2 1/2 c All-purpose flour
1 ts Baking soda
1 ts Baking powder
1 ts Ground cinnamon
1/2 ts Ground nutmeg
1/2 ts Salt
1 1/2 c Granulated sugar
1/2 c Butter *; softened
1 c Libby's solid pack pumpkin
1 Egg
1 ts Vanilla extract
Glaze (recipe follows) 2 c Sifted powdered sugar
3 tb Milk
1 tb Butter; melted
1 ts Vanilla extract
Recipe by: Ketchum Kitchen * (1 stick) Combine flour, baking soda, baking powder, cinnamon, nutmeg and salt in medium bowl. Beat sugar and butter in large mixer bowl until well blended. Beat in pumpkin, egg and vanilla until smooth. Gradually beat in flour mixture. Drop by rounded tablespoon onto greased baking sheets. Bake in preheated 3500F oven for 15 to 18 minutes or until edges are firm. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Drizzle glaze over cookies. For Glaze: Combine powdered sugar, milk, melted butter and vanilla extract in small bowl until smooth. Makes 3 dozen cookies -----

Ingredients:
2½ cups all-purpose flour
1 cup pumpkin puree
1 cup brown sugar
½ cup unsalted butter at room temperature
½ cup granulated sugar
1 egg
2 tsp ground cinnamon
1 tsp brandy, rum, or whiskey
1 tsp baking soda
1 tsp baking powder
½ tsp salt
½ tsp ground ginger
½ tsp ground allspice
¼ tsp ground coriander
¼ tsp ground nutmeg
Icing:
1 cup powdered sugar
3 tbsp milk

0:10 Sift together all your dry ingredients together except for the sugar and set aside.
0:53 In a mixing bowl attached to a hand beater, cream the butter and both sugars together until pale and fluffy, roughly 5 to 7 minutes.
1:17 Add the pumpkin puree, egg, and liqueur of choice. Continue creaming.
1:38 Fold your flour mixture into your wet mixture until evenly incorporated.
1:50 Cover and set your dough aside in a chilled area and allow to rest for at least an hour, no more than 2 hours.
1:58 While waiting, prepare your icing. Mix all your ingredients together and transfer them to a piping bag. Set aside.
2:28 Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
2:31 Portion roughly 2-ounce cookie dough using either tablespoons or a scooper. Place these onto your lined baking sheet, inches apart from each other.

These easy, Soft Pumpkin Cookies are supremely soft and chewy, with a subtle pumpkin flavor and the perfect amount of sweetness! Best of all, they are ready to eat in less than 20 minutes!
Ingredients:
1/2 cup unsalted butter (softened)
1 1/3 cups granulated sugar
1 large egg
1 cup pumpkin puree
2 1/4 cups all purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla extract
Instructions:
Preheat oven to 400 degrees F.
Prepare a baking sheet with parchment paper.
In a large mixing bowl (or the bowl of a stand mixer), cream butter and sugar.
Add egg, pumpkin and vanilla extract and mix well.
Add dry ingredients and mix until well combined.
Using a 1 oz. cookie scoop, scoop dough onto parchment lined baking sheet about 2 inches apart.
Bake for 10-12 minutes until cookies are set but not browned.
