Chilli con Carne
Special Chili con Carne
Serves 4
Time:
Medium
Onions : 2 medium
Garlic: 1 clove
Olive oil
Chili powder 2 level teaspoons
Fresh red chili, 1 deseeded and finely chopped
Ground cumin 1 heaped teaspoon (or crushed cumin seeds)
Sea salt and freshly ground black pepper
Minced beef 455gr/1 lb
Sun-dried tomatoes in oil 200gr/7oz
Tins of tomatoes: 2 x 400gr/14oz
Cinnamon 1/2 stick
Red kidney beans: 2 x 400gr/14oz tins, drained
Preheat the oven to 150C/300F/gas 2 if using oven method.
Blitz the onions and garlic with a hand blender or in a in a food processor until finely chopped.
Take a lidded casserole dish and add some oil, heat the oil and then add the onions and garlic, fry until soft do not brown.
Add the chili powder, fresh chili, cumin and a little seasoning. Then add the minced beef and continue to cook, stirring until it has browned.
Blitz the sun-dried tomatoes in the food processor with enough oil from the jar to loosen into a paste. Add the sun dried tomato paste to the beef with the tomatoes, cinnamon stick and a wineglass of water.
Bring to the boil
Put a double sheet of foil or greaseproof paper between the top of the pot and the lids and scrunch to make an airtight seal ( do this do not short cut).
Then either turn the heat down to low simmer and cook for 1 1/2 hours or transfer the pan to the oven for about 1 hour.
Add the tinned kidney beans and cook for a final 30 minutes.
serve it with lots of fresh crusty bread or brown rice, a nice tossed salad, and a big blob of natural yoghurt or guacamole.

2 to 2.5 lbs (907 g to 1.13 kg) beef chuck roast
1 tsp salt
1/2 tsp black pepper
3 Tbsp (45 ml) cooking oil
1/2 small onion (diced)

500g Beef Mince (Ground Beef)

3 bls (1.361 kg) ground beef (I used 85 / 15 fat to meat ratio)
1 medium to large onion finely chopped
5 cloves garlic minced
6 Tbsp (40 g) chili powder (I used McCormick Brand)
3 tsp (7 g) smoked paprika
3 tsp (8 g) garlic powder
3 tsp (8 g) onion powder
3 tsp (7 g) ground cumin
3 Tbsp (49.5 g) tomato paste
7 cups (1.65 L) low sodium beef broth
1 chipotle pepper in Adobo sauce
2 Tbsp Adobo sauce from can of chipotle peppers
2 - 15 oz cans pinto beans (drained and rinsed)
salt and pepper to taste
*For corn starch slurry*
4 Tbsp (35 g) corn starch
4 Tbsp (60 ml) cold water
INSTRUCTIONS
- In a preheated on a medium high heat 6 .5 qt pot add 3 tbsp oil and ground beef
- Add salt and pepper to taste, cook ground beef for 5 to 8 minutes
-Now add garlic and onion, combine and continue to cook for 3 to 5 minutes
- Next add and combine all dry seasonings and spices to cooked ground beef
- Now add tomato paste, combine and cook for a minute or two
- Next add beef broth, stir and mix well
- Add chopped chipotle pepper, adobo sauce and bring to a boil
- Cover pot with a lid, lower the heat and gently simmer for 1 hour stirring through out
- After and hour add cornstarch slurry to thicken chili
- Add drained and rinsed pinto beans combine and simmer for and additional 15 minutes then serve
