How To make Sourdough Belgian Waffles
SALLIE KRATZ:
1 3/4 c Flour sifted
2 ts Baking powder
1/2 ts Salt
2 tb Sugar
3 Eggs :
separated
1 c Sourdough starter
3/4 c Milk
6 tb Butter -- melted
Sift flour with baking powder, salt and sugar. Beat egg yolks, add butter, starter and milk. Stir into flour mixture. Beat egg whites till stiff peaks form and then fold into batter. Spoon into preheated Belgian waffle iron, either well buttered or teflon (I oil my teflon!) Bake about 5 minutes or until beautifully golden brown! Let me know if you try these. I guarantee you'll never make another waffle recipe again! There are NO calories in these...it's all the good stuff you put on top!!!<ggg> Love ya... How To make Sourdough Belgian Waffles's Videos
Overnight Sourdough Waffle (using sourdough discard)
OVERNIGHT SOURDOUGH WAFFLE
Yields 3
Ingredients:
1/2 cup (4 oz.) sourdough discard (or levain)
1 cup buttermilk (or milk)
1/2 tsp. vanilla extract
1 tbsp. sugar
1 cup whole wheat flour
--------------------------------------
1 egg
4 tbsp. unsalted butter, melted
1/2 tsp. salt
1/2 tsp. baking soda
Method:
Day 1 : Do this step the night before.
1. Combine sourdough discard, buttermilk, extract, sugar and flour. Stir until well blended. Cover and leave at room temperature overnight.
Day 2 :
2. Stir in egg, butter, salt and baking soda when you're ready to make the waffles.
3. Spray the waffle maker and make the waffles.
Note :
1. If you live in a very hot climate, leave the batter in the fridge instead of at room temperature. Then take the batter out at least 2 hours before you make the waffles.
2. If you don't have sourdough discard, you can use instant yeast by follow this recipe :
