Soft and Chewy Lemon Crinkle Cookies | Works Everytime

These utterly delicious lemon crinkle cookies are soft, chewy and a certified melt-in-your-mouth treats. Sweet and tart bites bursting with hints of bright and zesty flavor in every bite!
You'll need:
• 6 tbsp salted butter (room temperature)
• ¾ cup white sugar
• 1 medium egg
• 1 large lemon ( 1 tbsp lemon zest + 2 tbsp fresh lemon juice)
• ¼ tsp baking powder
• ¼ tsp baking soda
• 1 ¾ cup all-purpose flour (* see helpful hints)
• ½ cup powdered sugar (for coating)
Makes 18 delicious cookies
Cool. Serve. Enjoy!
:: HELPFUL HINTS ::
* Measure your flour correctly. Adding too much flour will result to cookies not spreading or dry and crumbly texture when baked. Fluff your flour with a spoon in the container, spooned it into your measuring cup until full, and use the back of the knife to level it off.

Soft Lemon Cookies - Melt in your mouth
Lemon cookies are super simple to make and delicious. Made with a combination of lemon juice and zest, they have a tremendous natural flavor. I really enjoy them with a nice cup of tea or glass of milk.
Get the recipe:
There are a few tips to making these tasty lemon cookies. First, I find the juice from one lemon is about perfect. If you want them more or less lemony, simple adjust the amount of juice accordingly.
I always use a few drops of yellow food coloring to make them really yellow and vibrant. This is totally optional, and you can be the judge.
The zest from one lemon is about perfect form my liking. Just be careful not to zest too far into the lemon as it will become bitter. You only want the zest from the shiny part of the skin.
The amount of sugar and vanilla extract can be altered too. Just be careful not to over power the lemon flavour with vanilla extract.

big soft lemon cookies Something Vegan
RECIPE
1 cup organic sugar
1/2 cup neutral oil
1/4 cup lemon juice
1 Tbsp. lemon zest
1 tsp. lemon extract
1 tsp. vanilla extract
2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
Preheat the oven to 350 degrees Fahrenheit. To a bowl, add sugar, oil, lemon juice, lemon zest, lemon extract, and vanilla extract. Stir until smooth, and evenly combined. Add flour, baking powder, and salt. Stir until a smooth dough forms. Roll into balls and place on a baking pan lined with parchment paper. Bake about 15-18 minutes (the cookies will still be a little soft when you take them out of the oven, but will set up as they cool). Let the cookies cool a couple of minutes on the pan, and then move to a cooling rack, to cool completely. Makes one dozen cookies.

Ingredients:
2 sticks of soft, unsalted butter
1 1/4 c powdered sugar
2 room temperature eggs
Zest of 3 unwaxed lemons
2 c self rising flour
Glaze:
1/2 c powdered sugar
Juice of 1/2 lemon
Zest of 1 lemon
{You want the glaze to be the consistency of glue}
-Homemade self rising flour: combine 1 c unbleached flour with 1 1/2 ts baking powder and 1/4 ts kosher salt or 1/8 ts fine salt.
