How To make Beef Souvlaki with Tzatziki Sauce (Kebabs)
2 lb Beef or lamb cut into 1"
-cubes (I use lamb) 12 Cherry tomatoes or tomato
-wedges 1 ts Black pepper
1 ts Oregano
2 Cloves garlic, finely
-minced 6 tb Olive oil
2 md Onions, quatered
2 md Green peppers, cut into 1"
-pieces 12 Fresh mushrooms
4 tb Lemon juice
Salt to taste Skewers This recipe takes two days. On the first day, prepare the meat and marinate. On the second day, prepare the veggies and cook. Place meat in a bowl. In a small bowl, combine black pepper, garlic and oregano and sprinkle mixture over meat. Mix well to coat. In a blender, combine lemon juice and olive oil and blend. Pour over meat, cover and refrigerate overnight. The next day, brush onions and green pepper with olive oil and sprinkle with salt and pepper to taste. Thread meat and veggies, alternating, on to skewers. Barbecue on grill, being careful not to overcook. Use remaining marinate to bush on while cooking. Before serving, sprinkle with salt and fresh lemon juice.

Ingredients
2 and 1/2 - 3 pounds top sirloin steak, cubed
1 onion
3-4 bell peppers
1 and 1/2 teaspoons salt (or to taste)
freshly cracked black pepper to taste
The Marinade:
1/2 cup olive oil
1/2 cup balsamic vinegar
1/4 cup fresh lemon juice
4 garlic cloves, grated
2 teaspoons dried oregano
Serve with tzatziki sauce
Instructions
Combine all of the marinade ingredients in a bowl and whisk together. Set aside
Cut the steak into about 1 and 1/2 (4cm) inch cubes and place them into a large bowl. Season with salt and black pepper and pour the marinade on top. Toss together and allow the meat to marinate for at least an hour or in the refrigerator overnight.
If using wooden skewers, soak them in water an hour ahead of grilling.
Cut the onions and bell peppers about the same size as the beef.
Thread the meat and veggies onto the skewers.
Heat the grill over medium-high. Brush the grates with oil.
Grill the skewers about 4 minutes per side or until the meat is cooked as desired.
Brush the skewers with the marinade before changing sides.
Transfer the skewers to a platter. Allow them to rest for 5 minutes before serving.
Serve the beef skewers with toasted bread and tzatziki.

Perfectly moist and crispy succulent beef (Lamb is more common followed by pork) souvlaki skewers. Souvlaki is one of the most popular street foods in Greece and for good reason! Juicy and well seasoned meat garnished with cooling tzatziki sauce, served or wrapped in a delicious crispy and fluffy pita. For this traditional souvlaki recipe, the meat is first marinated to soak up all the wonderful Mediterranean flavours and then grilled, to get all crunchy, nicely coloured and juicy. Select some good quality beef and season with a selection of Greek spices like oregano and fresh thyme, coat with extra virgin olive oil and lemon juice and flavour with garlic and chopped onions. Marinading your souvlaki in the fridge for at least 4 hours will allow the aromas to infuse the meat and give it the desired flavours. Of course the best option is to grill the souvlaki (skewers) on a char-coal barbecue, to get them all crispy and smokey. Beef Kofta Kebabs
Ingredients:
2 lbs Ground Beef
1/2 Onion (finely minced)
4 Garlic Cloves (finely minced)
1 Bunch Of Mint (finely minced)
1 Bunch Of Parsley (finely minced)
1 Tbsp Lemon Juice
1 tsp Ground Coriander
1 tsp Ground Ginger
1 tsp Cinnamon
1/2 tsp Nutmeg
2 tsp Allspice
1 tsp Cumin
2 tsp Paprika
1/2 tsp Cayenne
1/2 tsp Ground Green Cardamom
1 tsp Sumac (optional)
Salt and Black Pepper
Accoutrements:
Pita or Flat Bread
Sliced Onion
Sliced Cucumber
Sliced Tomato
Shredded Lettuce
Lemon Wedges
Tzatziki Sauce Ingredients :
1 Cup Yogurt
1/2 Cup Cucumber (grated)
1 Garlic Clove (minced)
1 Tbsp Mint (finely minced)
1-2 Tbsp Lemon Juice
1 Tbsp Olive Oil
Salt
Instructions:
In a large bowl combine all the tzatziki sauce ingredients and season with salt to taste. Place in the fridge until ready to serve.
In a large bowl combine the ground beef, all the dry spices, finely minced onion, garlic, mint, lemon juice, and parsley. Season with salt and pepper then mix until completely incorporated and slightly tacky.
Form a few ounces of the ground meat mixture into a oblong shape in your hand. Using a flat skewer, skewer the meat through the center and evenly spread the meat across the length of the skewer. (PRO-TIP: keep the meat cold, this will help the meat stick and stay on the skewer). Repeat with the rest of the kebabs. Place the kebabs on a sheet tray then place in the fridge to keep cold while you fire up the grill.
Next using a charcoal grill with a few wood chunks added for smoke, grill the kebabs suspended by a metal kebab holder (Check Amazon). Turn the kebobs every 30 seconds until cooked then remove from the grill. (You can also grill the kebabs directly on the grill just make sure the grill grate spacing is close together).
Serve the kofta with sliced tomatoes, red onion, cucumber, lemon wedges, lettuce, pita or flatbread, and the tzatziki sauce.

Greek Beef Souvlaki Skewers
Souvlaki is one of the most popular street food dishes in Greece, served in every taverna and for good reason! There are three ways you can have your skewered meat, but whatever you call them they are always delicious!
Souvlaki consists of small pieces of meat and sometimes vegetables grilled on a skewer served with cooling tzatziki sauce, so basically our modern day kabob, or kebab or shish kabob or skewer.
Ingredients
For the Beef Souvlaki & marinade
1 kg top sirloin beef cut in chunks (35 oz.)
2 tsps mustard
1–2 tsps honey
juice of 1 lemon
zest of 1 lemon
1/2 tsp hot paprika
6 tbsps olive oil
salt to taste
freshly ground black and pink peppercorns (to taste)
1 tsp dried oregano
2 tsps fresh thyme
1 clove of garlic, minced
For assembling the beef skewers
1 green bell pepper, chopped
1 red bell pepper, chopped
1 large onion, chopped
1 tbsp olive oil
salt and pepper
9–10 wooden skewers

500g Beef prime rib cut into 1/2 inch pieces
¼ cup Olive Oil
1 tbsp Garlic Granules
1 tbsp Dried Oregano
1 tbsp Mustard
1 tsp Salt
Lemon Wedges
Greek Marinade to taste
Soak wooden skewers for 30 mins in lemon juice or water
Place the meat, oil, and all the spices into a mixing bowl and mix to coat all the pieces of meat. Let rest for 1 hour ( you can go up to 24 hours, I find 24 hours gives the best flavor!
Skewer the beef about 3-4 oz per skewer.
Get your BBQ on High for 15 mins and just before you place the meat on the grill. Turn down the temp to Med as not to burn the outside before the meat is cooked! Cooked the skewers for 7-10 mins or until the internal temp reaches 145F
Remove and let rest for 5 mins and squeeze fresh lemon over and greek marinade and serve!
