SCOTCHEROOS - 1960s Recipe - Easy and DELICIOUS Retro Cookie Bars!
I love vintage desserts, and I know you'll love this easy scotcheroos recipe. If you've never had them, this 1960s recipe will knock your socks off! They're peanut buttery, chocolately, chewy, and crispy at the same time. This is the original scotcheroos recipe, but you can double the chocolate and butterscotch chips to make them extra special!
SCOTCHEROOS
1c sugar
1c light corn syrup
1c peanut butter
6c rice krispies
1c chocolate chips
1c butterscotch chips
Combine sugar and corn syrup in a heavy saucepan. Cook over medium heat, stirring frequently until mixture boils. Remove from heat. Stir in peanut butter. Mix well until combined. Add rice krispies and stir until cereal is coated with peanut butter mixture. Press rice krispies into a well buttered 9x13 inch pan. Set aside and allow to cool.
In a microwave safe bowl, combine chocolate chips and butterscotch chips. Microwave at 30 second intervals, stirring after each one, until chips are melted and smooth. Spread over rice krispies mixture. Place in refrigerator until chocolate is set.

They are like rice crispy treats but full of peanut butter, butterscotch and chocolatey goodness. There are a few variations of recipes going around out there, but this one is definitely my favorite!

The BEST Chocolate Peanut Butter Scotcheroo Bars
This decadent Scotcharoo Bar recipe is a delicious marriage of peanut butter rice krispie treat, topped with a blend of melted chocolate and butterscotch chips.

Ingredients:
• 1 cup sugar
• 1 cup light corn syrup (Karo)
• 1 cup creamy peanut butter
• 6 cups Rice Krispie cereal
• 1 cup semi-sweet chocolate chips
• 1 cup butterscotch chips
Instructions
To make the Scotcheroo Bars
1️⃣ In a large saucepan, bring sugar and corn syrup just to a boil. The sugar will melt into the corn syrup. Remove from heat and while still warm, add peanut butter. Stir to incorporate.
2️⃣ Add Rice Krispies and stir to combine.
3️⃣ Put mixture into a well-greased 9 x 13 pan. Use clean hands or a spatula to spread mix evenly throughout the pan.
To make the Chocolate Chip and Butterscotch Topping
1️⃣In a small/cereal sized bowl, combine the chocolate chips and butterscotch chips. Microwave in 30 second increments, stirring occasionally, until chips are melted and smooth.
2️⃣ Spread over scotcheroo bars evenly. Allow topping to set before cutting into squares and serving.

1 Cup Sugar
1 Cup Corn Syrup
1 Cup Peanut Butter
6 Cups Rice Krispies
1 Cup Chocolate Chips
1 Cup Butterscotch Chips
1-Make sure you have all the ingredients, clean your work area, and wash your hands.
2-In a large pot, mix your sugar and corn syrup together.
3-Cook on the stove at a medium-high heat until the granules from the sugar have dissolved.
4-Take off the heat and add the peanut butter and mix.
5-Add the Rice Krispies next and mix all together.
6-Spray a 9x13 pan (I prefer pyrex), and dump all of the Rice Krispy mix in. Spread it around and flatten until smooth.
7-Meanwhile, add the chocolate chips and butterscotch chips to a microwave safe bowl. Melt 30 seconds at a time until smooth.
8-Spread the melted chips over the Rice Krispies and smooth it out.
9-Let the chocolate harden. I like to put it in the fridge for about 30 minutes. After the chocolate has hardened you can cut it up into the desired size.
10-Clean up the mess.
