Molasses Crinkle Cookies

There is nothing like a good molasses crinkle cookie: just the right amount of snap with a chewy center. These were one of my grandma's all-time favorites with the recipe coming from Great-Grandma. The only update is amping up the ginger. These are a perfect Christmas cookie!

INGREDIENTS
- 3/4 cup shortening
- 1 cup brown sugar
- 1/4 cup molasses
- 1 egg
- 2 cups all-purpose flour
- 1 1/2 tsp baking soda
- 1 tsp cinnamon
- 1 tsp ginger
- 1/4 tsp salt
- 1/4 tsp ground cloves
- 1/2 cup turbinado sugar
- 1/3 cup candied ginger, chopped
INSTRUCTIONS
Cream the shortening and brown sugar together until fluffy. Add molasses and egg and mix well to completely incorporate.
In a separate bowl fitted with a sifting colander, measure flour, baking soda, salt, and spices and sift. Add dry ingredients to the wet and mix just to incorporate. The dough will be dry.
To bake, make balls with a two-ounce cookie scoop. Roll with hands and then roll in turbinado sugar. Place on a parchment-lined baking sheet and top with a pinch of candied ginger. Press ginger in slightly to adhere. Bake at 350°F for 10-12 minutes.
Once done baking, let rest on the pan for a few minutes before transferring to a cooling rack.

CHEWY, FALL SPICE MOLASSES COOKIES W/ GLAZE
You are going to love these cookies! Not because they are so simple to make, but because they are so incredibly delicious! Warm fall spices of cinnamon, ginger and cloves combined with molasses makes a winning combination! My neighbor, many years ago, shared this wonderful recipe with me and it has been a family favorite ever since. I hope you try them!
CHEWY MOLASSES COOKIES
3/4 cup any unflavored vegetable oil
1/4 cup regular molasses ( not blackstrap)
1 cup granulated sugar
1 egg
2 cups all purpose flour
2 teaspoons baking soda
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1 teaspoon ground cinnamon
1/2 teaspoon salt
METHOD
1) In a medium bowl, combine vegetable oil, molasses, sugar and egg. Stir until well combined with a wooden spoon or whisk.
2) Add flour, baking soda, spices and salt and mix well to incorporate all the dry ingredients. Batter will be stiff.
3) Refrigerate at least one hour.
4) Preheat oven to 375 degrees.
5) Roll into large balls the size of a walnut ( or smaller if you prefer) and place on a parchment lined baking sheet. Cookies spread so leave room for this!
6) Bake for 9-10 minutes, or until they have spread, browned lightly, and have crackled tops.
7) Cool on baking sheet.
GLAZE
2 cups powdered sugar
1-2 tablespoons water
Fresh lemon juice from 1 lemon
In a bowl, add most of the water to powdered sugar and stir. It should be lumpy and a bit dry. Add and mix enough lemon juice to make a smooth
drizzling consistency. Using a spoon, drizzle glaze over cookies, going in one direction.
If you prefer, you may roll unbaked cookie balls in sugar and skip the glaze.

Crisp, Chewy Molasses Cookies Moldow (from the Joy of Cooking)
This is now officially my favorite spiced molasses cookie. It's from the 2006 edition of the Joy of Cooking from one of the publishers. I highly recommend The Joy - it's the best all-purpose cookbook I've ever encountered and I refer to it again and again all the time - but if you don't have the book, here's the recipe with a couple modifications I've made:
Makes 3 dozen cookies
In a large bowl, combine:
1 1/2 sticks softened butter
1 cup sugar
Beat until smooth, then add:
1/2 tsp salt
1 tsp baking soda
2 tsp cinnamon
*2 tsp ginger (originally 1 tsp)
1 tsp ground cloves
1/4 cup molasses
*2 egg yolks (originally 1 whole egg. I prefer using yolks only as it makes the cookies flatter, chewier, and richer. If you like fluffier, cakier cookies, use the whole egg)
Beat until smooth, then add:
2 cups all purpose flour
Stir until the flour is just combined and no lumps/bits of flour remain. Don't overmix! Cover and chill the dough for 2 hours.
Preheat oven to 350F.
Line a baking sheet with parchment or a silpat. Scoop the dough and roll into 1 inch balls, then coat in white sugar. Place the cookie dough balls on the sheet, spaced 2 inches apart (you should be able to fit 12-15 cookies on your sheet, depending on its size.) These cookies need to be baked one sheet at a time.
Bake for 8 minutes total, turning the pan halfway through and checking for doneness at around 7 minutes. When you pull the cookies out, they should still be soft in the middle and seemingly raw, but the edges will be firm and starting to brown a little. Some cookies might have faint cracks on the top.
Let the cookies sit on the pan on a wire rack for a couple minutes to harden, then transfer onto a wire rack to cool completely before storing in an airtight container.
