Rico Soul Italia Eats Famous Crab Cake Recipe & Instructions:
Ingredients
——————-
Jumbo Lump Crab Meat: 1 Can (16oz)
Italian BreadCrumbs: 1.7oz
Crab Seasoning: 2 Teaspoons
Parsley: 1 Tablespoon
Mayonnaise: 1 Tablespoon
Golden’s Spicy Brown Mustard: 1 Tablespoon
Pecorino Romano: 1 Tablespoon
Garlic Powder: 1/4 Teaspoon
Worchester Sauce: 2 Teaspoons
Lemon Juice: 2 Teaspoons
Eggs: 1 1/2 Per Pound Of Crab Meat
Instructions
——————-
1.) Add 1.7 ounces of seasoned bread crumbs to a bowl per pound of crab meat. (You can also substitute a half a sleeve of Ritz crackers crushed per pound of crab meat.)
2.) Add 2 teaspoons of Maryland Style Crab Seasoning per pound of crab meat. (Can use Old Bay seasoning or J.O. Crab ???? Seasoning.)
3.) Add 1 tablespoon of fresh chopped parsley per pound of crab meat. (Can use parsley flake if you don’t have fresh parsley.)
4.) Add 1 tablespoon of Hellmann's real mayonnaise per pound of crab meat.
5.) Add 1 tablespoon of Gulde’s Spicy Brown Mustard per pound of crab meat.
6.) 2 Teaspoons of Worchester sauce per pound of crab meat.
7.) 2 Teaspoons of lemon juice per pound of crab meat.
8.) 1 1/2 To 2 eggs per pound of crab meat.
9) Add 1/4 Teaspoon Of Garlic Powder.
10.) 1 Tablespoon of Pecorino Romano Cheese per pound of Crab ???? Meat
11.) Mix ingredients into a paste.
12a.) Add Colossal, Jumbo or Super Lump Crab Meat, Whatever Of These 3 sizes you are using & adding little by little to the bowl with the paste that you’ve just made. Then fold Crabmeat in very gently until all incorporated. Start shaping Crab Cakes Into 4 equal parts. Don’t Press In To Hard While Shaping, You Don’t Want Crab Cake To Be Compact, You Want To Press In Just Enough So Crab Cake Doesn’t Fall Apart!
12b.) If using Lump Crabmeat or Smaller, separate lump crabmeat, bigger lumps (top & bottom) from smaller pieces found in the middle. (I Recommend To Only use Colossal, Jumbo Lump or Super Lump Crabmeat For This Recipe.) If using Lump Crabmeat or smaller Mix smaller crabmeat first touching all meet with paste. Make sure it's folded instead of mixed! Then shape into 4 ball Crab ???? Cakes for every pound of Crab meat. Once shaped into Crab ???? Cakes add bigger lumps, dividing into 4 equal parts so that all four Crab Cakes get Equal amounts of the bigger lump Crab meat on them. Strategically place bigger lump Crab meat on the outside of the already formed Crab ???? Cakes, touching all crabmeat to the ball.
13.) When done shaping mixture into crab cakes, apply egg wash with a brush to Crab ???? Cakes and put onto cookie sheet or hard plate and refrigerate for at least one hour before crab cakes are put in the oven. (Applying Egg Wash Is Optional.)
14.) After having the Crab ???? Cakes in the fridge for a minimum of 1 hour, pre-heat oven for 10 minutes with the broiler on high. 10 minutes later, remove Crab ???? Cakes from fridge and put on a baking tray. (I prefer to use parchment paper on baking tray, but if you don’t have parchment paper do not use a non stick pan because these type of pans do not regulate heat evenly and the bottom of your Crab ???? Cakes will burn)
15.) After the oven has been preheated for 10 minutes, place Crab ???? Cakes in the oven on the middle rack under the broiler on the high. Leave crab cakes under the broiler for 2 minutes 30 seconds, then turn 180 degrees for another 2 minutes & 30 Seconds.
16.) Take Crab Cakes Out of the oven, turn oven to 375f degrees. While the oven is heating to reach 375f degrees start brushing Crab Cakes with Melted Butter, just enough to cover all of the Crab Cakes.
17.) Then Place Crab Cakes Into The Oven bake for 3 minutes at 375f degrees, then turn Crab ???? Cakes 180 degrees & bake for another 3 minutes at 375 degrees. Then take out of the oven, and brush with melted butter again until all Crab Cakes are covered by butter. Then add a few drizzles of lemon ???? juice as well. (It also could be some type of garlic butter or garlic oil is optional.)
