Vegetable Cheesy Bake | Sanjeev Kapoor Khazana
A scrumptious cheesy dish perfect for a filling dinner.
VEGETABLE CHEESY BAKE
Ingredients
12-15 French beans, finely chopped
2 medium carrots, finely chopped
2 large potatoes cut into batons
green peas
8-10 fresh button mushrooms, chopped
3 teaspoons butter
1 large onion,
Salt to taste
Black pepper powder to taste
2 cups White Sauce
½ cup grated cheddar cheese
Method
1. Preheat the oven to 180°C/350°F/Gas Mark 4.
2. Heat 1 tbsp oil in a non-stick pan, add chopped garlic 1 tbsp, saute and add the 2 medium onion chopped and sauté on medium heat till translucent.
3. Add 1 medium potato, chopped. soaked, 1 carrot chopped. mix well.
4. Add 1 tbsp broccoli florets, green peas, French beans chopped the tomatoes and sauté for one minute. Add the French beans, carrots, potatoes, capsicums and mushrooms chopped and sauté for three to four minutes.
5. Add the salt, white pepper powder and mix well. Add 3 sprig of thyme. mix well.
6. Beat and add ½ cup cheese sauce. mix well. Add 2 tbsps corn kernels. mix well.
7. Add 1 cup cheese grated. Switch off heat.
8. Transfer the mixture into an oven-proof dish and sad breadcrumbs ½ cup, sprinkle ½ cup processed cheese on top. grate and add ¼ cup cheddar cheese.
9. Bake in the preheated oven for 10-12 minutes or till the cheese turns golden brown.
10. Serve hot with bread.

Take 5 - Sour Cream and Bacon Potato Bake
mom's choice - and for the next five tuesdays, it will be your choice : )
what i did today:
brown 5 slices of thick cut bacon in a skillet.
remove bacon, place on paper towels set aside
meanwhile, boil about 10 small red potatoes whole, drain and set aside to cool enough to handle
remove [or remove and store for later use] all but a coating of bacon fat from the skillet.
add one large white onion to the pan, sliced thinly
saute 5 mins
add one large apple of choice, thinly sliced.
saute all til soft and brown
slice potatoes and place in mixing bowl. add onions and apples. stir in approx 1 and 1/2 cups sour cream.
add 1/2 tsp salt
black pepper as desired
1/2 teaspoon celery salt
1/2 tsp turmeric
blend well, place mixture in casserole dish, crumble bacon on top
place, uncovered, in 350 degree oven for 30 mins or til golden and hot throughout

What you need:
3-1/4 lb. baking potatoes (about 10), peeled, chopped and cooked
1 large sweet potato (1/2 lb.), peeled, chopped and cooked
1 tub (8 oz.) PHILADELPHIA Chive & Onion Cream Cheese Spread
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/4 tsp. black pepper
1/4 cup KRAFT Shredded Parmesan Cheese
1/4 cup KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA
Let's make it:
1. Heat oven to 375°F.
2. Place potatoes in separate bowls. Add half each of the cream cheese spread, sour cream and pepper to potatoes in each bowl; mash until creamy.
3. Stir half the Parmesan into white potatoes, then stir half the cheddar into sweet potatoes. Layer half of each the potatoes in 2-qt. casserole sprayed with cooking spray. Repeat layers.
4. Bake 15 min. Top with remaining cheeses; bake 5 min. or until melted.

Ingredients and Directions for Creamy Garlic Butter Baked Potatoes are below.
INGREDIENTS
1 or 1/2 lb. small potatoes
1 cup of mozzarella (shredded)
About 1/4 cup of melted butter
About 1/4 cup of extra-virgin olive oil
1/4 cup chopped parsley
3-5 cloves of minced garlic
Salt (Kosher salt optional)
Freshly ground black pepper
Directions:
1. Preheat your oven to 370F-375F.
2. Cut the potatoes like an accordion, as shown in the video but make sure not to cut all the way through and then gently place them on the backing pan.
3. Mix the melted butter, olive oil and garlic in a bowl and gently brush the mixture over the potatoes and finish by seasoning with black pepper and salt. You can add other herbs such as thyme for extra flavor. I
4. Place the baking pan with the potatoes in oven and bake for about 20 to 30 minutes, until the slits separate and the potatoes start to turn golden brown.
5. Take the potatoes out and brush them with the same melted butter mixture and cover the potatoes (sprinkle) with mozzarella cheese (or any cheese of your choice) and bake for another 20-30 minutes, until the potatoes are crispy outside and soft inside.
6. Garnish the garlic butter cheese potatoes with parsley and other herbs and serve warm.
