3 Egg whites 1/2 ts Baking powder 1 c Sugar 1/2 ts Vanilla 16 Soda crackers Rolled into very fine crumbs 1 c Chopped pecans Beat egg whites until stiff; add baking powder. Add sugar slowly then add the vanilla. Mix this with the cracker crumbs and pecans and pour into a 9 inch greased pie pan. Bake in a 350 degree oven for 30 minutes. Saltine Cracker Pie
Jill prefers I call this 'Saltine Cracker Pie' because it is ordinarily made into a pie. But when we entertained some friends during the weekend she made them into little cup cakes, so I called them 'Saltine Cup Cakes'.
By any name they are delicious. Many people find it hard to believe they are made using Saltine Crackers.
Here's how it is done. You will need:
18 Saltine Crackers
1 Cup of Walnuts (chopped)
3 Egg Whites
1 Cup of Sugar
1/2 Teaspoon Cream of Tartar
1 Teaspoon Vanilla.

Soda Cracker Pie with Chef Grandpa
Recipe from ShaeMakes.com INGREDIENTS
32 Saltine Crackers (crushed into nickel and quarter sized chunks) 1 cup white sugar 1 cup chopped walnuts 1 tsp baking powder 3 egg whites 1 cup heavy whipping cream ½ cup powdered sugar 1 tsp almond extract INSTRUCTIONS Preheat the oven to 350 degrees.
Beat egg whites with a hand mixer or a stand mixer fitted with a whisk attachment until stiff peaks are formed.
Fold sugar and baking powder into egg whites a spoonful at a time being careful not to deflate the egg whites.
Fold in saltines and walnuts.
Add mixture to a sprayed and greased 9 inch pie pan.
Bake for 20 minutes. Remove and let cool completely.
Meanwhile make the whipped cream. Add whipping cream, powdered sugar and almond extract to a bowl and beat until stiff peaks are formed.
Once the pie is cooled, top with whipped cream. The pie is best chilled overnight but can also be eaten immediately if needed. Store leftovers in the refrigerator.
If you have saltine crackers lying around, letting them sit in this oily spicy mixture overnight before baking for 15 minutes at 250F will make them disappear before you know it.
