The Story of Joseph Brown's Molasses Cookies: Joe Froggers (Bonus Story)
Have you ever heard of Joe Frogger cookies? They are giant molasses cookies about as big as a salad plate! In this video, I will share a quick story about Joseph Brown and his amazing molasses cookies.
⅓ cup hot water
1 cup unsulphured dark molasses
3½ cups all-purpose flour
1½ teaspoons salt
1 teaspoon baking soda
1¼ teaspoons ground ginger
½ teaspoon ground cloves
½ teaspoon ground allspice
¼ teaspoon ground nutmeg
½ cup butter softened
1 cup granulated sugar
Stir the molasses, hot water, and rum extract together in a bowl.
In a separate bowl, whisk together the flour, baking soda, salt, and spices.
In the bowl of a stand mixer, cream the butter and sugar until light and fluffy (about 3-4 minutes).
Alternate adding part of the flour mixture, then part of the molasses mixture, and mixing between additions, scraping down the sides of the bowl as needed.
Make two discs of dough and wrap them in plastic wrap, then refrigerate for at least two hours.
When the dough is chilled, preheat the oven to 375 degrees F and line a couple of cookie sheets with parchment paper.
Roll out the chilled dough on a lightly floured surface to ¼ inch thickness, then cut into large circles using the lid of a coffee can (or in my case, the lid from the large jar of animal crackers from Costco). Any large lid would work, really, as long as it is about 6-inches in diameter or roughly the size of your hand. Although you could make the cookies smaller if you really wanted to.
Transfer the cut-out cookies to the cookie sheets, leaving at least an inch between cookies (I can only bake 4 per pan). Bake for 8-10 minutes just until the edges begin to brown. The cookies should be soft in the middle since they will continue to harden as they cool. Cool completely on a wire rack.

DIY DARK MATTER ----
PA DUTCH MOLASSES COOKIES
INGREDIENTS
1 cup shortening or butter
4 cups flour
1 cup sugar
1 egg
1/4 cup hot water
1 1/4 teaspoon baking soda
1 teaspoon salt
1 cup dark molasses
DIRECTIONS
Preheat oven to 375 degrees.
Mix flour and salt together and cut in shortening as for pastry (Mennonitese for pie.)
In another bowl, combine molasses and sugar.
Add egg and beat well.
Dissolve soda in hot water and add to molasses, egg, and sugar mixture.
Combine crumbs and molasses mixture and stir until well blended.
Chill dough for several hours.
On a lightly floured board, roll cookie dough to 1/4 inch thickness.
Place on greased cookie sheet and bake until a golden brown, about 10 minutes.
Makes about 4 dozen cookies.

• 5 cups flour
• 1 cup shortening
• 1 cup sugar
• 1 cup molasses and 1 teaspoon baking soda, stirred together
• 1 cup sour milk* and 1 teaspoon baking soda, stirred together (*add 1 tblsp to one cup of milk to make your sour milk)
• 1⁄2 tsp cinnamon
• 1⁄2 tsp powdered ginger
• 1⁄2 tsp salt
Cooking Instructions

1) Cream butter and sugar in a stand mixture, with a hand mixer on low, or by hand.
2) Add the cinnamon, powdered ginger, and salt to the mixture and combine.
2) Add molasses as mixed with the baking soda. 3) Add sour milk as mixed with the baking soda. 4) Add flour, a little at a time, and mix until a firm
dough is formed.
5) Chill dough in the refrigerator overnight. 6) When ready to bake, preheat oven to 350
degrees. Roll your dough out on a well floured, flat surface to about a 1/4 inch thickness. Cut with your favorite cookie cutter shapes.
7) Bake for 10 minutes on a cookie/pizza stone or flat pan on parchment paper. Do not overbake!
