Angelica's Coconut Pineapple Cookies
This is my recipe for my Pineapple Coconut Cookies with White Chocolate. I usually make these in the spring or summer time, but you can make them anytime of the year. I hope you enjoy and God Bless.
The Ingredients:
5 cups of Flour
2 cups of white chocolate
2 cups of Brown Sugar
1 ½ -1 ¾ of White Sugar
¾ cup of drained crushed Pineapple
4 whole eggs
4 sticks (1lb.) of cold salted butter
3 Tbsp. of real vanilla extract
2 tsp. of Baking Soda
Shredded Coconut
Natural or raw sugar

Pineapple 2 no(750 GM) (4 cup)
Sugar 130gm (2/3cup)
Cinnamon 1 stick

Pineapple Tart Cookies Recipe / Resipi Tart nenas
Pineapple tarts comes in few version, the classic pastry cookies style topped with pineapple jam, the full pastry style with pineapple jam filling or the pineapple roll tarts. This recipe will be the roll tart style, the pastry will be soft and simply melt in your mouth.
Here are the recipe for you to try. You can get approximately 70 pcs of tarts with this recipe.
Ingredients | Bahan-bahan diperlukan:
190g butter | Mentega
1 tbsp castor sugar | gula kastor
1 pc yolk | kuning telur
1 tbsp ghee | minyak sapi
1 3/4 cup wheat flour | tepung gandum
1/4 cup cornstarch | tepung jagung
1 tbsp custard powder | tepung kastard
1 tsp vanilla extract or essence | esen vanila
300g pineapple jam | jem nenas
** (1/2 tsp salt if unsalted butter is used | setengah sudu kecil garam jika guna mentega tawar)
For decoration | Bahan hiasan:
1 pc yolk | kuning telur
few drops yellow food colour | beberapa titik pewarna kuning

每年新年黄梨饼是大家的最爱,而去台湾大家最爱就是“凤梨酥”。这个食谱做法和馅料都和之前的黄梨饼有点差别哦。这个食谱烤时不需要中途翻面都可以;有没有模具都可以制作,只是有模具形状会更立体整齐一致。这次黄梨馅采用了麦芽糖来制作,不会过甜,粘合度超好。饼干面团则加了奶粉和杏仁粉增添香味。新鲜出炉,掰开饼皮是酥脆的。隔夜再吃,馅料湿润度渗透,饼皮变酥软,口味融合,杏仁奶香味的饼干为底,里面包酸甜拉丝的黄梨酱,吃了就有新年气氛了。
烤裂原因:
=没包紧馅料(如室温太热,面团太软要立刻收冰箱稳固了再包馅)
=馅料水分太多
=烤箱温度过高(请根据自家烤箱调整)
收藏方式:烤好彻底凉透,收密封容器室温保存, 自炒馅料3-5天内吃。要保存更久可以收冰窟冷冻,吃前解冻。
In every CNY, pineapple tart cookies is everyone’s favorite, and everyone’s favorite when visiting Taiwan is its famous Pineapple Cake/Pineapple Tart. This recipe and fillings are a little different from the previous pineapple tart. This recipe does not necessarily need to be flipped halfway during baking; it can be made with or without moulds as well, but the shape of those made with molds will be more dimensional and uniform. This time, the pineapple fillings is made with maltose syrup, which is not too sweet and has super adhesion. The dough is added with milk powder and almond powder to add fragrance. Freshly baked, the crust is flaky crispy when tear apart. Eat it again after overnight, the fillings moisture penetrate the crust becomes flaky soft, the flavors all combined into one, the almond milky flavored dough as base, the sweet tangy pineapple fillings with fiber stripes within, full of New Year atmosphere.
Reasons for cracking:
= Fillings’ not wrapped well (if room temperature is too hot and dough turns too soft, please put in the fridge to set before wrapping fillings)
= Too much moisture in the fillings
= Too high oven temperature (please adjust according to your own oven)
Storage Method: After baked, let cool thoroughly and store in airtight container at room temperature, for homemade fillings eat within 3-5 days. To store longer keep in freezer, thaw before eating.
