How To make Sopa De Lima
2 ts Olive oil
4 Annatto (achiote) seeds
3/4 c Diced onions
1/2 c Diced green bell pepper
1 Garlic clove; minced
1 1/2 qt -water
6 oz Chicken, skinned & boned
- diced 3/4 c Italian tomatoes, canned
-drained, seeded and diced 4 pk Instant chicken broth mix
1 ts Oregano leaves
1/2 ts Pepper
1 Lime; cut in half
1 Strip grapefruit peel
-(about 2 X 1/4-inch strip) 2 Corn tortilla
- (6-inch diameter each) In 2 1/2- or 3-quart saucepan heat oil over medium-high heat; add annatto seeds and cook until seeds release their color, 1 to 2 minutes. Remove and discard seeds. To saucepan add onions, bell pepper, and garlic and saute until onions are translucent, 3 to 4 minutes; add water, chicken, tomatoes, broth mix, oregano, and pepper. Squeeze lime halves into soup, then add squeezed halves and grapefruit peel to soup and stir to combine. Reduce heat to low and let simmer for 15 minutes. Using slotted spoon, remove and discard lime halves and grapefruit peel; let soup simmer for 15 minutes longer. While soup is simmering, spray 9-inch skillet with nonstick cooking spray and heat over medium heat; 1 at a time add tortillas and cook, turning once, until lightly browned on both sides. Cut tortillas into thin strips. To serve, ladle soup into 4 bowls and top each portion with 1/4 of the tortilla strips. Makes 4 servings, about 1 1/2 cups each.

1 Cebolla blanca en rajas
3 o 4 Tomates si están chicos cortados en cubitos
3 Dientes de ajo picados
1 1/2 Chile dulce picado y sin semillas ( Puedes usar pimiento morrón verde)
1 1/2 L de Caldo de pollo lo cuelas
3 Limas cortadas en rodajas
1/2 Cucharadita de Orégano molido
1 Cucharadita de Pimienta Quebrada
1 Cucharada de aceite de oliva
Modo de Hacerlo:
Pones en una sartén una cucharada de aceite de oliva, cuando esté caliente echas la cebolla, los ajos, el chile dulce, dos minutos después, agregas, el tomate, luego el pollo, lo sofries, le echas el caldo del pollo, luego de 3 minutos le echas las limas cortadas en rodajas, lo dejas cocer 5 minutos más, le sacas todas las rodajas de la lima para que no se amargue el Caldo, lo sirves, le echas unas rodajas para decorar el plato y unas tortillas fritas en tiras...

In this episode of Paul Plays With Fire we’re going to make Lime Soup, or Sopa de Lima.
Lime soup is a specialty of the Yucatan Peninsula, which is where Cozumel, Mexico is located. If you have watched our Cozumel Restaurant Tour episodes, you’ve seen lime soup on the table many times.
Lime soup is really just a light and delicious chicken soup, freshened up with lime at the end, and made with ingredients locally available on the Yucatan Peninsula. It is delicious.

SOPA DE LIMA RECIPE:
Ingredients
½ chicken cut into pieces
10 cups of water
2 whole garlic cloves
½ onion (cut into quarters)
2 tbsp avocado oil
1 diced onion
2 garlic cloves (minced)
1 red pepper chopped
1 large tomato dice
2 sprigs of cilantro
1 green pepper chopped
1 sprig of fresh oregano
1 sprig of fresh mint
1 sprig of fresh thyme
8 limes (roasted in the oven or skillet and juiced)
1 avocado (peeled and diced)
Radishes chopped
Fried tortilla
Chopped cilantro
Salt and pepper
Lime zest
Preparation
1. Place the cut up chicken pieces, ½ onion and 2 garlic cloves in a pot, cover with cold water and add a pinch of salt. Bring to a simmer, reduce the flame and allow to cook until the chicken is completely done. Shred the chicken and put aside.
2. Add the oil to a sauce pan at medium heat; add the chopped onion and minced garlic; cook until translucent. Add the green and red peppers and continue cooking until they are soft. Add the chopped tomatoes at the end.
3. Strain the chicken stock, add to the sautéed vegetables while also adding in the fresh herbs. Lower the flame and add the lime juice and chicken. Check for seasoning and cook for a few minutes.
4. Removed the fresh herbs from the soup, served the soup hot, garnished with avocado, radishes, tortilla strips and/or sliced lime.

Sopa de Lima - Yucatan Lime Soup
Sopa de Lima! ???? AKa Yucan Style Lime Soup
This soup is sour, savoury, and just damn delicious. Mexican and Vietnamese cuisine have a lot of similarities when it comes to using acid and fresh herbs in their recipes, but Yucatan citrus is its own thing!!
This soup is typically made from Yucatan Limas, which are totally different from limes and lemons. Eating this soup in the Riviera Maya in Mexico was a dream come true. I would also never dare to dream about getting limas here in Canada, so the citrus here will have to do!

Sopa De Lima Recipe:
For the broth
-1 whole chicken
-Enough water to submerge chicken
-1.5 to 2 tbsp salt, depending on preference
-1 tbsp oregano
-1 tbsp thyme
-4 cloves of charred garlic
-3 whole cloves
-1 lime for juice
-1 lemon for juice
*Use Yucatan Limas if you have access to them
Sofrito:
-1 green bell pepper
-2 tomatoes (on the vine or Roma)
-1 red onion
Garnishes
-Fried strips of tortilla
-Slices of lime
-Thinly sliced red onion
-Cilantro
*Remember, the brand of salt you use is different from mine! Not all salt is the same - adjust the seasoning to your taste!
