Claire Saffitz Makes St. Louis Gooey Butter Cake | Dessert Person. One of Claire’s favorite desserts from childhood is, Gooey Butter Cake, a St. Louis tradition unlike any other cake. While most recipes call for a box cake mix, Claire takes it back to its German origins as a yeasted coffee cake base with a buttery, gooey, vanilla-scented topping. THEN, Claire puts fellow STL-native, longtime friend, and comedian extraordinaire Jo Firestone to the taste test while the two settle old Gooey Butter Cake beefs.

1/4 cup heavy cream (2 oz / 57g), at room temperature
2 tablespoons light corn syrup (1.4oz / 40g)
1 tablespoon vanilla extract
10 tablespoons unsalted butter (5 oz / 142g), at room temperature
1 cup granulated sugar (7 oz / 200g)
1/4 cup packed light brown sugar (1.8 oz / 50g)
1 teaspoon Diamond. Crystal kosher salt (0.11 oz / 3g)
1 large egg (1.8 oz / 50g), at room temperature
1 cup all-purpose flour (4.6 oz / 130g)

RECIPES/INGREDIENTS:
For the meat pie dough:
* 250 g of flour
* 125 g of butter
* 70 ml of cold water
* 1 beaten egg
* 1 teaspoon of baking powder
* 1 teaspoon of ground nutmeg
* A pinch of salt
For the meat pie filling:
* 1 handful of chopped carrot
* 1 handful of chopped potatoes, parboiled
* 1 handful of chopped bell pepper
* Flour paste
* chopped onion and garlic
* 250 g of cooked beef
* Egg wash

METHODS:
* Cook the beef with onion, garlic, curry and salt. Mash the cooked beef.
* Mix the flour, nutmeg, salt, baking powder and butter together.
* Make a well in the middle and add the beaten eggs and cold water. Keep mixing until a smooth dough is formed. Wrap with a cling film and chill in the fridge for 5 minutes.
* Meanwhile, make the fillings. Add little oil into a saucepan and fry the cooked beef, chopped vegetables. Add the flour paste and keep mixing until thickened.
* Roll out the dough into meat pie shapes and then top with the fillings.
* Seal the edges with egg wash, glaze with egg wash and transfer to a cake pan.
* Add sand and stones in a pot or saucepan and let the cake pan sit on the stones.
* Preheat the pot for 5 minutes and bake for about 45 minutes.
* Serve warm and enjoy!
