I use chipotle chili peppers that are canned in adobo sauce, but you can also use dried chipotles. Let the dried peppers soak in warm water for several minutes before you dice them. Mix whole wheat flour with salt and baking powder. In a separate bowl, mix corn, chipotles, garlic, scallions, and soy milk. Gently blend wet ingredients with dry until well mixed. Spray skillet with vegetable cooking spray and preheat until it is moderately hot. For each pancake, use about 1/4 cup batter. Cook 3 minutes on each side or until golden brown.

Easy snacks for everyone
1 can of corn with 1 egg and your kids will be asking for this snack everyday

Ingredients and recipe:
Pour 1 can of corn in a colander
Crack 1 egg in the corn
Salt and black pepper
Add 1/3cup corn starch
Mix well
Pour olive oil in the pan
Add the corn mixture to the pan
Sprinkle 30g mozzarella cheese
Fry for 5 minutes on medium-low heat
Sprinkle green onion on top
Done!

Spicy Sweet Corn Pancakes on the Grill, Teppanyaki Style
How about some Spicy Sweet Corn Pancakes on the Grill Teppanyaki style? Teppanyaki style grilling is perfect for the Arteflame. The flat cooktop has lots of space and no food will fall through grill rates any more. Problem solved!
Here was the recipe for Spicy Sweet Corn pancakes on the Arteflame grill, Teppanyaki style!
Ingredients:
Prepared pancake batter
1/4 cup sweet corn
2 sweet peppers
Red onion chopped
Poppy seed or ranch dressing
Fresh cilantro
Sriracha sauce
Mozzarella cheese grated
salt and pepper
Directions:
Get your Arteflame grill or your Arteflame grill insert to grilling temperature. When the temperature reaches between 400 and 450 you’re ready to go
Pour pancake batter directly onto the grill to make two four inch pancakes or blinis. Place sweet corn, peppers and red onion onto grill to charr.
When pancakes start to bubble, turn over and cook other side. Add salt, pepper and any desired spice seasoning to pancakes.
When pancakes are done place all ingredients on top. Layer with sriracha sauce, dressing and fresh cilantro.
Enjoy!
