Skillet Chicken Souvlaki: Quick & Easy 30 Minute Meal
This 30-minute skillet Chicken souvlaki has all of the flavors of the Mediterranean in one Low-Carb dish. Perfect for meal prep and for a busy weeknight dinner.

This quick and easy meal is ready in under 30 minutes. It’s basically a deconstructed version of one of the most popular Greek pita sandwiches, the chicken souvlaki. My version is low-carb but, you can always serve it alongside warm pita bread or over rice or even buttery pasta. A quick and easy meal full of Mediterranean flavor!
Serves 4:
1 lb. boneless, skinless chicken thigh meat, cubed
3-4 tablespoons olive oil
1 small onion, diced
2 bell peppers, diced
3 garlic cloves, grated
1 cup grape or cherry tomatoes
8-10 pitted Kalamata olives, whole or sliced
3-4 oz. Halloumi cheese, cubed
Salt and freshly ground black pepper, to taste
2 teaspoons dried crushed oregano
½ teaspoon ground cumin powder
½ teaspoon lemon zest
Juice of a small lemon
Serve with tzatziki and lemon wedges
Optional vegetables:
• Mushrooms
• Zucchini
• Eggplant
• Spinach
Season the chicken cubes with salt and pepper.
Heat a cast-iron skillet over medium-high heat and add the chicken. Cook for about 10-12 minutes, until golden all around and fully cooked. A meat thermometer inserted in the center of the chicken will register 165 °F when cooked. Remove chicken from the pan and set aside.
Add onions and peppers to the skillet and cook for 3-4 minutes until slightly soft.
Add garlic and warm through 30 seconds.
Place the chicken back into the pan along with the Halloumi, tomatoes, lemon zest, and the spices. Mix to incorporate and cook for 4 minutes or until the tomatoes are soft.
Stir in the lemon juice and serve.

I show you how to get juicy, succulent Greek souvlaki out of lean chicken breast with simple spices and a dry brine technique. You'll see all the details on grilling it to perfection and how to serve the way it's done in Greece. FULL RECIPE BELOW
Christine’s Grilled Chicken Souvlaki
.
2 boneless, skinless chicken breasts , cut into 1-inch pieces – about 8 oz each 225 gm
1 tsp. dried Greek oregano (5 ml)
Grated zest of 1 lemon and juice of ½ lemon
½ -1 tsp. Smoked sweet paprika (2.5-5 ml)
Fresh thyme, chopped
1 green onion or several chives finely minced
½-3/4 tsp. Kosher salt(2.5 -4ml) and freshly cracked black pepper
¼ cup, extra virgin olive oil (60 ml)
Handful fresh parsley, chopped
Finely sliced red onion
Tzatziki, for serving
Pita bread, for serving
Bamboo or wooden skewers
In a large shallow baking dish, combine chicken, salt, oregano, lemon zest , paprika., minced onions and thyme. Toss well to blend. Cover and chill for 1-2 hours. Soak bamboo skewers in water to prevent burning.
Preheat bbq on high. Remove chicken from fridge, add the olive oil, lemon juice,
Reserve half the lemon, olive oil mixture to brush on top when souvlaki is grilled .
Thread the chicken onto bamboo skewers, allowing 2 “ on bottom to turn while on grill.
Grill on medium high for 7-8 minutes, turn over onto other side and repeat. Turn onto sides for an additional 4 minutes each , to brown and fully cook the sides. If brushing a little marinade onto grilling skewers, do not let the brush touch the chicken to avoid contamination of raw meat. A total grilling time of about 20-23 minutes turning often to fully cook through and brown evenly. Thermometer reading of 165 D F.
Remove from heat and immediately brush with remaining olive oil , lemon mixture and sprinkle with parsley. NOTE : Do not let brush touch skewers to ensure no raw contamination. Drizzle or spoon over marinade while souvlaki is still hot.
Serve with pita, tzatziki, onions, tomatoes – if desired.
Makes 4 souvlaki skewers

How to make Easy Chicken Souvlaki
CHICKEN SOUVLAKI SANDWICH
This classic Greek sandwich is popular the world over. This recipe uses it chicken because it’s the most popular way it is served in America. In Greece is more commonly made with pork. Either works well with this recipe, simply swap out the chicken for boneless pork of an equal amount.
SERVES 4-6 Timing: 20 minutes prep, 1 hour marinating, 12-18 minutes cook time
1/3 cup olive oil
Juice of 2 lemons
1 tablespoon dried oregano
1 teaspoon minced garlic
1 teaspoon fine sea salt
½ teaspoon black pepper
2lbs chicken breast (roughly 4 large breasts), cut into 1” pieces
6 metal skewers
Tzatziki Sauce, for serving (LINK)
6 grilled pita, for serving
Tomato, as garnish
Sliced Red onion, as garnish
Thinly sliced lettuce, as garnish
In a large bowl whisk olive oil, juice from two lemons, dried oregano, minced garlic, salt and pepper until combined. Add the chicken and toss to coat. Place in refrigerator for at least 1 hour, ideally overnight.
After refrigeration, thread chicken onto skewers, about 6 pieces per skewer.
Preheat the grill to medium heat.
Place the skewers on the grill, and cook, turning occasionally, until the chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 12-18 minutes (depending on type of grill, gas will be quicker). The chicken should have a nice char.
Take one grilled pita, spread a nice serving of tzatziki on it and top with lettuce, tomato and onion.
Wrap in foil to serve and enjoy!
