1/2 c Margarine
1 c Sugar
2 lg Eggs
1 ts Vanilla
1 1/2 c Oatmeal (not inst)
1 1/2 c Flour
1/2 ts Baking soda
1/2 ts Baking powder
1/2 ts Salt
1 ts Cinnamon
1/2 ts Ground allspice
1/4 c Milk
1 c Raisins
1 c Nuts; chopped
Preheat oven to 350 degrees. Grease some cookie sheets. Combine the butter and sugar in a mixing bowl, and beat until thoroughly blended. Add the eggs and vanilla, and beat until light and fluffy, then stir in the oatmeal. Stir and toss together the flour, baking soda, baking powder, salt, cinnamon and allspice, and add them to the first mixture along with the milk. Beat until completely mixed. Stir in the raisins and nuts. Drop the dough by heaping teaspoonsful onto the prepared cookie sheets, placing them about 2 " apart, and bake for about 12 minutes, or until the edges are brown. -----

Ingredients:
Soak 1 cup (155g) raisins in a bowl with 3 beaten eggs, 1 t Vanilla and 1 t Cinnamon for one hour.
In a separate bowl, cream 1 cup (240g) butter with 1 cup (220g) brown sugar and 1 cup (200g) white sugar.
Add 1 t salt and 2 t baking soda.
Stir in 2 1/2 cups ( 350g) flour.
Add the raisin mixture. Mix again.
Add 2 cups (200g) regular rolled oats or quick oats. If you use old fashioned oats, then “pulse” in a food processor/ blender 5-7 times for best results. Pulsing the oats will make them “finer”, therefore they will cook faster like quick oats.
Optional 3/4 cup (68g) walnuts or pecans.
Bake 350*F or 180*C
10-12 minutes

Mom's Best Moist and Chewy Oatmeal Cookies - Jill 4 Today
Who doesn't love a good oatmeal cookie, right!? These oatmeal cookies are so moist and chewy. I've added a good dose of chocolate chips to make them even more delicious. The recipe is easy and any novice cookie baker can do this! Here's the recipe:
Mom's Chewy Oatmeal Cookies
Ingredients
1 cup softened butter
1 cup granulated sugar
1 cup packed brown sugar
2 eggs
2 -1/8 teaspoons vanilla extract
2 cups unbleached all-purpose flour
2 cups old-fashioned oats
1-1/2 teaspoons baking soda
1 1/4 teaspoon ground cinnamon
1/2 teaspoon salt
Optional: 1 cup semi-sweet choco chips or raisins.
Pre-heat oven to 350 degrees.
In a large bowl, cream butter until creamy. Add the sugars and beat until well combined. Add eggs and vanilla, Beat until light and fluffy.
In a separate bowl combine the flour, oats, baking soda, cinnamon and salt. Add to creamed mixture and mix until just combined. Mix in the chocolate chips.
Drop by size if about a large tablespoon. 9 per cookie sheet is about right.
Bake at 350° for approximately 11 minutes or until lightly browned and just slightly soft in center. Cool on cookie sheet for 5 minutes. Transfer to cooling rack. ENJOY!
Makes 36 large cookies or approx. 60 smaller ones.

Follow along with our easy step by step spiced oatmeal cookie video recipe and learn how to make the best easy oatmeal cookies! These oatmeal cookies are perfectly spiced with a soft and chewy center. The addition of molasses to these oatmeal cookies adds a great balance and depth of flavour. You could also add raisins, chocolate chips or nuts to this simple oatmeal cookie recipe, allowing for many variations from this easy cookie dough! This cookie recipe can also be doubled or tripled. The dough can be portioned and frozen for up to 3 months, making this an easy make ahead cookie recipe as well!
Chewy oatmeal cookies recipe
Ingredients:
3/4 cup all purpose flour 98g
1/2 teaspoon baking soda 2g
1/4 teaspoon fine sea salt 1.5g
1 teaspoon cinnamon 2.5g
1/2 teaspoon ground ginger 1.5g
1/2 teaspoon allspice 1.5g
1/4 teaspoon nutmeg .75g
1/2 cup softened salted butter 113g
1/2 cup packed brown sugar (light or dark) 90g
1 large room temperature egg 50-60g
1 teaspoon vanilla extract 4g
1 tablespoon molasses 17g
1 + 1/2 cup large flake oats (or old fashioned oats) 135g
* Add in 3/4 cup raisins, chocolate chips or nuts if you would like!*
Directions:
In a medium bowl combine flour, baking soda, salt and spices. Whisk until well combined and set aside. In a large bowl combine softened butter and sugar. Cream on medium low for 1-2 minutes or until smooth. Scrape down the bowl and add the egg, vanilla and molasses. Continue mixing on medium low for another 1-2 minutes or until everything is well combined and the mixture is light and airy. Add in the dry ingredients and mix until no streaks of flour remain. Add in the oats (raisins/nuts/chips if using) and using a spatula mix until evenly distributed. Cover and chill the dough for one hour.
Preheat your oven to 350F/175C. Line two cookie sheets with parchment paper. Using a 1.5 tablespoon cookie scoop drop your cookies onto the prepared pans ensuring that you leave room for spreading. Bake for 7-8 minutes, removing from the oven as soon as the bottoms are golden brown. Allow them to cool on the pan for a couple minutes and then move to a wire rack to finish cooling completely.
This recipe makes 16-18 oatmeal cookies. If you add raisins, nuts or chocolate chips you will have 18-22 cookies. These oatmeal cookies can be stored at room temperature for up to 4 days.
