Kung Pao Shrimp is a classic Sichuan dish. As a variant of Kung pao chicken, it is easy to make and great to serve with white rice because the taste is flavorful, complex, and well-balanced. As a variant of kung pao chicken, one of the differences is that this dish is deep fry and kung pao chicken is stir-fried. So the shrimp is slightly crispy and coated with a glossy sauce.
INGREDIENTS (serves 2-3 people with some rice)
To Marinade the Shrimp
1 lb of shrimp peeled and deveined
1/3 tsp of salt

2.5 tbsp of Chinese black vinegar (Amazon Link -
3 tbsp of water
Others:
1.5 cups of oil for deep frying
1/2 cup of peanuts
4 cloves of garlic, sliced thinly
1/2 inch of ginger, sliced thinly
4 scallions, dice the white and cut the green part into short pieces

INSTRUCTIONS
Marinade the shrimp with salt, white pepper powder, Chinese cooking wine, and 1 tbsp of cornstarch. Please pay attention to the ingredient list if you are buying frozen shrimp. Most shrimp on the market is frozen with a salt solution. In that case, you must use less salt or rinse the shrimp thoroughly before seasoning.
Place 1/3 cup of cornstarch at the bottom of a big container. Add the shrimp and cover with another 1/3 cup of cornstarch. Put on the lid and shake well. Leave the shrimp in the container and set it aside. The first tbsp of cornstarch in the marinade acts like glue, which will catch more starch while shaking.
To make the sauce (or what we call 碗芡), thoroughly combine the sugar, cornstarch, light soy sauce, Chinese black vinegar, and water. You can replace Chinese black vinegar with white or rice vinegar; however, you will miss a bit of the distinctive fermented taste.
Add 1.5 cups of oil and the peanuts to the wok. Stir constantly over medium-low heat for 2-3 minutes. Remove the peanut when you see they are slightly opened; set them aside. If allergic to peanuts, use a different kind, such as walnut or almond. If your peanuts are roasted already, skip this step.
Put the shrimp into a sieve and shake it a few times to eliminate the excess starch. Next, heat the oil to 400°F /204°C and fry the shrimps in 2 batches for 2-3 minutes each. Crowding the wok risks overcooking the shrimp as it will quickly drop the oil’s temperature.
Transfer the shrimp to a rack to drain out the excess oil. Sieve the starch crumbs from the oil before frying the next batch of shrimp.
Remove most of the oil and keep 1.5 tbsp in the wok. Add garlic, ginger, the white part of the scallions, red dried chilies, and the Sichuan Dou Ban Jiang. Stir over medium-low heat for a couple of minutes or until fragrant.
Add the Sichuan peppercorn powder. Pour in the sauce. Keep stirring until the sauce is thickened. Add the reserved green part of the scallion, the peanuts, and the shrimp. Toss until everything is coated thoroughly. Serve with white rice.
This dish can be made without chilies, Sichuan peppercorns, and the Dou Ban Jiang. That’s what most Americanized takeout restaurants do. However, these three ingredients create the classic spicy and numbing flavor, which stands the authenticity.

Ingredients
150 peeled and deveined shrimp

30 g crushed ice
240 g-260g of tapioca flour (Amazon Link -
Instructions
Add the shrimp into a food processor along with all the seasoning and the crushed ice. Blend until smooth. If you don’t eat shrimp, you can change it to fish, or squid.
Add the tapioca flour in batches and blend until a non-stick dough formed. Other types of starch such as mung bean starch, potato starch, cornstarch will also work but tapioca is the best because it contains a higher percentage of amylopectin, which makes your shrimp crackers puff up bigger. Also, different brand and types of starch have a different water absorption rate, the measurement that I gave is for reference. You should adjust the water amount depending on your situation.
Roll the dough into a long, even, smooth log then cut the log into 2 manageable pieces.
Add the shrimp dough into boiling water. Stir gently until the dough floats. Then simmer on the lowest heat for 30 minutes.
Transfer the dough onto a rack and chill in the fridge uncovered for 30 hours.
Slice the dough into 1 mm thick pieces. Do not cut it too thick, otherwise, the crackers will be chewy and tough.
Place all the slices on a rack and fully dehydrate them by using one the following methods.
1)Use a dehydrator ( 4-5 hours at 120 F)
2)Put it in the oven and set the temperature at the lowest possible (3 hours at 150F).
3)Put it under the ceiling fan overnight.
Store the dehydrated crackers in a sealed container for up to 6 months.

