How To make Spiced Oatmeal Cookies
8 oz Wholewheat flour
3 oz Oatmeal
3 oz Bran
5 oz Brown sugar
1/2 ts Ginger
1/2 ts Allspice
4 oz Vegetable margarine
1/4 pt Cold water
Preheat oven to 350F. Grease some cookie sheets. Set aside. Mix together the flour, oatmeal, bran, sugar & spices in a bowl. Rub in the margarine until the mixture resembles coarse breadcrumbs. Add enough water to make a stiff dough. Roll out the dough on a floured board to a thickness of 1/2". Cut into rounds, 2" to 3" across. Place on baking sheets. Bake for 25 minutes. Lift carefully onto a wire rack to cool.

Ingredients:
1 1/2 Cups Old Fashion Oats
1/2 Cup Almond Flour
1/4 Cup Chopped Walnuts
1/2 Cup Brown Sugar
1/4 Cup White Sugar
1/2 Cup Raisins
3 Teaspoons Chia Seeds
3/4 Cup Butter (Room temperature)
1 Egg
1/2 Teaspoon Salt
1/4 Teaspoon Backing Soda
1/4 Teaspoon Pumpkin Pie Spice
1/2 Teaspoon Cinnamon
Instructions:
1.) Preheat oven to 325 Degrees
2.) Creme together butter and both sugars...add vanilla and egg and creme again.
3.) Add the rest of the dry ingredients and mix till blended.
4.) Place by spoonfuls on a baking sheet.
5.) Bake for 15 minutes
6.) Enjoy!

The dough can be portioned and frozen for up to 3 months, making this an easy make ahead cookie recipe as well!
Chewy oatmeal cookies recipe
Ingredients:
3/4 cup all purpose flour 98g
1/2 teaspoon baking soda 2g
1/4 teaspoon fine sea salt 1.5g
1 teaspoon cinnamon 2.5g
1/2 teaspoon ground ginger 1.5g
1/2 teaspoon allspice 1.5g
1/4 teaspoon nutmeg .75g
1/2 cup softened salted butter 113g
1/2 cup packed brown sugar (light or dark) 90g
1 large room temperature egg 50-60g
1 teaspoon vanilla extract 4g
1 tablespoon molasses 17g
1 + 1/2 cup large flake oats (or old fashioned oats) 135g
* Add in 3/4 cup raisins, chocolate chips or nuts if you would like!*
Directions:
In a medium bowl combine flour, baking soda, salt and spices. Whisk until well combined and set aside. In a large bowl combine softened butter and sugar. Cream on medium low for 1-2 minutes or until smooth. Scrape down the bowl and add the egg, vanilla and molasses. Continue mixing on medium low for another 1-2 minutes or until everything is well combined and the mixture is light and airy. Add in the dry ingredients and mix until no streaks of flour remain. Add in the oats (raisins/nuts/chips if using) and using a spatula mix until evenly distributed. Cover and chill the dough for one hour.
Preheat your oven to 350F/175C. Line two cookie sheets with parchment paper. Using a 1.5 tablespoon cookie scoop drop your cookies onto the prepared pans ensuring that you leave room for spreading. Bake for 7-8 minutes, removing from the oven as soon as the bottoms are golden brown. Allow them to cool on the pan for a couple minutes and then move to a wire rack to finish cooling completely.
This recipe makes 16-18 oatmeal cookies. If you add raisins, nuts or chocolate chips you will have 18-22 cookies. These oatmeal cookies can be stored at room temperature for up to 4 days.
