Ingredients
4 cups almond flour, 1, 1/2 cup of sugar ,4 egg withes beaten just a little ,lemon zest( 1 lemon )1 tbsp of almond flavor ( optional). For the decorations you will need 1 cup of sugar , roasted almonds and candied cherries.
Mix the almond flour with the sugar, make sure there are no lumps. Add the egg whites slowly and mix everything well. Then add the lemon zest and the almond flavor . Mix well, the dough should not stick to your hands.
fridge for an hour. Remove from the fridge, make small balls, the size of a walnut and roll them in sugar. Decorate with almonds and cherries and bake in a preheated oven for 20 minutes or when they turn golden brown. let it rest for a few minutes and then... Buon appetito.

4 tazze di farina di mandorle, 1, tazza e mezzo di zucchero ( 300 g), 4 albumi d’uovo sbattuti appena un po', scorza di limone (1 limone) 1 cucchiaio di aroma di mandorla (facoltativo). Per le decorazioni vi servirà 1 tazza di zucchero, mandorle tostate e ciliegie candite.
Impastare la farina di mandorle con lo zucchero, facendo attenzione che non ci siano grumi. Unite gli albumi poco alla volta e amalgamate bene il tutto. Quindi aggiungere la scorza di limone e il sapore di mandorla. Mescolare bene, l'impasto non deve attaccarsi alle mani.
frigorifero per un'ora. Togliere dal frigo, formare delle palline grandi quanto una noce e passarle nello zucchero. Decorate con mandorle e ciliegie e cuocete in forno preriscaldato per 20 minuti o quando saranno ben dorate. lasciate riposare qualche minuto e poi... Buon appetito.

Today we will be making these bakery style Italian Almond Cookies! They are chewy, soft and very very delicious!

3-1/4 cups almond flour
3/4 cup sugar
1/4 cup icing sugar + 4 tablespoons of icing sugar to roll your dough balls in.
1/4 teaspoon salt
zest of 1 lemon
1 teaspoon vanilla extract
1/4 - 1/2 teaspoon almond extract
3 large egg whites
about 24 whole plain almonds

Amaretti biscuits are a staple in many Italian homes but everyone’s recipe is different! This amaretti recipe has been passed down through generations and is my absolute favourite. Join my mother-in-law, Maria as she shares her family recipe to these delightful almond bites that are a little crispy on the outside and just the right amount of soft on the inside. Amaretti are great for entertaining – or even gift giving this festive season.

AMARETTI BISCUITS | How to Make Almond Amaretti Cookies
INGREDIENTS:
500g/5.2 cups Almond Meal
300g/1.33 cups caster sugar
5 egg whites (Use free range eggs that are room temperature)
1 x bottle almond essence (1.07 Oz)
Bowl of icing sugar (plus extra for dusting!)
UTENSILS:
1 x Large mixing bowl
1 x Medium mixing bowl
Whisk
Teaspoon
Baking tray
Baking paper
METHOD:
1. To start making your Italian amaretti biscuits, separate 5 egg whites from the yolk into a medium mixing bowl and whisk them well.
2. Once there are lots of bubbles at the top of the egg whites, add the almond essence and whisk gently once again so it completely infuses them.
3. Mix the almond meal and caster sugar together in a separate bowl until the sugar seems to disappear.
4. Next for your amaretti biscotti, pour the egg white mixture into the bowl with the dry ingredients and mix through using a large spoon.
5. Once this has all started to bind, use your hands to combine everything even more and make sure that everything mixes really well together, still keeping it all inside the large bowl.
6. Don’t try and make it into a ball, just squeeze down with your hands so it stays ???
NONNA MARIA’S TIP: If you feel the mixture is too wet and sticky, you might need to add some extra almond meal.
7. Now you can let the amaretti mixture rest for an hour (or overnight in the fridge).
8. If you’re making them on the same day, wash your hands, and once this has had time to rest, get ready to roll!
9. When it’s time to make the amaretti biscotti, prepare a large flat baking tray by spreading baking paper on top and pre-heat your oven to 180 degrees celcius/356 F.
10. Using a tea spoon, scoop up a heaped amount of mixture, roll it around using the palm of your hand, and make it into a ball.
NONNA MARIA’S TIP: If your hands are getting too sticky to roll the amaretti, get a bowl and place some water inside, them dip a finger into it, spreading it on to both palms to help smoothen the process.
11. Place the ball gently into a bowl of icing sugar and repeat until the bowl is almost full.
12. Roll each amaretti ball around in icing sugar and then gently place it on the baking tray.
13. Line the balls up, making sure you don’t place them too close together.
14. Once the tray is completely full, with enough space in between each one, flatten out your hand, and press down gently onto each ball making the surface flat. This will create some cracks and provide the perfect form for your amaretti biscotti!
15. Dust with one more sprinkle of icing sugar all over before placing them in the oven for approx. 15 minutes – but check them after about 12 minutes as all ovens vary!
HOW TO SERVE
Leave the amaretti to cool or enjoy nice and warm with a cup of tea, coffee or hot cocoa!

ITALIAN ALMOND COOKIES (RICCIARELLI)

The easiest Italian Almond Cookies also know as Ricciarelli will transport you straight to the rustic streets of Siena. Soft and slightly chewy bursting with almond and orange and dusted with powdered sugar. You won't believe how low prep they are and how easy they are to whip up!
Ingredients
2 cups ground almonds (250g)
2 large egg whites
¾ cup white sugar (150g)
1 tsp almond extract
1 tsp orange extract
Zest of 1 orange
Instructions
Put the egg whites in a bowl with the almond and orange extract and whisk them with a fork until frothy.
In a separate large bowl combine the ground almonds, sugar and orange zest. Add the egg white mixture and mix together with a spoon until it starts to come together
Use your hands to bring the dough together to form a ball. Make sure everything is incorporated.
Wrap the ball of cookie dough in plastic wrap (cling film UK) and place in the fridge for at least 4 hours or overnight if possible.
Pre-heat the oven to 320F (160C) and line a baking tray with baking parchment.
Remove the dough from the fridge and shape it into a large log. Cut the log into ½ inch pieces and roll into balls.
Press and shape the Ricciarelli into ovals and place on the prepared baking tray. Dust generously with powdered sugar and bake in the oven for 20 minutes.
Remove from the oven (they will still seem very moist and pale) and let them cool completely.

Makes 22 cookies
Ingredients:
2¼ cups (220g) almond flour (ground almonds)
1 cup + 2 Tbsp. (140g) Powdered sugar
3/4 teaspoon Baking powder
1/4 teaspoon Salt
2 Egg whites
1 teaspoon Vanilla extract
1 teaspoon Rose water (optional)
1 teaspoon Almond extract (optional)
Lemon zest from one lemon
1 teaspoon Lemon juice
For decoration:
Raw almonds
Directions:
1. Preheat oven to 350F (175C).
2. In a large bowl combine almond flour, powdered sugar, baking powder, lemon zest and salt.
3. In a separate bowl beat egg white until foamy.
4. Add beaten egg white, vanilla extract, rose water, almond extract, lemon juice to the flour mixture and stir until combined.
5. Shape the dough into small balls and place on a baking tray lined with parchment paper. Decorate each cookie with an almond (optional).
6. Bake for 15-18 minutes or until lightly golden (the cookies shouldn’t be too golden, otherwise they will dry out). Allow to cool before serving.
