Shish Kabob Marinade Recipe
Here is a marinade to make for your Shish Kabobs. I cut up some Sirloin Steak and some veggies and made some Shish Kabobs.
Recipe:
1/3 C Avocado Oil
1/2 C Soy Sauce
1/4 C Lemon Juice
1 T Mustard
1 T Worcestershire Sauce
1 T Brown Sugar
1 Clove Garlic
1 1/2 t Salt
1 t Pepper
Sirloin Steak
Bell Peppers
Mushrooms
Cherry Tomatoes
White Onions
You can also marinade the Vegetables along with the Steak

500g diced lamb backstrap
1/2 tsp salt
1/4 tsp black pepper
1 tsp dry oregano
1/2 tsp red sumac
2 tbsp lemon juice

Turkish chicken kebabs / skewers or a.k.a tavuk şiş in Turkey.
It is said that the method of cooking meat on skewers over open fire originated on the steppes of Central Asia where the Turkic people originate. This basic concept was refined over time and was brought to the world with the westward migration of Turkic people.
There are different versions of chicken skewers / kebabs and this one is with a marinade made with Turkish yogurt, onion juice, garlic and spices that turns the chicken thighs into succulent, flavorful kebabs.

Ingredients:
• 1 kg chicken thighs, de-boned
• 2 cloves of garlic
• 1 onion (pureed)
• 2 tsp chili flakes
• 1 tsp turmeric
• ½ tsp black pepper
• ½ tsp dried thyme
• 1 tsp cumin
• 2 tbsp yogurt
• ½ lemon (juice)
• 2 tbsp olive oil
• 1 tsp salt
• 1 tsp tomato paste (optional)
• 1 tsp chili paste (optional)
• Roasted peppers, tomatoes and onions to serve

It is tender, juicy and super delicious! Turn your meal into a feast with grilled vegetables and lavash. Servings: 4-6
Difficulty: Medium
Prep time: 10 minutes + marinating overnight
Cooking time: 15-20 minutes
1 kg of chicken thighs, boneless and skinless, cut into 4 cm (1,5 in) cubes
1 large onion, pureed
2 tablespoons yogurt
1 tablespoon salt
1 tablespoon black pepper
2 tablespoons ground cumin
1 tablespoon hot cayenne pepper
1 tablespoon sweet cayenne pepper (you can use 1 tablespoon pepper paste and 1 tablespoon tomato paste instead of both sweet and hot cayenne pepper)
8 tablespoons olive oil
4 large cloves of garlic, pureed
To garnish,
Green pepper
Tomato, halved
Onion, sliced or quartered
Garlic, peeled
Lavash
• Mix all the ingredients other than the onion in a large bowl.
• Put the onion puree in a strainer and sieve its juice into the mixture. Onion juice will help to tenderize the chicken and enhance the flavour.
• Give it a last mix. Cover and marinate in the refrigerator overnight or at least 4 hours. If using wooden skewers, soak them in water too.
• Before cooking, take out the mixture from the fridge at least 45 minutes ahead.
• Thread your chicken pieces onto the skewers. If the pieces are too long, you can fold them. Don’t push them too close together otherwise they won’t cook properly. Nine pieces of chicken should be around 20 cm (8 in) length on the skewers.
• These are traditionally cooked on the barbecue but I have a technique for you to create the same great taste at home using a cast iron pan. Preheat your cast iron pan on high heat.
• When the pan is hot, place your skewers on the sides of the pan without touching the bottom. This way, the heat from the pan will cook them.
• Flip the skewers regularly. They will be cooked in 15-20 minutes – they are ready when soft and easy to pull apart.
• In the last five minutes of cooking, place the green peppers, tomatoes, onions, garlic and lavash on the pan and grill.
• It is time to eat! Wrap them all together in the lavash and take the perfect bite. These are great with bulgur pilav as well. Afiyet olsun!

Introduction
Want to try something a little different today? What's better than the Turkish Style Shish Kebabs? Turkish pit masters devised an ingenious divide and conquer approach to shish kebabs; they grill the meat and vegetables separately to allow foods with different cooking times to reach the perfect degree of doneness. Marinated meat, and spices, offset with a hint of smokiness, these kebabs are one to try. Do try it out this weekend and let us know how it goes.
Preparation of Marinade
500 gms Chicken Thighs (cut into 1-inch cubes)
1/4 cup Milk
2 tbsp Curd
2 tbsp Sweet Paprika
1 tbsp Chilli Flakes
2 tbsp All Spice Powder
Salt (as required)
1/2 tsp Black Pepper (crushed)
2 tbsp Oil
Paste For Marinade
1/4 cup White Onion (chopped)
1/4 cup Garlic Cloves (peeled)
1 tbsp Cumin Seeds
Skewering The Chicken
Grilling The Chicken
For Bread
2 Pita Breads
Grilling the Vegetables
1 tbsp Oil
1 White Onion (sliced)
2 Tomatoes (cut into halves)
5-6 Green Chillies
Salt (as required)
1/2 tsp Black Pepper (crushed)

About Turkish Cuisine
Turkish cuisine (Turkish: Türk mutfağı) is largely the heritage of Ottoman cuisine, which can be described as a fusion and refinement of Mediterranean, Balkan, Middle Eastern, Central Asian, Eastern European, Armenian, and Georgian cuisines. Specialties are often named for places and may refer to different styles of preparation. For example, Urfa kebap is less spicy and thicker than Adana kebap. Although meat-based foods such as kebabs are common in Turkish cuisine abroad, meals in Turkey largely center around rice, vegetables, and bread.
