The Best Spaghetti Squash Bolognese Recipe | Spaghetti Squash Gluten Free
This wonderful and easy Spaghetti Squash recipe is gluten free. The recipe makes more bolognese sauce than you'll need so throw the extra in containers and freeze for a busy/lazy dinner!
INGREDIENTS
• 1 large spaghetti squash, cut in half lengthwise and seeds removed
• 2 tsp olive oil
Bolognese sauce
• (This sauce recipe makes more than you’ll need for a single spaghetti squash. Freeze extra sauce and defrost for an easy dinner on a busy/lazy night.)
• 1 lb ground beef
• 1 lb ground Italian sausage
• 1 medium carrot, coarsely chopped
• 2 celery stalks, coarsely chopped
• ½ medium onion, coarsely chopped
• 5-8 garlic cloves, crushed
• 1 tbsp olive oil
• 2 tbsp butter
• 2 tbsp tomato paste
• 28 oz canned crushed tomatoes
• 28 oz canned petite diced tomatoes
• Salt & pepper to taste
• 1 tsp dried oregano
Other
• 8 oz mozzarella cheese, shredded
• 2 tbsp pecorino romano cheese, grated
• 2 tbsp parmesan cheese, grated
• Fresh basil leaves (for garnish)
DIRECTIONS
1. Preheat oven to 400F.
2. Cut spaghetti squash in half lengthwise and rub inside flesh with olive oil. Place cut side down on a baking sheet and bake for 45 minutes. Remove from oven and let cool as is on the baking sheet for at least 10 minutes before handling.
3. In a food processor, put onions, carrots, celery, and garlic and process until finely chopped and set aside.
4. Heat a large sauté pan or sauce pot over medium high heat and add ground beef and ground sausage. As the meat is cooking, break it up into a fine crumble consistency and let brown a little for 1-2 minutes after fully broken up.
5. Add processed vegetable to meat and mix well. Cook for 2-5 minutes or until very soft and fragrant. Season with salt and pepper. Add butter and mix well until melted.
6. Add tomato paste and mix until well incorporated. Cook for 1-2 minutes.
7. Reduce heat to low and add crushed and diced canned tomatoes. Season again with salt and pepper, add oregano, cover and simmer for 20-30 minutes.
8. After squash has cooled, scrape flesh out into a large mixing bowl and add about 1 cup of Bolognese sauce and mix a little. Be careful when scrapping out the squash flesh to not damage the outer shell.
9. Add mixed sauce and squash back into the outer shells and top with pecorino romano cheese, parmesan cheese and shredded mozzarella. Spray with olive oil and bake in oven for about 20 min or until cheese is fully melted and beginning to brown.
10. Remove from oven and transfer to serving platter. Garnish with hand torn fresh basil leaves.

Spaghetti Squash Cheese Casserole Recipe
Ingredients:
½ head of cauliflower, organic, cut into florets
2 cups sharp cheddar cheese, grated
½ cup whole milk
½ large onion, chopped
4 -5 garlic cloves, minced
5 - 6 slices bacon, cooked and chopped
½ tsp. Paprika
1 - 2 Tbsp. maple syrup
½ tsp salt
1 tsp. Olive oil
1 spaghetti squash, about 3 lbs.
1 ½ cup of broccoli florets, organic
6 large leaves of basil, chopped
2Tbsp. Parmesan cheese, grated
Pinch of salt
Directions:
Preheat oven to 425 degrees F.
Poke several holes in the squash with a fork and then place in the microwave on high for 4 to 5 minutes. Let it cool for 5 minutes and then cut the squash in half and then cut each half into 3rds making a total of 4 rings and the two ends.
Coat the squash with olive oil using your hands. Place the squash on a parchment paper covered baking sheet and roast in the oven for 45 - 55 min or until golden brown and slightly tender. Take out and let cool.
While the squash is roasting, you have time to prep the other ingredients. Cook the bacon and save the grease. Once the bacon is done, chop it into bite-size pieces and set it aside.
Grate the cheese and set that aside. To make the garlic sauce, steam the cauliflower until it is fork tender. At the same time, heat up the pan you cooked the bacon in and pour out all but 1 Tbsp. of bacon grease. Add one tsp of olive oil and once the oil is hot, add the onion. Saute the onion for 10 minutes and then place the onion and steamed cauliflower in a blender.
Add paprika, salt, milk and the maple syrup and blend until smooth.
Steam the broccoli until it is fork tender and set aside. Now it’s time to remove the spaghetti squash from its shell. Use a fork to scrape the squash and separate it. Place the squash into an 8 x 8 baking dish.
Layer in the bacon, chopped basil, cheese and about ½ cup of the garlic sauce. Stir to combine and then repeat the layer. Stir well with each layer and mix it until the sauce is coating everything.
Then add the broccoli on top and try to nestle it into the squash mixture. Finish with a bit more cheese and then the parmesan cheese.
Bake in a 350 degree oven for 20 minutes or until everything is hot and the cheese has melted.

Best Spaghetti Squash Made Easy Ingredients
1 SPAGHETTI SQUASH
GARLIC (5-10 cloves, finely chopped)
LEMON zest and juice
BUTTER (1-2 Tbsp)
OLIVE OIL (¼ cup)
PARSLEY (½ cup, chopped)
SALT and PEPPER to taste
The measurements above are just loose suggestions, and really need to be adjusted to your own tastes. The size of
the spaghetti squash and how much squash you dig out will determine how much of the other ingredients you need;
They are simple and fresh ingredients, so there really is no wrong way to make this dish.
The best spaghetti squash doesn't get more super simple than that!
Best Spaghetti Squash ...super simple, low fat, low carb recipe
When buying a spaghetti squash, choose one that seems heavy for its size.
carefully slice the squash into halves. Cut the squash across instead of lengthwise, this will make for longer noodles.
Place cut sides down in shallow water in a roasting pan.
Bake for about 30-45 minutes at 350 degrees Fahrenheit. You can check on the squash after 30 minutes; the cooking time will vary
according to the size of the squash.
It's important not to overcook the squash, slightly crunchy strands of squash add great texture to a dish, and overcooking the squash will
make the ingredient mushy.
Remove squash from the oven and carefully turn halves over to check for doneness --the water will be hot and steam will be trapped under
the squash, so be cautious.
Allow squash to sit 5-10 minutes to cool slightly for easier handling.
Insert a fork and twist out strands of spaghetti. Once the fork has done its job, use a spoon to scrape out the remaining squash; it's edible
all the way to the rind,
so don't waste any!
Heat a skillet and melt cooking oil on medium heat.
Add finely chopped garlic and cook 1-2 minutes until it begins to color up. If you like a bit of heat with your dish, add some red pepper flakes
as well.
Add a bit of butter for extra flavor (this is optional).
Add the spaghetti squash to the skillet and mix with the garlic.
Add salt and pepper to taste, add lemon zest and juice, and stir.
Turn off the heat and add in a bit of dark, flavorful olive oil.
You can also stir in a bit of freshly grated Parmesan Cheese if desire, but this is optional.
Add fresh chopped parsley for bright flavor and color, and mix well.
And that's it.
This recipe makes a nice side dish or a very healthy entree.
