Seeded and deribbed 1/2 lb Yellow onions, peeled and
Cut into 2 inch chunks 2 Cloves of garlic, smashed
And peeled 2 c Canned Italian tomatoes with
Liquid 1 lb Lean ground beef
2 ts Ground cumin
2 ts Oregano
1 tb Chili powder
1/4 ts Hot red pepper sauce
1/2 ts Kosher salt (optional)
2 ts Cider vinegar
Freshly ground black pepper To taste
1.Finely chop pepper, onion, and garlic in a food
processor. Scrape into a 13x10x2" oval dish and stir in tomatoes, breaking up any whole tomatoes. Cover tightly with microwave plastic wrap. Cook at 100% for 9 minutes (in a 650-700 watt oven). Prick plastic to release steam. 2.Remove from microwave. Uncover carefully and stir
in beef and remaining ingredients except vinegar and black pepper. Cover tightly with microwave plastic wrap. Cook at 100% for 5 minutes. Prick plastic. 3.Remove from oven and uncover. Stir in vinegar and

SMOKY CHILI RECIPE:
30g ancho
20g guajillo
30g morita
3c beef stock
2tbs pork fat
3/4lb short rib (chuck roast is cool too)
3/4lb pork belly (or pork shoulder)
1/2c onions
1c peppers
2tsp cocoa powder
1.5tbs garlic powder
1.5tbs paprika
1.5tbs cumin
1.5tbs coriander
1tsp cinnamon
1tbs salt (to start)
28oz can tomatoes
2tbs brown sugar
3tbs Worcestershire
2 smol can beans
Hot sauce (to taste)
- toast the dried chiles at 350 for 5 minutes
- Take out the seeds and blend with beef stock until very smooth (2-3 minutes)
- sear the pork and beef until well caramelized
- add the vegetables and saute until translucent
- Add all the spices and toast until very fragrant
- add the tomatoes, brown sugar and worcestershire and bring to a simmer
- Cover the pan so you dont get splattered lol
- Cook at 400 for 2 hours
- Add the canned beans for the last 15 minutes

INGREDIENTS:
1.5 lbs. chicken breasts (chicken thighs work great in this recipe too)
30 oz. Cannellini Beans (two 15-oz. cans) drained
8.75 oz. can whole kernel corn (drained well)
30 oz. chicken broth (two 15-oz. cans) or 4 cups water and 2 chicken boullion cubes
4 oz. can fire roasted green chiles or 1 diced poblano pepper
1 cup sweet yellow onion diced
1 tsp. salt
1/4 tsp. pepper
1 tsp. chili powder
1 tsp. cumin
1/2 tsp. oregano
1/2 tsp. garlic powder
1 cup sour cream (ADD AT THE END OF THE COOKING TIME)
1/8 cup minced cilantro (ADD AT THE END OF THE COOKING TIME)
SLOW COOKER SIZE:
5-quart or larger
INSTRUCTIONS:
Add the chicken, beans, corn, chicken broth, green chiles, onion and seasonings to the slow cooker. Wait to add the sour cream and cilantro. Stir.
Place the lid on the slow cooker. Cook on HIGH for 4 hours or LOW for 8 hours.
When the cooking time is done, shred the chicken with two forks.
Add the sour cream and cilantro. Stir.
Serve and enjoy!
