Today, we are making a loaded sweet potato. This dish can be made a variety of ways, with the basic steps being the same. Today, our filling is going to include chickpeas, spinach, and a bunch of spices.
We are then going to top it off with this delicious tahini-mustard-coconut nectar sauce and some broccoli sprouts.

- 550 g / 19.4 oz red potatoes
- 100 g / 3.5 oz butter
- 50 g / 1.76 oz parmesan cheese
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1 tsp smoked paprika

Make the Perfect Roast Beef with Garlic Gravy - Guaranteed to be a HIT at your next dinner party!
I love a Sunday roast of beef, but I have to have it perfectly done. I've gone through many methods of cooking roasts, but this has to been one of the best fail proof methods I've ever come across. It works perfectly every time.
In this video we show how to cook this perfect roast beef done to medium rare. The process is straight forward, simple, and fair proof. First, seasoning the beef, on all sides, with a combination of of spices such as thyme, rosemary, garlic, salt, and pepper. Then, coat the roast with olive and then rub the spices into all sides. Another note is to make sure the meat be at room temperature, so I leave mine out for about 4 to 6 hours.
Next, place the vegetables of your choice into the bottom of the roasting pan. The roast is placed on the top baking tray. Put the roast and vegetables into a 500 degree F or 260 degrees C preheated oven for 5 minutes per pound. My roast was about 2.2 pounds, so I left it about 13 minutes or so. After about 13 minutes, the heat is turned off and the roast is left in the oven to bake for 15 minutes per pound. It is very important not to open the oven door at all. In the case of this roast, I left it for 35 - 40 minutes, pulled it out, and allowed it to rest for an additional 15 minutes.
While the roast is resting, we demonstrate how to make a fantastic garlic gravy.

How to Make Deluxe Nachos - Homemade Nacho Supreme Recipe
Learn how to make deluxe nachos just like you'd get at a Mexican restaurant! Including how to fry flour tortilla chips just like you get there as well that everyone loves! You can top these with any number of ingredients but I used what my favorite restaurant uses when I order these there. Make them your own! These are great as a meal by themselves or as an appetizer on game days. Everyone is sure to love them!
What you'll need:
6 flour tortillas
1 lb ground beef or ground turkey
taco seasoning (see how I make my own here: )
1/2 cup refried beans
1 cup shredded co-jack cheese
1/4 cup sliced black olives
1/4 cup sour cream
1/4 cup diced tomatoes
oil for frying
To make the chips, cut tortillas into 6 equal pieces. Heat oil in a deep pan on medium-high until 300*F. Fry a few tortilla chips at a time, keep them submerged as much as possible for 60-90 seconds or until lightly golden brown. Chips will darken as they cool. If the chips are still doughy or bready inside, the oil is too hot. Drain on a wire rack and continue frying chips in small batches until all have been fried.
To make the taco meat, brown beef or turkey in a skillet until done and drain. Add in taco seasoning and 1/2 cup water and cook over medium-high heat for 4-5 minutes or until water is absorbed into the meat.
To make the nachos, place the chips onto a platter and dollop refried beans over top. Then sprinkle cheese on top and finally about half a cup of taco meat. Microwave for 90 seconds or until cheese is melted. Then top with black olives, sour cream and tomatoes. You can also use onions, jalapenos, guacamole, salsa, nacho cheese sauce, etc. Whatever is your favorite nacho toppings! Serves 2-4 people. Enjoy!!