18.) Sprinkle just a tad of J.O. Crab ???? Seasoning, or any other Maryland Style Seasoning very lightly.
19) Garnish Crab Cakes with a little fresh chopped parsley, Let cool for five minutes and serve. (Adding more butter is optional as well.) Bon Appetite and enjoy your Crab Cakes!

Crab Alfredo Pasta & Crab Cakes | Seafood Pasta | Fusion Cooking | Stuffed Bread Bun | Cheese Pasta
Hi all,
Welcome to my channel!
When you can’t go to the ocean, let’s bring tropical delicacy on the table! What can be more delicate & sweet than crabmeat:D Plated in 2 ways & featuring 2 popular recipes in one….Presenting Crab Alfredo Pasta with Crab Cakes! Make an appetizer or main course….I leave that upto you:)
Rich, buttery & creamy sauce paired with the velvety texture of crabmeat cooked with pasta is a simple & elegant dish that looks luxurious & tastes fancy but comes together in a snap! To make it more irresistible, I have added crab cakes as I am having a major crab moment!
INGREDIENTS FOR CRAB MIX:-
Ground Mustard Paste- 1.5tbsp
Bellpepper 1cup 1/4/164gms
Onion .22lb/100 gms
Lemon 2 tsp
Celery 1 stalk
Cilantro 2 tbsp
Worcestershire Sauce-1.5 tbsp
Fish Seasoning-1.5 tbsp
Sea/Table Salt-1/2 tbsp
Cajun Seasoning Mix-1.5 tbsp
Crab Meat-9 oz/240gms
Cayenne Pepper -1 tsp
Egg (beaten)-1/2
Honey -1 tsp (optional)
Bread Crumbs-4 tbsp
Mayonnaise -4 tbsp
INGREDIENTS FOR PASTA SAUCE:-
Penne Pasta -1/2 lb/227gms
Pepper Powder-1 tbsp
Flour-1.5 tbsp
Sea/Table Salt-1/2 tsp
Butter-1.5 tbsp
Onion-1.25oz/35gms
Chicken Stock-1/2cup/100ml
Parmesan + Smoked Mozzarella- 3 tbsp + 3
Milk-1/2 cup/100 ml
Garlic 1 clove
Garlic Powder 1/2 tsp
Garam Masala 1/2 tsp
Cilantro/Coriander 2 tbsp
This extra step of seasoning crab meat with an array of spices & sautéed veggies not only adds a complex layer of flavor & texture; it also sets the base ready for the crab cakes that make the dish crabful! The best part is that you can use the same mixture to make the crab sauce!
Add salt & pepper. Adjust the seasonings as per your taste.
Please don’t use imitation crab meat! Fresh crabmeat is your best bait! If it is not available, then canned ones are good too!
Use bread crumbs to absorb the excess moisture & act as an ideal binder.
Please remember that the crabmeat is the star of the show. To maintain its predominant flavor, it is important that the ratio of crabmeat and other non-crab ingredients is proportionate.
Refrigerate a portion of the crab mixture if you plan to make crab cakes. This will ensure that the spices marry with each other & shapes well before frying. I have elaborated the cooking process in Step IV, i.e., in the latter part of the vodeo!
In French cooking, Béchamel (/ˌbeɪʃəˈmɛl/ French: [beʃamɛl]) is a sauce traditionally made from a white roux (butter and flour) and milk is also known as white sauce. It is the mother/base of many sauces! I have spiked up the flavor by adding spices like garlic powder & garam masala for more depth & character.
I have used cheese moderately! If you are adding parmesan, adjust the salt level accordingly as parmesan has a high sodium content.
I have used milk instead of heavy cream to make the sauce lighter & a little guilt-free. Please feel free to add heavy cream if you want!
Starchy & salty pasta water not only thickens the sauce but it also makes it silky & acts as glue and helps the sauce adhere to the pasta.
Cook the pasta according to the packet instructions. Please ensure that the boiling water to cook it is as salty as the sea!
Don't let the pasta sit too long or it will stick together. Douse in sauce immediately.
Don’t add oil/rinse strained pasta as it prevents the sauce and pasta from harmoniously mixing together.
You can use any crusty bread loaf that you want. Spray/brush it with olive oil before placing in the oven.
Pan-frying or searing the crab patties/discs in a hot pan with neutral oil gives a crunchy golden crust that we all love so much!
For better health choices, you can bake in preheated oven at 375F for 10 minutes, then turn the crab cakes over, and bake for an additional 10 minutes, until nicely browned.
