1 Spaghetti squash
The flesh of spaghetti squash, when cooked, comes out like strands of cooked spaghetti and makes a great light stand-in for pasta lovers. Prepare squash by cutting in half lengthwise and removing seeds. Pierce skin several times with a fork and follow one of the cooking methods below. To bake, prepare squash, and place, cut side down, in a large baking pan. Bake at 350 oF for 45 minutes or until skin is tender and strands may be loosened easily with a fork. To microwave, prepare squash, and place, cut side down, in a baking dish. Add 1/4 cup water; cover with plastic wrap, folding back a small edge of wrap to allow steam to escape. Cook on HIGH 7 to 10 minutes. To boil, prepare squash, and place, cut side down, in a Dutch oven, add water to a depth of 2 inches. Bring to a boil; cover, reduce heat, and simmer 20 to 25 minutes or until tender. Drain. Cool cooked squash. Using a fork, remove spaghetti-like strands of pulp. Discard shell. Yield: 1 medium spaghetti squash equals about 4 cups cooked. June, 94 issue of Southern Living. Best Spaghetti Squash Made Easy Ingredients
1 SPAGHETTI SQUASH
GARLIC (5-10 cloves, finely chopped)
LEMON zest and juice
BUTTER (1-2 Tbsp)
OLIVE OIL (¼ cup)
PARSLEY (½ cup, chopped)
SALT and PEPPER to taste
The measurements above are just loose suggestions, and really need to be adjusted to your own tastes. The size of
the spaghetti squash and how much squash you dig out will determine how much of the other ingredients you need;
They are simple and fresh ingredients, so there really is no wrong way to make this dish.
The best spaghetti squash doesn't get more super simple than that!
Best Spaghetti Squash ...super simple, low fat, low carb recipe
When buying a spaghetti squash, choose one that seems heavy for its size.
carefully slice the squash into halves. Cut the squash across instead of lengthwise, this will make for longer noodles.
Place cut sides down in shallow water in a roasting pan.
Bake for about 30-45 minutes at 350 degrees Fahrenheit. You can check on the squash after 30 minutes; the cooking time will vary
according to the size of the squash.
It's important not to overcook the squash, slightly crunchy strands of squash add great texture to a dish, and overcooking the squash will
make the ingredient mushy.
Remove squash from the oven and carefully turn halves over to check for doneness --the water will be hot and steam will be trapped under
the squash, so be cautious.
Allow squash to sit 5-10 minutes to cool slightly for easier handling.
Insert a fork and twist out strands of spaghetti. Once the fork has done its job, use a spoon to scrape out the remaining squash; it's edible
all the way to the rind,
so don't waste any!
Heat a skillet and melt cooking oil on medium heat.
Add finely chopped garlic and cook 1-2 minutes until it begins to color up. If you like a bit of heat with your dish, add some red pepper flakes
as well.
Add a bit of butter for extra flavor (this is optional).
Add the spaghetti squash to the skillet and mix with the garlic.
Add salt and pepper to taste, add lemon zest and juice, and stir.
Turn off the heat and add in a bit of dark, flavorful olive oil.
You can also stir in a bit of freshly grated Parmesan Cheese if desire, but this is optional.
Add fresh chopped parsley for bright flavor and color, and mix well.
And that's it.
This recipe makes a nice side dish or a very healthy entree.

The BEST Way to Cook Spaghetti Squash | Long Strands & Not Watery!
Learn How to Cook Spaghetti Squash by baking it in the oven until it shreds easily into noodles with a fork! This quick method is a foolproof way to prepare squash so it turns out perfectly roasted and caramelized. Serve it as a vegetarian and vegan side dish or replace pasta with it for a keto or low-carb dinner!
Baking Sheet:
INGREDIENTS:
1 4-lb. spaghetti squash, medium to large
2 Tbsp. oil olive, or avocado
½ tsp. sal,t to taste
¼ tsp. black pepper, to taste
INSTRUCTIONS:
Preheat oven to 425 °F.
Cut spaghetti squash in half lengthwise.*
Scoop out and remove seeds using a large spoon with a relatively sharp edge.
Rub 1 tablespoon olive oil over the inside of each half and sprinkle both with ¼ tsp. Salt and ⅛ teaspoon of black pepper.
Line a large baking sheet with parchment paper and place spaghetti squash halves face side down.
Bake in preheated oven for 40-50 minutes, or until the edges begin to caramelize and turn brown and the insides are cooked through.
Shred the spaghetti squash by placing a large fork into the flesh at the stem end and pulling towards the opposite end. Repeat this process until the entire squash has been turned into “noodles”.
Serve as a Lasagna Stuffed Spaghetti Squash or with a Carbonara Sauce and enjoy!
RECIPE NOTES:
Serving size if for 1 cup of shredded spaghetti squash.
If you have a difficult time getting your knife to cut through, try microwaving the squash for a minute or two to soften the skin.
