How To make Old Fashioned Soft Pumpkin Cookies
2 1/2 c All-purpose flour
1 ts Baking soda
1 ts Baking powder
1 ts Ground cinnamon
1/2 ts Ground nutmeg
1/2 ts Salt
1 1/2 c Granulated sugar
1/2 c Butter *; softened
1 c Libby's solid pack pumpkin
1 Egg
1 ts Vanilla extract
Glaze (recipe follows) 2 c Sifted powdered sugar
3 tb Milk
1 tb Butter; melted
1 ts Vanilla extract
Recipe by: Ketchum Kitchen * (1 stick) Combine flour, baking soda, baking powder, cinnamon, nutmeg and salt in medium bowl. Beat sugar and butter in large mixer bowl until well blended. Beat in pumpkin, egg and vanilla until smooth. Gradually beat in flour mixture. Drop by rounded tablespoon onto greased baking sheets. Bake in preheated 3500F oven for 15 to 18 minutes or until edges are firm. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Drizzle glaze over cookies. For Glaze: Combine powdered sugar, milk, melted butter and vanilla extract in small bowl until smooth. Makes 3 dozen cookies -----

These easy, Soft Pumpkin Cookies are supremely soft and chewy, with a subtle pumpkin flavor and the perfect amount of sweetness! Best of all, they are ready to eat in less than 20 minutes!
Ingredients:
1/2 cup unsalted butter (softened)
1 1/3 cups granulated sugar
1 large egg
1 cup pumpkin puree
2 1/4 cups all purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla extract
Instructions:
Preheat oven to 400 degrees F.
Prepare a baking sheet with parchment paper.
In a large mixing bowl (or the bowl of a stand mixer), cream butter and sugar.
Add egg, pumpkin and vanilla extract and mix well.
Add dry ingredients and mix until well combined.
Using a 1 oz. cookie scoop, scoop dough onto parchment lined baking sheet about 2 inches apart.
Bake for 10-12 minutes until cookies are set but not browned.

In this video, I share with you a delicious new pumpkin recipe for old-fashioned soft pumpkin cookies. In keeping with the Thanksgiving season, they are just spicy enough, and a real treat to eat. The basic recipe comes from the Libby company, the same Libby that gave us the “no-fail pumpkin pie.” Here, I have a adjusted the spices a bit to make sure it is just as it should be. I dropped the nutmeg for ground ginger and I added a small amount of ground cloves. I hope you enjoy these cookies as much as we did testing them. 8 oz, softened butter
1 cup,white sugar.
1 cup,packed brown sugar.
1 egg,
1 tsp, vanilla.
1 cup,Pumpkin puree.
1 tsp,Baking powder.
1 tsp, Cinnaman.
1/2 tsp, salt.
2- 1/2 cups all purpose Flour.
set oven to 350. for soft cookies bake 8 mins. for harder cookies 10 to 11 mins.
