How To make Sourdough Pecan Waffles
-HJDD64B In a large mixing bowl measure out 2 c. sourdough starter. Add 2 eggs, beaten, 1/2 c cooking oil, 1/2 c milk, and beat well. In separate bowl, mix together 1/2 c all purpose flour, 2 tsp baking powder, 1/2 tsp salt, 1/4 tsp baking soda,1 tsp grated orange peel and 1 tbsp
sugar. Add all at once to starter mixture. Beat just till blended. Spread batter on lightly greased, preheated waffle grids. Sprinkle with 1/3 c. pecans. (I just mix them into the batter) Cook for 5 to 6 minutes. -----

Hello Friends! It's that time of year where we are all thinking about pumpkin treats! I wanted to share one of my favorite pumpkin sourdough recipes- Sourdough Pumpkin Pancakes! This recipe is perfect for using up your discard, and it's a one day recipe because there is no additional flour. It's so easy and you can have fresh fluffy pancakes in just 20 minutes. I like to put pecans in mine, you could put any kind of nut or even chocolate chips to make them just the way you like them!
Sourdough Pumpkin Pecan Pancakes
Ingredients
2 C Sourdough Discard
1 C Pumpkin Puree (or Orange Squash)
2 Tbsp Oil
2 Tbsp Maple Syrup
1 Tsp Vanilla
2 Eggs
1 - 2 Tsp Pumpkin Pie Spice
1/2 Tsp Salt
1/2 Tsp Baking Soda
Instructions
1. Add starter and pumpkin puree to a large bowl. Stir until incorporated. Add oil, maple syrup, and vanilla and stir until incorporated. Add the eggs and beat them in until they are completely incorporated. Lastly, add pumpkin pie spice, salt, and baking soda and mix until it's consistent. At this point you can add whatever additions you would like.
2. Heat a cast iron pan or griddle to medium heat. Pour batter onto heated surface and cook until golden brown on both sides.

These bacon pecan waffles are the ultimate comfort food for breakfast or any time of day. They are super airy, mega flavorful and the absolute best because they are homemade.
For This Recipe:
1 pack of bacon cut into 1 pieces
3/4 cup whole pecans
3 cups all purpose flour
2 Tbsp baking powder
1/2 tsp pink Himalayan salt
2 Tbsp white sugar
2 cups lite coconut milk
1 cup water
1 tsp vanilla extract
4 Tbsp vegetable oil
1 sliced banana for topping (optional)
1. Warm a pan on medium heat and add the sliced bacon. Spread the bacon into an even layer and allow to cook until crispy, stirring occasionally.
2. While the bacon cooks, add the flour, baking powder, salt, and sugar to a bowl and stir to combine.
3. Break the pecans into small pieces by hand, add to the flour mixture and stir to combine.
4. Add the coconut milk, water, vanilla extract and oil to the flour mixture and stir to combine.
5. Set the batter aside.
6. When the bacon is crispy, remove it from the pan and place it on a plate lined with paper towels. Set aside to cool for 5 minutes.
7. When the bacon has cooled, add 2/3 to the waffle batter and stir to combine.
8. Warm up your waffle maker and add 1/2 cup to 2/3 cup of batter to the center of your waffle maker, close the lid and allow to cook. You may add more or less batter depending on the size of your waffle maker.
9. Continue until all of your waffles are cooked, then plate and serve with sliced bananas, pecan pieces, the reserved bacon and maple syrup.

Ingredients: 250-300 grams (approximately 2 cups) starter, one egg, 1/4 tsp salt, 1 tbsp olive oil. 1 tsp baking soda, 1 tsp water.
So easy and so tasty! You can eat these right out of the iron with just a little butter. We like to add real maple syrup, greek style yogurt, and blueberries. Chopped bananas and pecans are also added this morning.

Peach Waffles with Maple Cream Sauce Recipe
Start with
1 Cup of Sourdough Starter (fed or unfed)
Add
2 Cups of Flour
2 Tbsp of Sugar
1 Cup of Milk
1 Cup of Sour Cream
Mix together well
Let it sit for 6-12 Hours until it starts to bubble.
Mix in
4 Whipped Eggs
10 Tbsp of Melted Butter
Stir very Thoroughly
Mix in
2 tsp of Baking Powder
3/4 Tsp of Baking Soda
a Pinch of Salt
Mix in Very well
add
1 Tsp of Vanilla
1 Cup of Mashed Peaches
The waffles are ready to Cook!
Maple Cream Sauce
Start with
3 Cups of Heavy Whipping Cream
1 Cup of Pure Maple Syrup
Bring those to a Rolling Boil for 20-30 Minutes Stirring Periodically