Today we are going to make 蚝油捞面. Lo means to stir or mix in Cantonese. Mein means noodles. The name of this dish literally means oyster sauce mixed with noodles. It is an HK classic and it is going to be the easiest noodle recipe that you will ever see - only 5 ingredients are included! It might not look as colorful as other lo mein recipes, but it is surprisingly delicious. The oyster sauce really stands out and you can get a slight nuttiness from the peanut oil. You will never believe that a few simple ingredients, put together can be so tasty. I literally can not stop eating it.

INGREDIENTS (serve 2)
- 2 portions of noodles (I used fresh egg noodles, about 300 g)
- 1.5 tbsp soy sauce
- 3 tbsp of oyster sauce
- 2 to 3 tbsp of peanut oil
- 1.5 tsp of dark soy sauce
INSTRUCTIONS
Bring a pot of water to a boil. Cook 2 portions of egg noodle until done. Fresh noodles only take a couple of minutes. If you used dried noodles, please follow the cooking instructions on the package.
While the noodles are being cooked, heat your wok to smoking hot. Then add 2-3 tbsp of oil. I prefer peanut oil because the nuttiness makes the noodle extra tasty. Once the oil starts smoking, turn off the heat (See tips 3)
By now, the noodles should be ready. Quickly take them out. Shake off the excess water and dump it into the wok along with 3 tbsp of oyster sauce, 1.5 tbsp of soy sauce, 1.5 tsp of dark soy sauce. Stir to mix well.
Give it a try to adjust the flavor because every brand of oyster sauce and soy sauce have a different level of sodium.
TIPS
1. Use a good quality oyster sauce since it is the key flavor. It decides whether this dish gonna come out good or not.
2. You can add some toasted sesame oil at the end if you like. I don’t because I used peanut oil already.
3. The reason I turned off the heat right before I add the noodles is that we are making Lo Mein, all you need to do is to stir and mix. If you keep the heat on, then, you are making Chao Mein, which means stir fry noodles. That will be a different cooking method. I will talk about it another day.

**COOKING STEPS:**
**MAKE THE SAUCE**
- Put 4 tbsp of vegetable oil in the saucepan. And fry the garlic, red chilies and coriander stems on low heat for 3-5 minutes.
- When the oil turns red, transfer it into a bowl.
- Add the rest of ingredients in. Which are 2 tbsp of Chinese cooking wine, 2 tbsp of soy sauce, 2 tsp of sugar, a tsp of black vinegar, 1/4 tsp of salt (or to taste).
- Give it a nice mix and set it aside.
**PREPARE THE NOODLES**
- Cook the noodle until soft. It will take about 8 minutes.
- Use rice noodles, don’t use other types of noodles. Because after steaming, they usually turn soggy and sticky, won’t taste as good as rice noodles.
- Place it on a large plate. You want to get rid of the water as much as possible.
- Put a little bit more in the middle, so it looks nicer when we place the shrimp on.
**PREPARE AND COOK THE SHRIMP**
- Peel, butterfly, and de-vein the shrimp
- You can remove the head If you want them to be easier to eat.
- Place it on top of the noodles.
- Spoon the sauce over the shrimp and noodles. Make sure to put enough on the noodles so they are flavorful. Now it is time to steam.
- Bring the water to a boil and then cover it let it steam on high heat for 3-5 minutes
- Let it sit in the wok for 2 minutes after you turn off the heat, do not open the cover.
- garnish it with scallion and coriander, you are done.
