Egg, Ham & Sweet Potato Casserole

INGREDIENTS
FOR THE CASSEROLE
- 3 pounds sweet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 1/2 pounds ham, cubed into 1/4 inch pieces
- 4 ounces sharp white cheddar cheese, shredded
- 8 hard boiled eggs
FOR THE SAUCE
- 4 tablespoons butter
- 4 tablespoons flour
- 1 3/4 cup whole milk, room temperature
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 cup sour cream
INSTRUCTIONS
FOR THE POTATOES
Preheat the oven to 425 degrees Fahrenheit.
Cube washed sweet potatoes into 1/4-inch pieces. Place on baking sheet. Drizzle with olive oil and mix to evenly coat the potatoes. Spread into an even layer. Sprinkle with salt and pepper.
Roast in the preheated oven until browned and tender, 25-35 minutes.
Remove from oven and set aside to cool. Reduce oven to 350 degrees Fahrenheit.
FOR THE WHITE SAUCE
In a saucepan, melt the butter over medium heat.
Once melted, add the flour and whisk to incorporate. Continue to cook until the mixture coats the bottom of the saucepan and the raw flour smell has subsided, 1 minute.
Slowly add the milk, a few tablespoons at a time, whisking until smooth between each addition.
When the milk is added and sauce is smooth, whisk in the salt, pepper and sour cream. Set aside.
TO ASSEMBLE
Spray 12 8-ounce ramekins or one 9×13 inch pan with nonstick baking spray.
Evenly fill the ramekins or pan with the prepared sweet potatoes and then the ham. Dice the hard boiled eggs and add on top. Sprinkle on a small amount of cheese. Pour the prepared white sauce over top, spreading slightly to ensure it’s distributed throughout the casserole. Top with the remaining cheese and place on a parchment-lined baking sheet.
Bake until the casserole is warmed through and the cheese has browned on top, 25-35 minutes.
Remove from oven and serve.
Sweet Potato and Egg Breakfast Hash
Makes: 2 servings
Ready In: Less than 15 minutes
Ingredients
1/2 tablespoon coconut oil
1 large sweet potato, diced
1 red bell pepper, diced
1/2 teaspoon salt
1/2 teaspoon pepper
2 scallions, chopped
1 clove garlic, diced
2 eggs
Directions
1. Melt coconut oil in a medium saucepan over medium-high heat.
2. Add sweet potatoes and cook 2 to 3 minutes.
3. Add red pepper, salt, and pepper. Cover pan for 3 minutes.
4. Add scallions and garlic and toss so that all is evenly combined.
5. Crack eggs over mixture, cover pan, and cook for another 3 to 4 minutes, or until eggs are cooked to liking.

HARVEST HASH WITH SWEET POTATOES AND HAM (HOSTING FOR THE HOLIDAY'S)
HARVEST HASH WITH SWEET POTATOES AND HAM
Serves 6
3 sweet potatoes
2 Tbs butter
1 yellow onion, chopped
5 cloves garlic, chopped
1 red pepper, chopped
Splashes of olive oil
1 ham steak, cubed, about 2-3 cups*
4 cups fresh spinach
Salt and pepper
Red pepper flakes
½ cup freshly grated parmesan
4 large eggs
Fresh thyme
Poke holes in the potatoes. Bake for 15 minutes on a sheet pan at 425F. Remove and let cool enough to handle. Peel and cut into 1” cubes. Set aside.
In a large cast iron skillet or braiser with a lid, saute onions, garlic, and pepper in butter until tender. Add sweet potatoes, pinch of salt and pepper, then cover with lid and let cook for about 10 minutes over medium heat until potatoes are tender. Stir occasionally. Remove lid, increase heat to medium high. Add ham cubes. Cook and stir over medium high heat til potatoes are tender and get some good seared places on them. Stir in red pepper flakes. Pile spinach around the top, cover with lids and turn heat to low to allow the heat to wilt the spinach. Set aside.
In a nonstick pan, fry four eggs leaving yolks runny. I use the basting method with coconut oil and butter.
To serve, stir the spinach into the potato hash. Spoon into shallow bowls. Top with parmesan, a fried egg, and fresh thyme leaves. Serve right away.
