-HJDD64B In a large mixing bowl measure out 2 c. sourdough starter. Add 2 eggs, beaten, 1/2 c cooking oil, 1/2 c milk, and beat well. In separate bowl, mix together 1/2 c all purpose flour, 2 tsp baking powder, 1/2 tsp salt, 1/4 tsp baking soda,1 tsp grated orange peel and 1 tbsp
sugar. Add all at once to starter mixture. Beat just till blended. Spread batter on lightly greased, preheated waffle grids. Sprinkle with 1/3 c. pecans. (I just mix them into the batter) Cook for 5 to 6 minutes. -----

Hello Friends! It's that time of year where we are all thinking about pumpkin treats! I wanted to share one of my favorite pumpkin sourdough recipes- Sourdough Pumpkin Pancakes! This recipe is perfect for using up your discard, and it's a one day recipe because there is no additional flour. It's so easy and you can have fresh fluffy pancakes in just 20 minutes. I like to put pecans in mine, you could put any kind of nut or even chocolate chips to make them just the way you like them!
Sourdough Pumpkin Pecan Pancakes
Ingredients
2 C Sourdough Discard
1 C Pumpkin Puree (or Orange Squash)
2 Tbsp Oil
2 Tbsp Maple Syrup
1 Tsp Vanilla
2 Eggs
1 - 2 Tsp Pumpkin Pie Spice
1/2 Tsp Salt
1/2 Tsp Baking Soda
Instructions
1. Add starter and pumpkin puree to a large bowl. Stir until incorporated. Add oil, maple syrup, and vanilla and stir until incorporated. Add the eggs and beat them in until they are completely incorporated. Lastly, add pumpkin pie spice, salt, and baking soda and mix until it's consistent. At this point you can add whatever additions you would like.
2. Heat a cast iron pan or griddle to medium heat. Pour batter onto heated surface and cook until golden brown on both sides.

You could omit the sourdough starter and the baking soda and just make these regular pumpkin pancakes by mixing the pumpkin together with the other wet ingredients and the baking powder with the dry and then stirring all the ingredients together and cooking right away.
Pumpkin Sourdough Pancakes:
Night before Ingredients
2.5 cups (12.5oz) AP/whole wheat flour
2 Tbsp pumpkin pie spice
1 tsp diamond kosher salt
3 large eggs
2 cups milk
1/4 cup honey/maple syrup
~2 oz sourdough starter
Morning of ingredients
1/2 tsp baking soda
1 Tbsp baking powder
15 oz pumpkin purée

Using fresh pumpkin and purple sweet potato to make healthier version compare to classic Belgium Waffles, adding fiber, flavors, nutrition, natural sweetness and colors.
Ingredients:
Pumpkin Waffles
( 6 pcs medium size round waffles, 1/4 cup batter each piece )
100g starter discard
100g peeled pumpkin
110g self raising flour *
30g melted butter
2 tbs milk
1 medium size egg
1 tbs organic brown sugar
1/2 tsp sea salt
1/4 tsp organic baking soda
Purple Sweet Potato Waffles**
( 6 pcs medium size round waffles, 1/4 cup batter each piece )
100g starter discard
100g peeled purple sweet potato
80g self raising flour*
30g melted butter
2 tbs milk
1 medium size egg
1 tbs organic brown sugar
1/2 tsp sea salt
1/4 tsp organic baking soda
*Self raising flour:
Adjust quantity +- 10-20g depend pumpkin and purple sweet potato hydration level
**Refer to internet information:
Color changes of purple sweet potato anthocyanin at different pH values.
During dough batter mixture, the color reacts with baking soda (or baking powder, or anything alkaline) and turns the resulting mixture blue (or green, or blue-green). It will also react with acids and turn red.
Method:
Steam pumpkin and purple sweet potato cubes for 30 minutes
Using blender ( or food processor),
blend together warm pumpkin/ purple sweet potato with melted butter and milk. Then add in starter discard and the rest of ingredients except self raising flour. Blend together until smooth.
Sieve self raising flour into a mixing bowl by batches. Pour in blended pumpkin/ purple sweet potato batter. Stir and fold to combine using spatula.
Cover and set aside for an hour.
Preheat waffle machine according to each machine instructions.
Add in a scoop (around 1/4 cup) of batter to each waffle plate.
Toast 3-5 minutes until golden brown depend individual waffle maker performance. I used 3 minutes.
Cool on wire rack.
